If you love stews and casseroles, then you must try a slow cooker game casserole. You can use any game you like, it can become a delicious hearty one pot slow cooker meal, plus the leftovers make a delicious pie.

This game casserole is made with diced pheasant, but easy to mix and match with any game and plan your game meat like we will show you how to do.

This game casserole was a work in progress over time and took us a while to make it happen for you.

My instructions to the butchers was a massive bag of diced boneless game meat that I could use in several casseroles to keep me warm over the winter.

I was informed it would take a while, as some of the game is rather small birds.

But over the game season he created a big bag of diced game for me, ready for me to make a delicious casserole with.

Or to be EXACT he had collected a massive 2kg which is 4.4lbs of diced pheasant that would become our slow cooker game casserole.

You can of course do the same. If you have some game from the butchers and its not that much. Create a freezer bag and add to it until you have that dream bag of diced game ready for cooking.

Today, I am going to be sharing with you what a game casserole or pheasant casserole as you might call it is like in the slow cooker, how to make it, what to serve with it and lots of other tips and tricks.

What’s Is A Game Casserole?

A game casserole, or in our case a slow cooker game casserole is like your traditional casserole but uses game meat instead.

Most used is pheasant meat but its also popular with venison, goat and wild duck.

In many game casserole recipes a recipe will say mixed game meat, which means you don’t have to use pheasant you can use a mix of what you have in.

Is Casserole The Same As Stew?

When talking about slow cooker casseroles and slow cooker stews, it very much is the same.

The traditional casserole comes from the old school casserole pot used and is cooked in the oven.

Whilst a traditional stew would be cooked in a pan on the stovetop.

Yet with a slow cooker pheasant casserole you could say either one, because a slow cooker doesn’t go on the stovetop or in the oven and the slow cooker is similar in style to a casserole dish.

Though, if you went by what people call the slow cooker version, casserole gets a lot more searches in Google than a slow cooker game stew does.

What Is Pheasant Casserole In Slow Cooker Like?

Imagine your favourite stew or casserole as you might call it, in the slow cooker. Then simply swap the meat for diced pheasant and that is what a pheasant casserole in the slow cooker is like.

The pheasant has a similar taste to duck, or if mixed with goat then its similar to a lamb stew.

You can also serve your pheasant casserole with similar sides as you would with any casserole or stew, such as yummy, mashed potatoes or some bread for dunking or even better some air fryer suet dumplings.

Game – We used a kilo (2.2lbs) of game meat to make a large game casserole. The idea is that we wanted leftovers, you could of course half this quantity or remember that game casserole freezes well.

Veggies – We also love our veggies in a winter casserole. We added onion, swede (rutabaga in the US), carrots and mushrooms.  

Beer – For the old fashioned slow cooker casserole we recommend adding beer for flavour. We used 2 cans of Guinness, though you can add in some of your own favourites. If you don’t like beer, you can swap the same quantities for red wine.

Stock – I also recommend some beef stock. Beef stock tastes better in the slow cooker than lamb, or a game stock and works well in casseroles and stews for extra flavour.

Bacon – For that extra flavour and for that typical taste of a British casserole we recommend some bacon. The bacon also adds some extra fat to the slow cooker and tastes so good.

Seasonings – Then for seasoning our game casserole we used salt, pepper, dried parsley, and dried bouquet garni.

Can You Recommend A Slow Cooker?

I often get asked which slow cooker I recommend and which one I use. In 95% of our slow cooker recipes, we use the Ninja Foodi and its slow cooker setting. Because the Ninja Foodi is an all in one cooking pot we can sauté, air fry, slow cook, and even dehydrate and make yoghurt, all from the same cooking pot.

How To Cook Pheasant Casserole In Slow Cooker?

  • Sauté. Start by sauteing the onion, bacon, and game casserole mix in the slow cooker. If you have a slow cooker like we do, it can be used on the stove.
  • Prep. Next prep the slow cooker veggies such as the carrots, swede, and mushrooms.
  • Pour. Then cancel the sauté, pour in the beer and then scrape the edges and bottom of the slow cooker for any bits of onion that have stuck on. Add stock, veggies and seasonings and mix well.
  • Cook. Place the lid on the slow cooker and slow cook your game casserole recipe for 4 hours on high or 7 hours on low.

And I am sure you can see now how simple and easy this game casserole slow cooker recipe is prepare and cook.

Creamy Pheasant Casserole

If you like a really creamy pheasant casserole, then there is an easy add on ingredient to make this happen.

That is mashed potatoes.

I always serve stew with mashed potatoes (I usually make instant pot no drain mashed potatoes) and you can stir in some mash into the casserole and stir and it will make it much more creamier.

Instructions

  • Peel and slice the onion and chop the bacon into chunks. Place the slow cooker on sauté, or onto the stove depending on your slow cooker. Add the olive oil and let it sizzle and sauté as you prep.

  • While you wait prep the veggies and peel and dice the carrots and swede and quarter the mushrooms. When the onions have some colour and the bacon is starting to crisp, add in the game meat and stir and allow it to brown on all sides.

  • After the browning of the game meat, cancel sauté and then pour in the beer and mix and scrape the edges.

  • Add all other ingredients to the slow cooker, mix and place the lid on the slow cooker. Slow cook on high for 4 hours.

  • After 4 hours do a fork test to make sure the carrots are fork tender. Stir and then serve.

Notes

Mash. We recommend serving this slow cooked game casserole with some mashed potatoes. We also recommend adding in a little mash to the casserole to make it creamier.
