Broccoli Soup Thermomix

Broccoli soup is my most cooked soup ever. I just love how creamy broccoli is when made into soup and it brings back so many great memories.

As a kid it was always cream of broccoli soup that I would eat on a restaurant menu and also the first soup I made for Sofia when I was introducing her to real food.

I also love making a broccoli soup when you have leftover broccoli in and want to make good use of it before it hits its use by date.

Today’s broccoli soup in the Thermomix is the easiest soup yet, as we are using ingredients that either have no prep, or you can use the Thermomix for the prep.

Is Broccoli Soup Healthy?

Yes, broccoli soup is healthy.

You just have to think of the main ingredients that make up a batch of broccoli soup in the Thermomix.

  • Loads of fresh broccoli florets
  • Delicious homemade veggie stock
  • Onion and garlic
  • No Cream

And the only ingredient that puts off some people is the addition of white wine, that just gives it extra flavour. But with 240ml of white wine split between 4 people, this is still an incredibly healthy Thermomix soup.

How Do You Finely Chop Broccoli For Soup?

You double cheat and let the supermarket and the Thermomix do the hard work for you.

You start by buying prepared broccoli florets. This saves you prepping the broccoli at all.

Then you use the Thermomix for thinly slicing the broccoli. It chops the broccoli as it cooks the soup, saving you a job!

You could also do the same with any veggie soup in the Thermomix.

Can I Make Soup In A Thermomix?

Yes, you certainly can, and this is our second Thermomix soup we are sharing with you on Recipe This and there is plenty more to come!

The Thermomix is ideal for soup because you can mix and cook at the same time. So instead of a soup maker that cooks and then blends, you are achieving both at the same time.

This gives you a much better soup because the flavour is constantly being mixed.

How Do You Boil Soup In Thermomix?

To boil soup in the Thermomix you simply load up the ingredients into the Thermomix and it will boil the soup ingredients for you.

It will mix together the hot stock that you have added, along with the veggies and create a delicious creamy soup just like the creamy broccoli soup we are making today.

What Temperature Do You Cook Soup In Thermomix?

The ideal temperature for Thermomix creamy soups is 100c or 210f. This will produce a delicious creamy soup and cook the veggies and other ingredients at the same time as it mixes.

I have tried higher temps and lower temps and have found that 100c is the best.

My thoughts on Thermomix Broccoli Soup:

It’s easy to adapt – You can swap the broccoli for cauliflower or make a Thermomix broccoli and cauliflower soup. You can also mix and match the seasonings to suit your taste.

Dicing is a game changer – I love loading garlic and onion into the Thermomix and how quickly it chops them for you.

You can make baby puree – You can also add just stock and broccoli to the Thermomix and make baby puree for your little ones.

But most importantly, would I recommend making broccoli soup in the Thermomix? Yes, I would. I would highly recommend that every Thermomix user tries making soup as its amazing and such a time saver. Plus, you can also use the Thermomix to reheat your leftover soup too!

Broccoli – This easy broccoli soup can be made even easier by using already chopped packs of broccoli florets. You can also use frozen broccoli too if you prefer.

Garlic & Onion – I love garlic and onion in my cream of broccoli soup. I will start the recipe by sauteing garlic and onion with some extra virgin olive oil.

Oil – I also recommend a little extra virgin olive oil as its fantastic for sauteing the garlic and the onion and gives extra flavour to the soup.

Stock – Beyond the broccoli florets the key ingredient for the best ever thermomix soup is the stock. This is what gives the great flavour to the soup and stops it from tasting bland. I recommend our instant pot veggie stock.

Wine – I also love to add 1 cup of white wine (same as 240ml) at the same time as adding the veggie stock. It gives an amazing flavour and really gives your broccoli soup the wow factor. Though it does cook out the alcohol so its fine for serving to kids.

Seasoning – Then soup is not the same without its seasonings. I recommend salt, pepper, parsley, and basil.

Extras – Then for creating a broccoli soup without cream, you will want other ingredients to make it creamy instead. I recommend a little cheddar cheese and some thick Greek yoghurt.

How Do You Make Broccoli Soup In The Thermomix?

  • Sauté. First onion and dice. Then load into the Thermomix with extra virgin olive oil and your frozen chopped garlic and sauté and mix at the same time on speed 6.
  • Pour. Load broccoli into the Thermomix along with white wine and stock. Cook for 12 minutes on speed 2 at 100c to kickstart the process of cooking the broccoli.
  • Add. Next add in cheese and cook for a further 7 minutes at the same temperature and speed.
  • Finish. Scrape and add in everything else and cook for a final 3 minutes on speed 5 to blend the soup and to add in the seasonings.

And I am sure you can see now how easy it is to make Thermomix cream of broccoli soup and how you can do the same in your kitchen.

What Thermomix Settings Do You Use?

The easiest way to do the broccoli soup recipe in your Thermomix is to use the manual settings.

The manual setting is perfect for mixing and cooking at the same time. You can be setting the temperature, the time, and the speed all on one screen. Then it will beep when it is done.

For example, when we were cooking the broccoli with the stock and the wine we used speed 2 for 12 minutes on 100c.

Is Broccoli Soup Freezable?

Yes, it sure is and I have loaded leftover broccoli soup into the freezer many, many times. Usually when I have made a little more than we needed and there is not enough for the next day.

Plus, leftover broccoli soup also works well as a sauce for pasta too.

Ingredients

  • Thermomix, TM6

Instructions 

  • Peel and slice your onion. Load into the Thermomix with your frozen garlic and extra virgin olive oil. Place it on speed 6 for 5 seconds to mix well and to cut up the onion and garlic more finely. Then scrape down the edges.

Notes

Creamy. I have found for the perfect creamy broccoli soup that a thick Greek yoghurt does the best job.
Stock. I make ahead a big batch of instant pot veggie stock and make them into giant ice cubes. Then I can use them in soup recipes, stews etc and they reheat perfectly in the Thermomix.
Broccoli. I also love to make a batch of instant pot steamed broccoli at the same time and then serve extra broccoli over the soup.
