Chicken is so cheap here in Portugal and we often pay as little as 1,40€ for a whole chicken.
We will buy 16 chickens from our local Makro and then put them in the freezer for whenever we want some.
Then for making this recipe we used 2 large chicken breasts from a whole chicken and along with the bread it was a big portion size for the four of us for lunch.
If you have not tried chopping up a whole chicken yet then you MUST and here is a quick guide to doing so.
Also because chicken is so versatile you could get some chicken out of the freezer the night before for cooking the next day, have the Air fryer in mind, then the next day make a delicious random meal.
As I write this I have my Chicken Spiedie next to me. I can smell the warm bread, the garlic and lemon from the chicken along with a big scent of oregano.
It is served with my favourite homemade mayonnaise and it feels truly amazing that my Airfryer is responsible for such a great lunch.
As I bite into it I can’t believe how good something so simple can taste. The chicken is so succulent and the bread is so soft.
And I have the best ever husband in the world for making it for me!
I asked him how long it took him as something so good must take hours right? And I was happily mistaken when he said 5 minutes for the prep.
Plus if course making the marinade which I did myself. But it took me about 3 minutes for my part and I love the fact as a family that we can have some teamwork to get family food on the table.
If you’re one of those families that never feels like that they have time to cook then this recipe is for you. Its fast, its simple and it will deliver the lunch of your dreams.
Plus because of the carbs it is great this summer for filling up your kids up. I saw a post on Facebook this morning with a mum complaining about how expensive it is to feed her kids through the summer.
Well I realised I spent a lot less than her on food and we have a teenage son, which trust me….they eat a LOT.

What Is A Chicken Spiedie?
A Chicken Spiedie is an Italian sandwich most popular in New York. The chicken is chopped into chunky cubes and are marinated in a specific Italian marinade.
Then it is cooked with skewers and served inside fresh homemade bread.
Other variations include pork, lamb, veal, venison or beef instead of the chicken.
The meat of choice is always chicken because of how cheap it is to buy. It is also commonly served in a warm Italian bread roll.
The same marinated chicken is also well known for being served in stews, casseroles, stir fries and summer salads.
There is also a festival in New York every summer where a cook off takes place for the best Spiedie recipe. This has happened every August since 1983.
Airfryer Chicken Spiedie Recipe
Ingredients
- Airfryer
- Skewers
- Homemade Bread Rolls
- 2 Chicken Breasts
- 1 Large Lemon
- 4 Garlic Cloves
- 1 Tbsp Olive Oil
- 2 Tbsp Oregano
- 1 Tbsp Basil
- Fresh Mint
- Salt & Pepper
Instructions
- Start by marinating your chicken. Dice your chicken into big sized chunks and place them into a mixing bowl. Squeeze the juice from the lemon into the bowl. Peel and thinly slice the garlic and add it too. Add the olive oil and the seasoning. Mix well with your hands until the chicken is well coated. Fill the skewers with the chicken and then place in the fridge overnight.
- Next make the bread. Use our easy pull apart bread recipe and instead form that into cute hotdog shapes. When you have made it place the four bread rolls into the Airfryer and cook for 15 minutes at 185c/365f.
- When they are done put them to one side and cook the chicken. Cook the chicken for 15 minutes on 185c/365f too.
- Then fill the bread rolls with the skewed chicken and add some homemade mayonnaise to it.
- Serve.
