Soup Maker Vegetable Soup
If I was to have a go to soup that I have the most, one that I make without thinking that either makes a quick lunch or a quick warming supper, the award must go to creamy soup maker vegetable soup.
It is so EASY to make, and it tastes DELICIOUS.
But that it not WHY I make it. I make it as a way to clean out the bottom of my fridge and pantry and be proud to say that I hardly waste any food at all.
Fifteen years ago, I used to make bad choices and waste way too much food. I would buy food with the plan to cook with it, forget about it and then throw it out when it went mouldy.
But after suffering poverty myself a few years ago, I learnt how to look after food and make sure I only buy what I need and that nothing is ever wasted.
I have lots of favourite recipes in my kitchen gadgets that are built around fridge raids. Recipes where I use what is leftover to make a substantial meal and then proudly tell the family what I made the meal from.
I will use the liquid from the bottom of the instant pot with some extra vegetables and a small amount of pasta and transform it into a pasta bake or freeze what I have left so that I have a good supply of freezer meals.
But one of my favourite ways of leftovers, is to grab the vegetables from the bottom of the fridge and turn it into a creamy soup.
You can do the same.
Grab those root vegetables and some potatoes. Load the vegetables into the soup maker and come back less than 30 minutes later to perfect vegetable soup.
Soup Maker Thick & Smooth & Creamy Vegetable Soup
I love to have my soups thick, smooth and creamy and this vegetable soup in the soup maker is no different.
It is so EASY to make your soup thick and creamy. You focus on root vegetables and potatoes that create a much thicker soup and avoid watery vegetables.
Stay away from pumpkin and courgette and instead focus on potatoes, swede, carrots and parsnips.
If you have small children, this soup is also fantastic for feeding them too. In fact, I originally got my first soup maker to feed my daughter Sofia who is now five.
Her first try of blended broccoli, her love for blended apple and her addiction to carrot soup, all started off in the soup maker.
Different Sized Soup Makers
The soup maker vegetable soup is made with our Morphy Richards Soup Maker. It is rather small compared to some soup makers.
Or even better, cook our soup maker vegetable soup in the instant pot and make a HUGE batch.
For those that do have small soup makers, I follow a quick rule when loading up the soup maker.
Fit in as much as you can and dice it small. Then cook as much as you can. Any liquid added after cooking can go over your max level.
Why Make Vegetable Soup In The Soup Maker?
Well because it is the perfect QUICK SOUP made with fridge leftovers. It is a lazy way to cook soup and it is fantastic how easy it all comes together.
Dice and cube your vegetables and load it all in and then just add your preferred stock. There is nothing more to it than that.
Soup Maker Chunky Soup vs Smooth Soup
I know a lot of people don’t like smooth soup in the soup maker and would rather have a soup maker chunky vegetable soup.
Well let me tell you that it is super easy to convert our smooth soup into a soup maker chunky vegetable soup.
Only blend 20% of your soup. This will create a creamy broth for your soup. Give it a stir and then you have a creamy chunky soup.
What Ingredients Go Into Soup Maker Vegetable Soup?
There are 4 main ingredients that go into soup maker vegetable soup:
- Mixed Vegetables
- Stock & Seasoning
As I mentioned earlier, the ingredients above are based around my own raid of my fridge and your ingredients may vary.
All root vegetables work well as well as other vegetables but avoid courgette as it holds a lot of water and will make your soup overly runny.
I also recommend having some potato in it and is will help with making it a delicious creamy soup.
Another frugal favourite of mine is to keep the skin on the potatoes. They are full of goodness; it saves you peeling them, and they work well in a vegetable soup.
