Mini Egg Cheesecake
Are you looking for the best thermomix cheesecake? Then it doesn’t get any better than making a Mini Egg Cheesecake. One of the most delicious chocolates and adds a fantastic texture to your cheesecake.
But we have a different way of doing our Easter cheesecake. Instead what we do is get one of those Easter Eggs when they are on special offer and then put the whole easter egg shell into the Thermomix.
It makes it taste even better and perfect for when your kids get way too many Easter eggs and you don’t know what to do with them all.
Also, for skill level this Mini Egg Cheesecake in the Thermomix is as easy as it gets.
The ingredients mix in the cheesecake and are loaded over the biscuit base, set overnight in the fridge and are then covered with mini eggs and crushed mini eggs.
See, a lot of mini eggs are used, though I am sure you like the idea of that!!!

Can I Make Cheesecake In Thermomix?
Yes, you can make your cheesecake in the Thermomix and its absolutely delicious.
Its brilliant making the cheesecake mix in the Thermomix as you can use it to make the biscuit base, to melt the butter and best of all to make the creamy cheesecake.
Then of course, once done, you can put the Thermomix on a clean and you have a clean Thermomix ready for next time.
What Is A No-Bake Cheesecake?
A no-bake cheesecake means that you make the cheesecake without eggs and with a thick double cream (heavy cream) base. This means its thick when it enters the fridge which then means it just needs a quick set.
It’s a lighter cheesecake and many prefer no bake over baked.
Philadelphia Mini Egg Cheesecake
We are very much team Philadelphia when it comes to cheesecake and love to buy a few tubs and make this Thermomix no bake cheesecake. I have tried other cream cheeses, but they are never as creamy and yummy as what Philadelphia is.

My thoughts on Thermomix Cheesecake:
It’s Easy – If you have not made a cheesecake before, then it doesn’t get easier than this. I have made quite a few cheesecakes over the years and this is the easiest I have ever made.
Eggless – Because it is an egg free double cream method it is no bake and you can then leave it to set in the fridge overnight.
You can have variety – You can also mix and match the ingredients for different themes, such as Thermomix mars bar cheesecake.
But most importantly, would I recommend easter cheesecake in the Thermomix? Yes, I would. I would highly recommend that every Thermomix user tries a cheesecake to get themselves confidence in using the Thermomix.

Cheesecake Thermomix Ingredients
Biscuits – For the biscuit base we used digestive biscuits as well as some unsalted butter. You could use the same or swap for another biscuit base. Leftover cookies, graham crackers or even oreos make a delicious base.
Cheese – Philadelphia cream cheese is the BEST and I couldn’t imagine a cheesecake with another soft cheese.
Sugars – Then for sugars we recommend icing sugar (confectioners sugar) as it works really well on the cheesecake.
Cream – Then for that creamy texture and to make a non-bake cheesecake set we are adding some double cream (heavy cream).
Vanilla – We also added some vanilla extract for extra flavour.
Chocolate – Of course, this is a no bake mini eggs cheesecake so plenty of mini eggs are being added.
Decorations – Then we finished off with decorating the cheesecake with some mini eggs including breaking some to make your cheesecake look even better.
Then for the kitchen gadgets that we have used in this mini egg cheesecake it has just been our thermomix.
How To Make Mini Egg Cheesecake?
We like to make it easier and to mix the ingredients in our Thermomix. If you don’t have a Thermomix you can use a kitchen aid mixer, a regular food processor or even an electrical hand mixer.
- Crumbs. I like to start by making the biscuit base. Add to the Thermomix your digestive biscuits and mix until it resembles breadcrumbs. Then add in melted butter stir and add to the bottom of your spring form pan.
- Mix. Then add cream cheese to the Thermomix with the icing sugar and mix at medium speed until creamy. Then add the double cream (heavy cream) and the vanilla. Carry on mixing and then scrape the edges with a silicone spatula. Finally add in the chocolate and give it one last mix.
- Cool. Next pour your thick cheesecake mix into your spring form pan and flatten down with your spatula for a neat look. Place into the fridge for at least 12 hours though 24 hours is best.
- Decorate. Then once it’s had a good cool in the fridge get the knife around the edges and release the spring form. Then decorate with mini eggs around the sides of the cheesecake. Then add the remaining mini eggs to a zip loc bag and crush. Then add the crushed mini eggs to the middle of the cheesecake.
And I am sure you can see now how simple and easy this mini egg cheesecake recipe is and why you should be doing the same.

What Thermomix Settings Do You Use?
The easiest way to do this thermomix cheesecake no bake recipe is to use the manual settings.
The manual setting is perfect for mixing both the cheesecake mixes and for doing the crust base. You can be setting the time, and the speed all on one screen. Then it will beep when it is done.
For example, when we were making the cheesecake we mainly used speed 3 for 3 minutes most of the time.

Thermomix Mini Egg Cheesecake
Ingredients
- 200 g Digestive Biscuits
- 120 g Unsalted Butter, melted
- 900 g Philadelphia Cream Cheese
- 450 ml Double Cream/Heavy Cream
- 225 g Icing Sugar/Confectioners Sugar
- 1 Tbsp Vanilla Extract
- Cadburys Mini Egg Easter Shell
- 100 g Mini Eggs
Decoration
- 280 g Bag Mini Eggs
Kitchen Gadgets
- Spring Form Pan
- Thermomix
Instructions
- Place the biscuits into the thermomix put it on speed 6 for 10 seconds and mix until they resemble breadcrumbs texture.
- Then transfer to a bowl with melted butter and mix.
- Remove the biscuit mixture and press down into the bottom of your spring form pan.
- Add to the Thermomix the cheese and sugar and mix on speed 3 for 3 minutes. Then add the cream and vanilla and mix on speed 3 for 3 more minutes.
- Then add in the chocolate and scrape down the edges with a spatula and give it one last mix on speed 3 for 3 minutes.
- Pour the mixture over your biscuit base and then use a spatula to flatten it so that there are no lumps. Then transfer to the fridge and leave to cool for 12-24 hours.
- The next day, it’s time to remove the cheesecake from the fridge and decorate. Get a knife around the edges first and then release the spring form. Then decorate the edge with mini eggs. Creating a line of mini eggs all around the cheesecake.
- Then for your final touch add another bag of mini eggs to a zip loc bag and bash with a rolling pin or mix in the Thermomix. Then decorate the crumbs in the centre of the cheesecake.
A lovely no bake recipe, tasted amazing and the kids could not get enough, me and my hubby loved it also.
