My grandad would grow them, and they were even better knowing that my grandad had made them for me.
But in other parts of the world you may call them instant pot baby potatoes, instant pot fingerling potatoes, instant pot red new potatoes and so many other things.
Regardless of what you call them, let me tell you now, they are one of the best foods to cook in the instant pot pressure cooker.
Though, I have an even better way of cooking them today. You see this instant pot new potatoes recipe originally featured on the blog on the 4th of January 2017.
It was my 3rd ever instant pot recipe I published and I updating it today BECAUSE I have a Mealthy Crisplid and these new potatoes are now in a totally different league.

Instant Pot Steamed Not Boiled New Potatoes
We start our instant pot new potatoes by steaming the new potatoes in a trivet inside of your electric pressure cooker.
This almost cooks them so that all that is left is to crisp them up.
In the old days you would boil your new potatoes. I haven’t done this for years as it ruins the potato and anything else you boil.
Boiling new potatoes strips the flavour from them and the nutrients so if we steam them instead it keeps the goodness and they taste so much better.

It’s a very similar process as boiling, but quicker and healthier.
Then once you have steamed your new potatoes you can crisp them up which is when I really start licking my lips and getting excited over crispy delicious potatoes.

I have never heard of coconut butter but I am so willing to try. Potatoes have always been a comfort food for me and my family. How could it not taste delicious with butter a few spices and nice soft potatoes?
Hi Ruth
It is not commonly known without you looking for it on the internet. We love it and we think it gives the potatoes a unique flavour.
