Hello April!

One minute I was getting ready for mothers day (its march in the UK) and then Easter weekend is fast approaching. I love Easter for the delicious spring lamb dinners, the Easter chocolate and all the fun things you can do with the kids over Easter.

If I asked the kids what their favourite thing about Easter is, I am sure I will get a comment about decorating our air fryer hard boiled eggs!

I also love April because it feels like spring is finally here with the gorgeous bright colours of spring that are upon us.

Though I always get caught out in those April showers!

What Should I Stockpile In April?

Just like in March, its an excellent time to stockpile the lamb. The butchers have the best lamb chops for the air fryer, the lamb steaks are also very air fryer friendly, and the lamb mince can be used in all kinds of recipes.

We freeze our lamb in bulk and then in the summer when the lamb has gone up in price, we can defrost and enjoy lamb in our favourite kitchen gadgets.

I love April for the spring veggies as they are ideal for the air fryer, along with enjoying the last of the stews as summer is fast approaching. Here are the 10 foods we recommend you cook this month.

Let’s start with new potatoes. Its my favourite type of potatoes and I just can’t imagine not air frying them.

We will load clean new potatoes into a bowl, season with salt, pepper and parsley and add olive oil. Mix with our hands and load into the air fryer basket. They then crisp to perfection and have the crisp of a mini baked potato. We highly recommend you try air fryer baby potatoes.

You can also reduce the calories and cook microwave baby potatoes or if you have an instant pot with an air fryer lid then do try our instant pot new potatoes.

Then my next favourite April food is carrots. There are just so many different ways you can cook carrots and in season they are much bigger and you don’t have to worry about peeling the small thin ones.

Start with our air fryer carrot fries. A great healthier alternative to French fries and taste delicious in the air fryer. You can also add some cheese to it, your favourite dipping sauce or add extras to turn it into dirty fries.

Beyond carrot fries you can also make slow cooker honey carrots with your roast dinners, as well as steaming some carrots in the instant pot.

Cauliflower is still in season in April. And if you are not bored of cauliflower yet, then its perfect for using as a quick side dish for dinner.

If you are on your pre-holiday diet then try out microwave cauliflower rice and then add your favourite air fryer chicken breast to it for the ultimate healthy dinner. I love to add extra seasoning too such as some cajun seasoning to liven up some cauliflower.

After coming into season in March, spinach is still in season. I have always suffered from anaemia and always welcome the spinach season and it makes me feel so good. You can microwave spinach, use it in a green smoothie in your blender, or how about an air fryer cob loaf.

Leeks are also still in season. We cook them all the time in our kitchen gadgets and as I write this foods in season list I am waiting on a veggie box, that you guessed it…..includes leeks. After a good wash as we hate that gritty texture from the leeks, they are ready for cooking.

My favourite way to enjoy leeks is in a cheese sauce and its my go to when Dom asks me what to cook me for dinner.

You can cook instant pot cheesy leeks or use another gadget for cooking them with.

Or if you don’t want them cheesy, note that you can just slice up some leeks and load them into a soup, casserole, or stew for extra flavour.

Asparagus is also heading into season, and OMG air fryer asparagus is the BEST.

You cook the asparagus fast in the air fryer, then you can add some cheese and melt the cheese on the asparagus in the air fryer.

You can also steam asparagus in the instant pot, or how about cooking ninja foodi asparagus wrapped in bacon?

Broccoli is still in season so enjoy it. Our long term favourite is instant pot broccoli, as its steamed fast and perfect for healthy lunches or dinners. You can also make a Thermomix broccoli soup or how about a healthy lunch of instant pot salmon and broccoli

In the seafood department hake is in season and perfect for any recipe that calls for white fish. Back when we lived in Portugal hake was readily available and we would cook with it a lot and it always tasted delicious.

You can use in season hake for our air fryer filet o fish, or how abouts in our air fryer homemade fishcakes.

For the best meat in April, no surprise that I am talking about spring lamb again. Its amazing, and there is no such thing as too much lamb. Enjoy your spring lamb in a variety of ways including air fryer roast lamb with roast potatoes, air fryer leg of lamb, slow cooker doner kebab or what about a traditional slow cooker shepherd’s pie.

It’s also the month of pork and just like lamb you can get some real bargains and it tastes so good.

I have seen many butchers offer the option to buy half or a quarter of a pig in April. This is brilliant for stockpiling as you can then freeze the pork and then eat it over a few months and save on your pork.

We love Ninja Foodi Pork Tenderloin, air fryer pork roast, slow cooker pork leg joint, to name a few ideas.

What To Dehydrate In April?

There are quite a few fruit and veggies in season in April that are fantastic in the dehydrator. I use the air fryer for my dehydrating and right now you can be dehydrating beetroot, cucumber, and kiwi fruit.
