Vegetable Soup Thermomix
After sharing with you yesterday how to make a broccoli soup in the Thermomix, I wanted to show you today how you can expand on that same technique into a creamy veggie soup.
Even though I love making creamy soups (you will find many here on Recipe This using different gadgets), I also love how hands free kitchen gadgets can make soup making. And how soup with gadgets doesn’t mean spending all day slaving over a pot of soup.
With the Thermomix you can dump ingredients into the cooking pot and then let the gadget do its magic.
Even better, you can take what I taught you yesterday with broccoli soup and switch the veggies to broccoli, carrot, and cauliflower for the creamiest most delicious soup.
But what gives this soup the wow factor, is its lack of prep. We are using veggie stock that we made a month before, along with prepacked veggies from our local supermarket.
What is amazing about these prepacked veggies is that they have a short shelf life and because of this the supermarkets often have them on sale.
Then when they do, you can bulk buy, make Thermomix vegetable soup and then freeze the leftovers, just like I am showing you how to do today.

Can I Make Soup In A Thermomix?
Yes, you sure can make soup in a Thermomix and this is our 3rd Thermomix soup. We have already made pumpkin soup and broccoli soup, and each follows a similar concept. So make one Thermomix soup and you can easily make many.
Unlike the soup maker and the instant pot (which I do a lot of soups in) the Thermomix can cook and blend soup at the same time, making it the best option for making homemade soups in.
How Do I Blend Soup In Thermomix?
The Thermomix has a fantastic blade and in a similar way to a professional blender or food processor it has several different speeds.
I like a speed of 1.5-3 (depending on what I am cooking) to cook and blend at the same time. Then a speed of 6 at the end of soup cooking to blend smooth.
How Do You Add Flavour To Vegetable Soup?
The best way to add flavour to veggie soup, is to make sure when you cook the veggie soup that you use vegetable stock.
Otherwise, if you make soup with just water, then the soup will be like dishwasher water once cooked.
What I do is make ahead instant pot veggie stock and then freeze it as large ice cubes.
Then when I am making a soup, I will defrost it in the microwave first for four minutes and then its ready to be poured in with the other veggie soup ingredients.
Creamy Vegetable Soup Thermomix
The secret to creamier vegetable soup with the Thermomix is to add LESS LIQUID.
Whilst I would normally add 1 litre (just under 4 cups) of veggie stock, if I want it creamier, I would reduce this by a quarter to 750ml/3 cups.
This can make a HUGE difference.
Another method is to add extra veggies because carrots for example are fantastic for making a creamy sauce with.
Thermomix Weight Loss Soup
Whilst this was never the plan, this Thermomix soup recipe would make a great weight loss soup.
It has no cream, and the only high calorie item is the sliced cheese. Which you could reduce or leave out.
Then you can treat this veggie Thermomix soup as a plan B to our cabbage soup diet plan recipe.

My thoughts on Thermomix Veggie Soup:
It’s simple – This veggie soup Thermomix recipe is one of the easiest ever recipes to make in the Thermomix and its perfect for expanding into soups.
Dicing is a game changer – I love loading garlic and onion into the Thermomix and how quickly it chops them for you.
You can make baby puree – You can also add just stock and veggies to the Thermomix and make baby puree for your little ones.
But most importantly, would I recommend making veg soup in the Thermomix? Yes, I would. I would highly recommend that every Thermomix user tries making soup as its amazing and such a time saver. Plus, you can also use the Thermomix to reheat your leftover soup too!

Vegetable Soup Recipe Ingredients
Veggies – I recommend three small bags of prepped veggies. Anymore and it will not all fit in the Thermomix. I also recommend this soup for four people, so if feeding two, simply half the veggies. The bags of veggies we used were 250g each.
Garlic & Onion – I love garlic and onion in most of my soups. They give a fantastic starting flavour and prep fast in the Thermomix.
Oil – I also recommend a little extra virgin olive oil as its fantastic for sauteing the garlic and the onion and gives extra flavour to the soup. You can also fill a spray bottle with extra virgin olive oil to make it easier.
Stock – Beyond the vegetables the key ingredient for the best ever thermomix soup is the stock. This is what gives the great flavour to the soup and stops it from tasting bland. I recommend our instant pot veggie stock.
Seasoning – Then soup is not the same without its seasonings. I recommend salt, pepper, parsley, and oregano.
Extras – Then for creating the best veggie soup I recommend some sliced cheese (we used red Leicester) and some Greek yoghurt.
Then for the kitchen gadgets that we have used in this Thermomix veg soup it has just been our TM6 and its wonderful for many types of soups.

How To Make Vegetable Soup In Thermomix?
- Sauté. First peel your garlic and onion and dice. Then load into the Thermomix with extra virgin olive oil and sauté and mix at the same time on speed 6.
- Load. Scrape the sides of the Thermomix and add veggies and cook and mix. This will reduce the veggie size so that you can fit more in.
- Load. Scrape the sides again and pour in veggie stock and seasoning. Cook for 20 minutes.
- Finish. Add in cheese, Greek yoghurt and seasoning and do a quick blend to create creamy veggie soup.
And I am sure you can see now how easy it is to make Thermomix quick vegetable soup and how you can do the same in your kitchen.
What Thermomix Settings Do You Use?
The easiest way to do the veggie soup recipe in your Thermomix is to use the manual settings.
The manual setting is perfect for mixing and cooking at the same time. You can be setting the temperature, the time, and the speed all on one screen. Then it will beep when it is done.
For example, when we were cooking the veggie soup we used speed 2 for 20 minutes on 100c.

Thermomix Vegetable Soup
Ingredients
- 1 Medium White Onion
- 5 Garlic Cloves
- 750 g Mixed Veggies
- 2 Tsp Extra Virgin Olive Oil
- 1 L Veggie Stock
- 2 Tsp Oregano
- 2 Tsp Parsley
- Salt & Pepper
- 2 Tbsp Greek Yoghurt
- 100 g Sliced Red Leicester Cheese, optional
Kitchen Gadgets
- Thermomix, TM6
Instructions
- Peel and slice your onion. Load into the Thermomix with your garlic cloves and extra virgin olive oil. Place it on speed 6 for 5 seconds to mix well and to cut up the onion and garlic more finely. Then scrape down the edges.
- Add the mixed vegetables and place on speed 1.5 for 5 minutes at 100c/210f.
- Then add veggie stock and seasoning and cook for 20 minutes at 100c/210f at speed 2.
- Scrape the edges again add sliced cheese, Greek yoghurt and extra salt, pepper, and parsley. Mix on speed 5 for 2 minutes before serving.
