Yesterday on the blog we showed you how to make an amazing Pressure Cooker Potato Corn Chowder, and today we are back with a cauliflower and bacon corn chowder. If you haven’t guessed already, I have a thing for corn chowder and just can’t get enough of it!
When I was growing up there was 3 types of soups that I would get fed:
Out of can – I kid you not I was raised in the 90s and it was always about those cans of Heinz Tomato Soup.
Rather disgusting when I try them now and have you seen the rubbish that goes into those cans? But I had variety in my 90’s diet and sometimes it was canned mushroom soup instead.
The diet soup – I remember many times my mum making enormous portions of soup for herself and then living off the cabbage soup diet for a week. It was vile and smelt so bad. Thankfully I didn’t have to eat it very often.
Grandads hearty soup – I loved my grandad’s soup and the vegetables all came from his allotment patch. It was one of my favourite soups and would always involve carrots, cabbage and cauliflower and lots of other goodness. But he did have a habit sometimes of over salting it!
When I think of a Pressure Cooker Cauliflower Corn Chowder or our Pressure Cooker Potato Corn Chowder it reminds me of my Grandad and what hearty soup is all about.
But something else I should mention about my Grandparents and that is that they were very poor. Because of poverty my grandad was fantastic at making meals from scraps and his food always tasted the best.

Pressure Cooker Cauliflower Corn Chowder

Pressure cooker cauliflower corn chowder is the chowder of leftovers. I love it as the aftermath from Thanksgiving, Christmas or a roast dinner. Or a pantry raid for when you need lunch on the table and hardly have any food in the fridge.
You gather up classic corn chowder ingredients such as:
- Carrots
- Celery
- Potatoes
- Sweetcorn
Then add to your corn chowder whatever leftovers you need to use up and let it all cook together.
For example, we had 3 back bacon rashers that we found in our fridge along with some cauliflower and shredded chicken.
You could also add to yours any other spare root vegetable such as swede, turnip, parsnips or sweet potatoes. I also like butternut squash too.
Just make sure you avoid watery foods such as pumpkin, courgette or tomatoes or they will stop your corn chowder from being thick and creamy.
The potatoes I used in my pressure cooker cauliflower corn chowder was classic for family kitchens when their potatoes are past their best.
All my potatoes had heads on them and were growing! But I just gave them a quick peel and quartered them. It reminded me of Grandad’s generation when NOTHING was wasted.

Can You Freeze Pressure Cooker Cauliflower Corn Chowder?
Absolutely! In fact, this is the reason why I made my pressure cooker cauliflower corn chowder. I had bits of food that needed using up and instead of allowing them to go to waste, I could quickly cook a corn chowder in the pressure cooker and then freeze it for later.
I freeze my Pressure Cooker Cauliflower Corn Chowder in simple zip loc bags. Then I can freeze them flat so that I don’t waste room in my chest freezer and then I can have a growing soup collection in my freezer for whenever my family wants soup.

How Can I Make Corn Chowder Thicker?
Simply put you can add MORE of two of the main ingredients:
- Potatoes
- Cauliflower
Both ingredients are very good for making thick sauces and a little bit more makes it even thicker.
Plan B would be to add a can of coconut milk to the corn chowder and it will be even thicker.
Plan C would be to drain some of the water from the Instant Pot pressure cooker before you blend. But I don’t think it needs to, as the potatoes make it so thick once you start blending it.
Can Corn Chowder Be Made In The Slow Cooker?
Absolutely! Instead of cooking our cauliflower corn chowder FAST in the Instant Pot Pressure Cooker, you can cook it slow in the slow cooker. Simply swap the 8 minutes in the Instant Pot for 4 hours on high in the slow cooker. Simply swap the 8 minutes in the Instant Pot for 4 hours on high in the slow cooker.
Helpful Tools For Making Pressure Cooker Cauliflower Corn Chowder
The 8 Litre Instant Pot Pressure Cooker – I often get asked what size Instant Pot people should buy and most of the time I recommend the 6 litre Instant Pot.
But when it comes to meal prepping and making large portions of freezer meals, then the 8 litre is a MUST. It holds a lot more food and is gold for making a delicious cauliflower corn chowder.
Hand Blender – Many will say to put your corn chowder into a blender and whizz it up. I say use a hand blender and blend half. Then you can end up with those amazing bite sized lumps of potato and corn in your corn chowder that taste delicious.
Zip Loc Bags – My hubby thinks I am crazy with how many zip loc bags that I own. But I love to have them in all sorts of sizes for all the different meals I want to cook. The medium sized ones are perfect for family freezer meals especially for homemade corn chowder.

Pressure Cooker Cauliflower Corn Chowder
Ingredients

Recipe Ingredients:
- 1 Kilo White Potatoes
- 3 Back Bacon Rashers
- 3 Cups Shredded Chicken optional
- 2 Small Cans Sweetcorn
- Leftover Vegetable Scraps see notes
- 1 Tbsp Olive Oil
- 2 Tbsp Mixed Herbs
- Salt & Pepper
Instructions
- Dice the bacon and cook on the sauté setting in the Instant Pot inner pot with the olive oil. When the bacon is cooked cancel the sauté setting. As the Instant Pot takes a while to get hot you can start doing your prep while you wait for the bacon to cook.
- Peel and dice the carrots and potatoes and add them to the bacon, clean and slice the celery and add this too.
- Add the seasoning, the sweetcorn (including the water from the cans) and 250ml of water.
- Place the lid on the Instant Pot, set the valve to sealing and cook for 8 minutes on manual.
- When it beeps manually release pressure. If you have any cooked food, you want to add i.e. cooked vegetables or cooked shredded chicken then add it now.
- Give it a stir and using a hand blender, blend half the Instant Pot contents and stir in between until you have a creamy cauliflower corn chowder.
