Mediterranean Chicken Casserole. How to make a delicious Mediterranean chicken casserole in the slow cooker. Loaded with Mediterranean vegetables, tomatoes and olives for that authentic Mediterranean one pot meal.
This Mediterranean chicken casserole is an updated post. We originally created this healthy Mediterranean casserole for the Dutch Oven back in the January of 2017, while on the whole30. But felt with our love for our new slow cooker, that we could update it and make it into a slow cooker recipe for you instead.

Mediterranean Chicken Casserole
I am very blessed to live in Portugal. Take off today when I am typing this up in a freezing office while it is raining like cats and dogs outside. But the rest of the time I am truly blessed.
The sun shines the majority of the year and temperatures never go down to freezing and in the summer, it is so hot only the local beach or waterpark will do.
But forget the weather that every expat always quotes as the best bit, what I really love is the food. I just can’t get enough of it.
Delicious fresh sardines, piri piri chicken at a fraction of the price of Nandos, organic vegetables that cost cents, good quality chickens and the list goes on and on.
Here at the Milners, life in the colder winter months revolves around lots of chicken casseroles like this one. We especially enjoy a casserole in the winter months as it is a great comforting way to warm up.
Behind the scenes note – when we were making this, I had a baby to breastfeed first, this meant it didn’t make it onto the dinner table on time and my eldest son (15 at the time) was far from impressed at having his lunch after 2pm.
But when he had finished eating it, he said “it was food worth waiting for”. So that made me happy!
Now whenever I make him a Mediterranean Chicken Casserole, I always say it is worth waiting for!
Mediterranean Chicken Casserole In Slow Cooker
As I have mentioned above, I have converted this Mediterranean chicken casserole to the slow cooker.
In last years Black Friday Deals Dominic purchased for me a brand-new slow cooker.
It is the Crockpot brand and unlike many slow cookers the slow cooker pot is suitable for the stovetop.
This means it is ideal for any Dutch Oven recipe such as this one. That is because you can crisp up your skin on chicken on the stovetop prior to slow cooking your casserole.
This is the Crockpot we have and we thoroughly recommend getting one that will crisp your food, or use for reducing liquid in your slow cooker meals.
Chicken Casserole With Mediterranean Vegetables
I always complain to lots of my American readers that I can’t source a lot of American food.
Such as spaghetti squash or corn dogs. But while I can’t get these American classics what I can get is the best Mediterranean vegetables all year around.
Forget having to blanch and then freeze courgette, or zucchini as Americans call it, we have it whenever we like.
The same goes for delicious tomatoes, the tomatoes are there whenever I want them, and I binge on tomatoes every week.
In this Mediterranean casserole today, I will be including delicious parsnips, swede, tomatoes and carrots.
Mediterranean Chicken Casserole With Olives
This Mediterranean chicken casserole with olives has the wow factor because of the olives. We used delicious seasoned olives that we got from Olly’s Olives and they were superb.
You can use any green olives that you want, but flavoured olives do a great job of flavouring your Mediterranean chicken casserole as it cooks.
More Additions To Our Mediterranean Chicken Casserole
But its not just about the Mediterranean vegetables and the olives. There are other delicious additions to this yummy Mediterranean casserole.
- Choose your meat – You can use a mixture of your favourite chicken in this casserole. You could chop up a whole chicken and have a mix of chicken thighs, chicken wings and chicken drumsticks and breast. Or you could load up a pack of chicken thighs. We used chicken legs and chopped them into chicken drumsticks and chicken thighs. I love to do this because chicken legs are cheap and the chicken will stretch further.
- Add chorizo – I love to make a Mediterranean chicken and chorizo casserole. It will be loaded with a whole chorizo and OMG it is like you are in Spain when you try a Mediterranean casserole like this.
- Mix and match – You can also mix and match with your favourite seasonal Mediterranean vegetables. I worked with what I had in my fridge but you could include aubergine and mixed peppers too.
Mediterranean Chicken Casserole In Slow Cooker
Cooking Mediterranean chicken casserole in slow cooker is so simple:
- Crisp your skin in the slow cooker on the stovetop with extra virgin olive oil until you have delicious crispy skin.
- Remove the chicken from the slow cooker.
- Peel and dice your vegetables and load into the slow cooker.
- Add in chorizo, tomatoes, seasonings and stir well.
- Load your chicken on top, add olives and cook your chicken casserole for 4 hours on high or 8 hours on low.
- Serve.

Mediterranean Chicken Casserole In Slow Cooker
Ingredients

Mediterranean Chicken Casserole Ingredients:
- 2 Chicken Legs
- 2 Parsnips
- 1 Medium Swede/Rutabaga
- 2 Medium White Potatoes
- 1 Chorizo, thinly sliced
- 5 Medium Tomatoes, cubed
- 2 Tbsp Extra Virgin Olive Oil
- 400 ml Tinned Tomatoes
- 200 g Seasoned Green Olives
- 1 Tsp Garlic Powder
- 1 Tsp Oregano
- 2 Tsp Bouquet Garni
- Salt & Pepper
Instructions
- Chop your chicken legs into thighs and drumsticks and season with salt and pepper and garlic powder. In your slow cooker add extra virgin olive oil and sauté the skin of your chicken until you have crispy skin. Remove the chicken from the slow cooker and put to one side.
- Peel and dice your vegetables into cubes and load into the slow cooker.
- Add in chorizo, cubed tomatoes, seasonings and tomato sauce or tinned tomatoes and mix well.
- Add chicken pieces on top and load it with your olives.
- Cook on high for 4 hours or low for 8 hours and then serve.
