Drying Rosemary
This may not sound very lady like, but don’t you just hate it when you get rosemary (or thyme) stuck in your teeth.
I know its what puts off most over 50’s from eating recipes with rosemary and when you think of those jars of supermarket bought dried thyme or dried rosemary, they are the perfect shape for getting stuck!
BUT make your own dried rosemary using your air fryer and then pulse in the blender and you choose how big the dried rosemary is.
What I found is that 3 more seconds in the blender and they were blended smaller like parsley and never got stuck in our teeth once, but still had the same delightful flavour that rosemary brings.
Today I wanted to share with you exactly how to dry rosemary using the air fryer. So easy, much faster than the oven or a traditional dehydrator and perfect for preserving your leftover fresh rosemary and avoiding food waste.
Plus, if you love learning about dried herbs in the air fryer, do also check out our air fryer dehydrated basil which we shared with you yesterday.

Can You Dry Rosemary?
Yes, you can dry rosemary and its one of those herbs that you dehydrate once, you will want to do it repeatedly.
Firstly, its one of the easiest herbs to dehydrate. You don’t have to rinse it first and you don’t have to remove the rosemary leaves before drying it out.
Secondly, its heavier than other fresh herbs therefore, it will not blow around in the air fryer as it dehydrates.
Best Way To Dry Rosemary?
I highly recommend rosemary dried in the air fryer. The air fryer is a fast method for dehydrating foods, it doesn’t fly about, and you don’t need to worry about keeping the door slightly open, like you would if dehydrating in the oven.
Add to this that fresh rosemary to dried is much faster in the air fryer compared to a classic old fashioned dehydrator.
3 Sprigs Of Rosemary Is How Much Dried?
Not a lot at all. We all know the joke of when we cook spinach, and it goes down to a spoonful from one giant bag? Well, that same rule applies very much with sprigs of rosemary that you have dried out in the air fryer.
I am not sure the exact quantity of 3 sprigs of rosemary to how much dried. But take a look of the photo below and note this is 1 rosemary plant, dried into dried rosemary.
What Does Dried Rosemary Look Like?
Dried rosemary just looks like the photo above. It just looks like any dried herb that you have put through a food processor once you have dried it.
However, if you would like to know what dried rosemary looks like before it has been stripped, then its like dried out leaves that you have spotted in the park, or when you have cooked herbs for too long.
Just like you see in this photo of our dried rosemary before blending:
How To Strip Rosemary Leaves?
Once you have your dried rosemary sprigs, then its time to strip the rosemary leaves. This is so easy once you have dehydrated your rosemary because you can just push your hand against the springs and the leaves just fall off on their own.
You then load your dry rosemary into a blender or food processor and its ready for its final step.
Can You Dehydrate In An Air Fryer?
Yes, you sure can. I have tried many different fresh foods in the air fryer, and they have all dehydrated very well.
Whilst we are showing you today how to turn fresh basil to dry basil, fruits work very well such as dehydrated orange slices, dehydrated cherries, dehydrated mango, dehydrated lemon slices, or my personal favourite dehydrated banana chips in the air fryer.
Dehydrated Rosemary Ingredients
Rosemary – I used the equivalent of one full fresh rosemary plant minus a little I had used to make some air fryer garlic mushrooms. Note that you can do more, or you can do less. Though like spinach it does go down to hardly anything, so don’t do just one rosemary sprig. Plus, you can use little bags of rosemary, a plant or even some rosemary from your garden.
Dehydrator – We also used my stackable dehydrator that I bought specifically for the Ninja Foodi. If you are dehydrating rosemary with an air fryer, I recommend something similar. I love this one because it allows you to have several racks of fresh rosemary dehydrating at once.
Then for the kitchen gadgets that we have used in this drying rosemary recipe it has just been our Ninja Foodi. We have this one and its wonderful for many types of recipes including dehydrating.
Plus, we recommend you head over to our air fryer recipes category as we have more than 500 tried and tested air fryer recipes and have been air frying for 10 years. And nearly all are suitable for the Ninja Foodi air fryer setting.
How To Dry Rosemary In Air Fryer?
- Load. Add your fresh rosemary sprigs to your dehydrator shelves. Start at the bottom, clipping on each shelf as it fills up.
- Load. Then add your stackable dehydrator into the Ninja Foodi and place the air fryer lid down.
- Cook. Set the temperature to 55c/130f and the function to dehydrator and then dry rosemary for 4 hours or until fully dried and like dried out mini branches in the park.
- Finish. Then once the dehydrator is done, remove the dry rosemary and load into a blender. Blend until you have the texture of dried rosemary. Load into an airtight container and consume in dried rosemary recipes within a year.
And I am sure you can see now how easy it is drying rosemary in air fryer and why you should be doing it too!
How To Dry Thyme & Rosemary?
Another option is to dry thyme and rosemary together. They are a similar dried herb and when I am cooking, I often mix and match thyme and rosemary in recipes.
If you would like to dry thyme and rosemary together, then I recommend you follow this dried rosemary sprigs recipe and then do 50% rosemary sprigs and 50% thyme sprigs.
How Long To Dehydrate Rosemary?
We recommend 4 hours for dehydrating rosemary in the air fryer. Though we note that in some air fryers its quicker than others.
Do keep an eye on your rosemary from 2.5 hours onwards to see how much longer they need and if the cook time needs adjusting.
How Long Does Dried Rosemary Last?
Dehydrated rosemary will last the same time as dried rosemary that you bought already dried. As long as it is kept in an airtight container in a cool pantry.
Though in the Milner house we love to use dried rosemary in recipes, and it will often be gone within a month.
What You Need To Dehydrate In A Ninja Foodi?
In a traditional dehydrator you have a lot of shelves that you can fill with food you want to dry. Of course a Ninja Foodi is one big pot so how do you do it? You buy the Ninja Foodi dehydrator accessory and it is a stack of shelves just like a traditional dehydrator and can store a lot on it and then place it inside of your Ninja Foodi cooking pot.
How To Store Dried Rosemary?
I buy these plastic containers for when I am dehydrating. They are airtight and are also great for transporting if going on vacation.
They are also very good for taking to a weigh in place to buy exact quantities of dried produce. Such as dried chickpeas for instant pot chickpeas.
Then I store the dried rosemary in my herbs cupboard for easy access.
What To Do With Dried Rosemary?
Now for using dried rosemary. My ultimate favourite thing with using dried rosemary is in homemade roast potatoes in the air fryer. They are just so, so good. And just a sprinkle of dried rosemary gives them a fantastic flavour. You can also do the same with our air fryer duck fat potatoes. Or the lazy route with air fryer frozen roast potatoes.
Or we all love lamb, right? You can do slow cooker lamb chops or air fryer lamb chops.

Thank you for posting this recipe! I found organic fresh rosemary on sale for 1.79 & this was the perfect way to preserve it.
Followed the recipe, my Emerile Lagosse Air Fryer with dehydrate function only took 2 hours at 130 degrees. Leaves came off stem beautifully. Pulsed in my ninja for the right texture. Worked perfectly!
Loving the dehydrate content. Tried this and then also blended it but using a standard blender not a Thermomix and it turned out great, nice and dry, just like you buy in the shops.
