Also known as instant pot prime rib this recipe will impress your dinner guests and produce the best leftovers that you have ever eaten.
This instant pot rib roast recipe is an updated post. We originally shared with you how to cook a rib of beef in instant pot back in 2017.

Instant Pot Prime Rib Roast
I just have to type the words โinstant pot prime rib roastโ and I am licking my lips at the thought of tucking into the best cut of meat in the instant pot.
But I am also well aware that prime rib is one of the most expensive cuts of meat and is certainly not economical like an instant pot chuck roast.
But its also the most flavoursome and tender meat (well apart from fillet steak) that I can cook at home using my kitchen gadgets.
After buying a beautiful organic 4 rib of beef from my local butchers for just short of ยฃ130.00, I wanted it to go beyond one roast beef dinner and for me to feel like I have got value for money.
That is why I decided to do prime here on Recipe This for this week. I am sure I am not the only one that loves prime rib but hates the price for one meal only and wants to make several meals out of one 4 rib of beef.
We will be halving it for two main roast rib joints, making soup with the rib bones and best of all, yummy leftover meals.

Can You Cook A Rib Roast In An Instant Pot?
Yes, you sure can. The instant pot pressure cooker and any other electric pressure cooker, does an impressive job of cooking any roast beef.
This of course includes a rib roast.
Though we do recommend that you cook a boneless rib roast rather than bone in and then reserve the rib bones for a yummy instant pot beef soup.
What Do You Call Instant Pot Beef Roast?
I originally published this recipe way back in 2017 and titled it an instant pot beef roast. I have now edited it today and renamed it an instant pot prime rib roast, as I feel like beef roast is too broad a term.
Beef roast could be a chuck roast, topside of beef, silverside, brisket and so many other cuts.
But during the process of renaming and some research among family and friends I realised that prime rib was not its only name.
This amazing meat might be referred to as:
- Instant Pot rib roast
- Instant Pot rib of beef
- Instant Pot ribeye roast
- Instant Pot cross rib roast
- Instant Pot standing rib roast
Dominic said that during his years as a chef specialising in roasts, it would always be referred to as a 4 rib roast.
And our butchers (who we purchased it through) named it a rib of beef and I would think of it as a rib roast.

Preparing Your Instant Rib Roast
The first step is to prepare your rib roast for the instant pot is deciding how you wish to cut it and if you are eating it bone in or boneless. And if any leftover meals are going to be planned, or if its just a one off roast beef for a Sunday dinner or a special occasion.
What we did in preparing our rib roast was to separate it into two.
Our rib roast was a 4 rib roast and weighed more than 5 kilos which is 11 pounds. Even if we had wanted to cook it all, there is no way that it would have fitted in our instant pot pressure cooker.
Therefore, Dominic was kind enough to slice down the middle and create two ribs of beef.

Of course, these would fit in the kitchen gadgets easily.
BUT we find that rib of beef in the instant pot is much better, if you go with a boneless version.
Plus, if we do a boneless version, we can cut out the ribs and then use the rib bones for an amazing soup.
Of course, you might not need to consider this, as you might have a ribeye roast that has been rolled and is already prepared for you.
Beef Rib Roast Instant Pot Seasoning
Some cuts of beef are so amazing, that they only need a light seasoning because you want to taste the flavours of the meat.
Beef rib roast is one of them, which is wonderful for you, because it means there is not much effort on your part.
What I recommend is that you season your rib roast with salt, pepper, and some garlic powder.

Then leave it in the fridge overnight.
The next day your prime rib roast is ready for cooking in the instant pot.

Rib Roast Instant Pot Recipe Ingredients

Roast โ Whether its instant pot prime rib or instant pot rib roast, you will want a good one, for cooking in the instant pot. Opt for boneless or cut out the bones yourself. Also note, that you want one that will fit in your instant pot. We used a 2.5kg 2 rib roast which is 5.3lbs.
Oil โ This may sound like an odd ingredient to add to this instant pot rib roast recipe, but it creates a glue for your seasoning to stick to. It also stops your rib roast from going dry during the pressure cooking process.
Seasoning โ Keep the seasoning basic because the flavour is in this amazing cut of meat, not in heavy seasoning. I recommend salt, pepper, and garlic powder. You can include something simple like sweet paprika or some onion powder too.
Stock. Your beef will be so much better if you use beef stock rather than water in the instant pot. We make our own frozen beef stock cubes and then load them into the instant pot with the beef.
Onion. I also add an onion and deglaze it first in the instant pot with some extra virgin olive oil. The Instant Pot can then be deglazed with some red wine.
Then for the kitchen gadgets that we have used in this easy instant pot beef roast recipe, it has just been our instant pot pressure cooker. We have this one and it is amazing for many cuts of beef.
How To Cook Rib Roast In An Instant Pot?

