Hello October!

Yeah, October is here!!!!

I always think of October as the month of Halloween and all that yummy pumpkin and any other winter squash that I can get my hands on.

I am thinking about pumpkin long before the month of October and last month I remember Dom driving me past this farm and they had all the pumpkins almost ready for pick your own.

I also love Halloween for all the fun treats we can make and taking the kids trick or treating.

What Should I Stockpile In October?

In October my favourite thing to do is to mass buy as much winter squash as I can.

That is because here in the UK the pumpkin has a short life and beyond Halloween nowhere sells any.

So I will bulk buy and stockpile pumpkin, spaghetti squash (my all time favourite), acorn squash and then maybe some mini pumpkins that will fit in the instant pot.

October is a great month for enjoying the food of fall, mixed in with Halloween fun and Halloween candy.

Let’s eat pumpkin by the bucketload. I just love pumpkin and I always remember our old next door neighbour, who would grow her own pumpkin and then store it and always make soup everyday from pumpkin, sweet potatoes and spinach. All three ingredients were grown by herself.

For pumpkin recipes it must be air fryer pumpkin pie, instant pot pumpkin puree, instant pot whole pumpkin, air fryer pumpkin seeds, air fryer pumpkin cubes and my personal favourite soup maker pumpkin soup.

Add some butternut squash to the mix. I also love some butternut squash and enjoy it in a lot of similar ways to the pumpkin. I also use butternut squash a lot as a hidden veggie in sauces and its amazing.

Try our air fryer butternut squash cubes, instant pot butternut squash, slow cooker butternut squash, butternut squash in microwave, soup maker butternut squash soup, and air fryer butternut squash fries.

Swap the butternut squash for carrots. What I love to do is make a hidden sauce from veggies. My favourite vegetable to do this with is butternut squash but carrots come in at a close second.

You can just enjoy carrots roasted in the air fryer is our air fryer carrot fries, or air fryer roasted carrots recipe, or use them to make our soup maker cheese sauce with.

Then my next favourite October veggie is the well loved cauliflower. You may see a trend happening here, and can I say cauliflower the most hidden veggie of them all is in season right now.

I am sure you remember the Paleo trend of the cauliflower crust and the cauliflower mash, well its time to make those, or make soup or whichever is your favourite cauliflower way.

For me I love soup maker cauliflower soup, steam cauliflower in microwave, thermomix cauliflower soup, air fryer frozen cauliflower and of course instant pot cauliflower cheese.

How To Steam Cauliflower In Microwave

Broccoli and cauliflower are both in season. Whilst everyone else is just happy with cauliflower cheese, I love broccoli and cauliflower cheese. I love that they have a similar cook time and I love how big they both are in October when fully in season.

You can cook air fryer broccoli and cauliflower together, steam instant pot broccoli, or make a soup maker broccoli soup. Or if you have not tried it yet instant pot frozen broccoli.

Leeks I love. You look at the popularity of broccoli, cauliflower and of course carrots and butternut squash, and then you think of leeks. They have never been as popular, but they are in season and make so many meals taste so much better.

My favourite leek recipe is leeks in cheese sauce. Cooked in the same way as you would with cauliflower cheese but using leeks instead.

You can do this by making instant pot steamed leeks first, then transforming it into instant pot leeks in cheese sauce.

Or another leek favourite would be the soup and you could make slow cooker leek and potato soup.

Kale is another great veggie in season in October.  When we lived in Portugal it was so hard to get hold of traditional curly kale and we always had to pay a premium for it and air fryer kale chips became a special treat.

Yet now I can visit my favourite veggie shop and grab some kale or get it delivered and have kale in the air fryer whenever I want. Its just so, so good.

Winter berries are in season. This is when I get winter raspberries and re-create my favourite summer recipes but in the winter months.

My biggest go to is our ninja muffins which are made with strawberries, and I will simply swap these for some raspberries instead.

Or my other favourite is following our dehydrate strawberries in the air fryer recipe, but swapping strawberries for winter raspberries or blackberries.

Apples and pears are still in season. What I really like is to use apples and pears together and do a bit of mix and matching from the fruit bowl.

We love to make air fryer apple pie, air fryer apple chips, air fryer pear chips, or how about an air fryer apple and pear crumble?

For the best meat in October, duck is our favourite and also other game style meat is also in season this month, and will be right into the new year.

We love to cook air fryer whole duck, air fryer duck breasts and instant pot whole duck.

What To Dehydrate In October?

My favourite food to dehydrate is apple and pear chips. They are delicious and if you have not dried air fryer apple chips yet, then it is an absolute must.

You can also dehydrate raspberries and make beet chips as these are also in season right now and good for preserving for later.
