Corned Beef Stew

Two days ago, we showed you how to make a delicious, corned beef hash in the slow cooker. This was then followed up yesterday with air fryer corned beef pasties, which is one of my favourite uses of corned beef leftovers.

But the problem with corned beef pasties, is that you don’t need many leftovers to make the cute little pasties with.

If you have a lot of corned beef hash leftovers, then you need a plan B and that is when corned beef stew becomes the hero of your weeknight dinner plan.

You can load it up with all kinds of leftovers stew staples and use it as your go to recipe when you want an easy stew recipe.

What Is Corned Beef Stew?

Corned beef stew is similar to corned beef hash, except it has the look of a beef stew and has a stew like gravy. Unlike corned beef hash which is free of liquid.

You can cook either of them in the slow cooker and corned beef stew is perfect for using up your corned beef hash like we have done.

In fact, many people call it corned beef hash like a stew, corned beef hash stew or corned beef potato stew.

Can You Freeze Corned Beef Stew?

Yes, you can. However, we will not be freezing ours because ours is a leftover corned beef stew and you can’t reheat corned beef twice.

If freezing your corned beef stew, simply place into a suitable freezer container, wait until it cools, place a lid on and a label and load into the freezer.

Should Corned Beef Be Covered With Water In Slow Cooker

No, it shouldn’t. Old fashioned corned beef stew, is nice and thick like a regular beef stew and if you covered it in water, it would end up too water like, and you would also lose a lot of your flavour.

Its best instead to make your corned beef stew recipe with a little thick beef gravy and then you will have a much better stew to tuck into.

Corned Beef – It starts with a couple of cans of corned beef. Any will do but they will need dicing into small bite sized pieces.

Potatoes – Making corned beef stew is all about the delicious, cubed potatoes. You can go super small or keep them large like roasted potatoes. Though if you are planning to reheat, go large because then they reheat better.

Onion – Stew wouldn’t be the same without the diced onion. You can use one onion or two if you prefer it to have a stronger onion taste. I always feel like something is missing if I don’t mix onion with my potatoes in a stew.

Carrots – Carrots are fantastic for adding a bit of colour to your stew, or for feeding more people. I also find they have a similar cook time to potatoes, making them a fantastic pairing.

Root – I also recommend adding in other root vegetables that you have available. Beyond the carrots and potatoes, we used swede (aka rutabaga) and parsnips.

Gravy – We had some leftover gravy in the fridge from the Yorkshire chippy and it adds great flavour. If you don’t have this, you can use beef stock or another gravy.

Seasoning – There is nothing worse than bland boring corned beef stew in the slow cooker. I recommend parsley, salt, and pepper. You can also add extra seasoning at the end if it doesn’t taste like it has enough flavour.

Then for the kitchen gadgets that we have used in this corned beef stew slow cooker recipe, it has just been our Crockpot. We have this one and it does an amazing job and is also ideal for sauteing on the stovetop first.

How To Make Corned Beef Stew?

  • Prep. Peel and dice your potatoes and vegetables. Load into the slow cooker with seasonings and mix with your hands.
  • Leftovers. Add in leftover corned beef hash or diced corned beef from the can. Also add in beef gravy and mix everything with your hands.
  • Cook. Next slow cook until the potatoes are soft which is about 4 hours.
  • Stir. Add in some frozen peas and stir before serving.

How To Thicken Corned Beef Stew?

It may sound ridiculous but simply blend a potato. Find a large potato in your corned beef stew and using your hand blender, blend it.

Then stir your corned beef stew and it will be thicker.

Of course, if it is incredibly thin, then reduce the liquid a little before you do that, but this trick works all the time.

How Long Does Corned Beef Stew Take In Slow Cooker?

Essentially, we are reheating leftover corned beef, adding new vegetables to it and making a gravy. Therefore, there is no meat that needs cooking, and this helps reduce the cook time.

A simple 4 hours on high will cook your corned beef hash stew.

How Long Does Corned Beef Stew Last?

Corned beef hash, if kept in a cold fridge will last for up to 3 days.

However, if it stays sat in your slow cooker with the lid on and on keep warm, it will last up to 8 hours. I like this because I can serve it for lunch and then the leftovers become dinner.

What To Serve With Corned Beef Stew?

You MUST serve your corned beef stew with dumplings. I just love how delicious and comforting corned beef stew and dumplings is.

You can use suet, or you can avoid suet the choice is yours. Either make our suet dumplings for stew, or make our dumplings without suet, you choose. Both are amazing and we rotate them as part of our meal plan.

Also, why not also dunk in some of our air fryer pull apart bread, because that is equally yummy!