- Prepare. If you have a large prime rib, or one that will not fit in the instant pot, cut it to size for the instant pot and remove any bones.
- Season. Add a light seasoning of salt, pepper, and garlic powder to your prime rib. Then load it into the fridge and leave it overnight for the flavour to marinate the meat.
- Sautรฉ. I recommend that you sautรฉ an onion with extra virgin olive oil and deglaze with red wine. This creates a fantastic base for a beef stock and of course you can use the juices from this and the beef rib that have dripped down to make a gravy.
- Dump. Add in the trivet and dump your rib of beef over the trivet.
- Cook. Set the valve to sealing and pressure cook for 10 minutes, followed by a 30 minute natural pressure release.
- Sit. Removing the lid allow to rest for 5 minutes before slicing and enjoying.
How Long To Cook Rib Roast In Instant Pot?
The instant pot rib roast cooking time is JUST 10 minutes, but also note that we are doing a 30 minute natural pressure release.
This produces a medium rib roast via the instant pot and is the best cook time to do.
You see, the 30 minute natural pressure release, cooks the meat slow. You still have the heat from pressure cooking, but itโs a lower temperature, similar to how you cook meat slower in a slow cooker.

Instant Pot Rib Roast
Ingredients

- 2.4 kg Rib Roast
- 1 Medium Onion
- 240 ml Red Wine
- 240 ml Beef Stock
- 1 Tbsp Extra Virgin Olive Oil
- 2 Tsp Extra Virgin Olive Oil
- 1 Tsp Garlic Powder
- Salt & Pepper
Instructions
- Start by slicing your rib of beef into a max of 2 ribs so that it will fit in the instant pot and remove the bones. The bones can then be put to one side for beef soup, beef stew, or beef stock.
- Spray the rib roast with extra virgin olive oil (approximately 2tsp). Season the rib roast with salt, pepper, and garlic powder. Place in the fridge overnight to marinate.
- The next day peel and dice your onion and sautรฉ with the rest of the olive oil. When the onions start to change colour, turn off sautรฉ and deglaze with red wine. Add in beef stock if using thawed.
- Add the trivet to the instant pot and place the prime rib onto the trivet. If using frozen beef stock, find a suitable gap for it now.
- Place the lid on the instant pot, set the valve to sealing and cook for 10 minutes on pressure cook.
- Donโt release pressure and allow to sit for 30 minutes before turning the valve from sealing to venting.
- Remove the beef rib roast from the instant pot and allow to rest for 5 minutes before slicing. Slice your roast beef and serve.

Can you add vegetable in with the meat in the instant pot?

With the roast been cooked for so long the vegetables will become overcooked and mushy if you cook with the beef roast. Taking them out or adding them will effect the cooking of the joint of meat also so i would not recommend doing that ๐
I have a 10 quart instant pot, my roast is approximately 8lbs. How should I adjust the time?

Ours was 2.5 kg yours is 3.6 kg, i would take the time up to 1 hour so you are increasing the time by a third ๐ Ours was cooked to how we like it which is medium rare!
The past 2 months I have been learning to use an instant pot. Still learning! Thank you for the boneless rib roast recipe. I covered it with a mix of herbs, used the saute setting to brown it, placed it on the rack & set the slow cook setting on LOW for 40 mins. I allowed it to release the pressure on its own as my husband does not care for med rare beef. It came out perfect AND very delicious!

How long would you cook it if it was frozen?

I would not recommend cooking any roasting joint from frozen as they would not reach the required temperature inside the joint. But if you wanted to try may be doubling the cooking time but I wouldn’t recommend it ?

When you have a roast with bone in, would you cook it just the same?

I would personally take 10 minutes of off the cooking time because when you have a bone in there is less meat to cook and when the bone heats up it cooks the meat as well.

Do you have to be brown it in a pan or oven to get that color?
Hi Jennifer,
To get that colour on the beef you can use the saute setting on your instant pot before you cook it. Add some oil to your instant pot and place the beef topside down and leave for 5-10 minutes to brown on the top. Then just add the water and cook the beef for the specified amount of time.

Just wondering. Is it possible to make the Yorkshire pudding in the Instant Pot? Thank you for your helpful roast chart.
Hi Kate,
We have not tried to cook yorkshire pudding in the instant pot and we think it could turn out just like a steamed pudding instead of the crispy yorlshire puddings we love. They need dry heat to rise like a cooker or we love to use our air fryer for them as they are very quick to cook.

Hello. When cooking a smaller roast do you reduce the cooking time? (My roast is between 2 and 3 lbs.) Thank you.
Hi Patty,
Yes, We used a 3kg (6.6lbs i think) rib of beef and after the 40 minutes it was cooked to just how we liked it which is medium rare. So with yours been smaller i would always take the time down to 25 minutes depending on how you like your roast cooked. We always work with the rule that you can add more cooking time if it is not ready but you can never take it away ๐

You specify setting roast to manual for 40 min, but at what temp Fahrenheit? I’m looking for rare-med rare. Looks great!

With an instant pot pressure cooker there is no temperature it is just low pressure or high pressure in which case you need high pressure. The time is most important and so is the type of release at the end. We cooked our joint for exactly 40 minutes with a quick release and it turned out rare to medium which is perfect for us.
