In the summer of 2015 I followed the Paleo diet. I had always been fascinated by it and wanted to see what the big deal was. I wanted to be healthier than I currently was and to learn what real whole food really was.
Previously I had followed diets that deprived your body of what it needed and you just ended up fatter than you were before.
I gradually completed Paleo until I was 100% Paleo and sticking to it by the letter. I then did the 30 day plan of the Whole 30. It was certainly a challenge but put me at the healthiest I have ever been. I also lost 10 kilos over a 8 week period (22 pounds) and hit my ideal weight.
But the worst thing about Paleo and the Whole 30 is that you are deprived from a lot of your favourite foods. Chocolate is out of the question, as is ice cream and you can forget your favourite fizzy drinks.
At the time we had just discovered the highlights of having our own ice cream thanks to our new ice cream maker and how wonderful it would be during our early Paleo days to make our own Paleo approved ice cream.
This recipe for Paleo banana ice cream was the first we made and so simple that you could even give it a child to do!
And even better…..there are only four ingredients. Talk about lazy, healthy ice cream heaven!
- 3 Large Bananas
- 1 Can Coconut Milk
- 1Tbsp Maple Syrup
- 2Tbsp Honey
- Mix the ingredients together in your hand mixer.
- Add the mixture to the ice cream maker and allow to create Paleo ice cream for 20 minutes.
- Place in the freezer for an hour to freeze.
