Welcome to my healthy pineapple ice cream recipe for the ice cream maker. Updated for the summer of 2020 after originally sharing it with you back in the June of 2016 and a favourite in the Milner house.
If you have become part of the Paleo and clean eating revolution, the chances are you are missing out on all your favourite sweet treats.
This especially applies, if like me you hate almond flour and coconut flour.
I remember once being sent a huge amount of coconut flour from overseas, shortly after starting a paleo blog in early 2015.
I was extremely excited to try baking the paleo way.
When it arrived, I tried it in about 40 different recipes, following the coconut flour strict ratios and I hated it.
The baked goods were fine. There was nothing wrong with them, but I just could not stomach the HUGE coconut flavour in the cookies.
Probably the same reason why I hate Bounties and why Dominic always gets left them each Christmas in our Christmas chocolate boxes.
But me and coconut milk go together like salt goes with pepper. We are just meant to be together.
When I cook at home, most of the time there will be some coconut milk being used.
One type of food that coconut milk and the paleo diet are ideal for is ice cream.

Hawaiian Pineapple Ice Cream
When I churn pineapple ice cream, I am always thinking of the beautiful beaches of Hawaii and how amazing this pineapple ice cream is.
If you love the summer delights of Hawaii, then this pineapple ice cream is perfect for you.
Using fresh pineapple as well as extra pineapple juice it is delicious. You could also make it more Hawaiian by serving it in pineapple boats.
Coconut Milk & Pineapple Ice Cream
Make your choice. What do you like most, coconut milk or pineapple in your pineapple ice cream?
Because, if you do not add enough pineapple you end up with an ice cream that is heavy on coconut flavour and does not have enough of a sweet kick.
Add too much pineapple juice and you end up with a pineapple ice cream that is too runny or a pineapple ice cream that is too sweet and doesn’t have that amazing coconut flavour.
Pineapple Ice Cream With Coconut Milk
When you make pineapple ice cream with coconut milk, coconut milk becomes your binding agent.
The special ingredient that makes your ice cream thick and creamy.
What is the best part of pineapple ice cream with coconut milk is that it allows you to dump the ingredients into the ice cream maker and not have to separate eggs, or warm up milk and cream on the stovetop.
Though many of our readers tell me that the biggest two benefits are:
- Homemade pineapple ice cream without eggs – vegans and those with egg intolerances love the fact that there are no eggs needed to make our pineapple ice cream.
- Any type of pineapple – Best of all you can use any type of pineapple. Fresh pineapple, canned pineapple or frozen pineapple can be used to make pineapple ice cream.
How To Make Pineapple Ice Cream?
The process of making homemade pineapple ice cream using an ice cream maker is SIMPLE:
- Pour a can of coconut milk into the ice cream maker.
- Add cubed pineapple.
- Add pineapple juice.
- Add sweetener
- Churn for 40 minutes.
- Add more sweetener if required.
- Freeze for later.
Yes it is really that simple. You can also use frozen pineapple, meaning that you don’t have to worry about slicing a pineapple.
We also made our pineapple ice cream straight after making the banana ice cream.
Jorge got to have a scoop of each and with plenty leftover we put half and half in our ice cream tub as you can see below:
Pineapple Ice Cream With Pineapple Juice
Pineapple juice is an important ingredient in pineapple ice cream. When we tested it without, we found that the ice cream went too thick, so was very difficult to serve once frozen.
But the biggest issue is that pineapple juice adds great flavour to the pineapple ice cream and without it, you have a dull flavour.
What Goes With Pineapple Ice Cream?
A cone of course. Well that is what the kids said when I said I had done them some ice cream.
They ran to the cupboard so fast, even when I tried to explain to them that it was a healthy pineapple ice cream and then posed for pictures.
If you do follow paleo, I recommend serving your pineapple ice cream either in pineapple boats or with some extra maple syrup.
I also like to serve my ice cream in a big mug, then I feel like I am having Ben & Jerry’s at a fraction of the price.
Pineapple Vanilla Ice Cream
This pineapple ice cream is like a pineapple vanilla ice cream. You are using pineapple and coconut milk as the base, then you can add in extra ingredients if you would like.
I love to add cocoa powder for a delicious chocolate pineapple ice cream. Or you can mix and match fruit and go beyond just adding in pineapple.
Mango is an alternative fruit that I find works very well in the ice cream maker with coconut milk.

Pineapple Ice Cream In Ice Cream Maker
- Load a can of coconut milk into your ice cream maker.
- Add quartered pineapple chunks to it.
- Add pineapple juice.
- Load it with half your maple syrup or other sweetener.
- Let it churn for 35 minutes.
- Add in the rest of your maple syrup and let it churn for 5 more minutes.
- Freeze for later.
- Then serve with extra maple syrup.
