Scottish Beef Stew With Dumplings. How to cook a delicious Scottish beef stew with dumplings in your instant pot pressure cooker.

This is a classic Scottish stew of potatoes, meat and onions. Along with scotch broth, extra vegetables and homemade dumplings. Perfect for warming up you and your family during the colder months.

This Scottish Beef Stew With Dumplings, is part of our Scottish series to celebrate Burns Night. So far, we have shown you how to make cullen skink in the instant pot, an air fryer mars bar and instant pot scotch broth.

We have also given you lots of inspiration when it comes to making air fryer shortbread.

This recipe today for our Scottish beef stew came about because we had leftover vegetables in and plenty of scotch broth and it was the perfect opportunity for a clear out.

I love Scottish beef stew with dumplings, and you know what? It is just PERFECT for cooking in the instant pot and as a way to use up what spare potatoes and vegetables that you have in your pantry.

I always think of Scottish beef stew as my clear out recipe. I always have some spare scotch broth in the pantry and then I can see what other vegetables I have that need using up and dump it all in the instant pot.

Though, the first time I ever made beef stew and dumplings for my family, was in my old slow cooker.

I still have the slow cooker now and it is perfect for warming up side dishes, but it is small and old, so its not very good for a beef stew anymore.

It would only hold enough for two people and take 12 hours.

So, when I got my first instant pot in late 2016 it was one of the first recipes I cooked. In fact, you can have a read of our original instant pot beef stew and dumplings recipe here.

Why Cook Scottish Beef Stew In The Instant Pot?

I love to cook beef stew and dumplings in the instant pot, that is because you can give the ingredients a quick sauté, load in the rest of the ingredients and let the instant pot do its magic.

It tastes just as good as slow cooker beef stew but cooked much quicker.

Depending on how many ingredients you have loaded into your instant pot and how full it is, you can cook a beef stew with dumplings in the instant pot in an hour or less.

Compared to 8 hours in the slow cooker, this makes a fantastic family dinner.

It our Scottish beef stew today, we have included white potatoes, beef stewing steak and white onions. Though of course we have bulked it up with other delicious ingredients.

Dominic loves his Scottish thick stew. He doesn’t want a thin sauce like you see in French stews and instead wants something hearty.

The great thing about a Scottish beef stew is that they use scotch broth among the ingredients.

This works as a natural thickener to thicken up the stew. This means you don’t need gravy granules or flour to make your Scottish stew thick.

Perfect for if you like wholesome foods and don’t like processed unhealthy foods.

What Ingredients & Gadgets Go Into Instant Pot Scottish Beef Stew?

There are 8 main ingredients that go into instant pot Scottish beef stew:

The vegetables that I prefer to use are neeps (Scottish for rutabaga), carrots and celery. But you can mix and match based on what you have in your fridge and pantry.

I also include extra virgin olive oil on my ingredients list. This is because I start by browning the beef stewing steak in the instant pot with the olive oil and some seasoning. You are then using the red wine to deglaze your pot.

You can use white potatoes, sweet potatoes or sub them for parsnips or neeps.   

The Instant Pot we recommend is the 8 litre or you might know it as the 8 quart. It is nice and big and can hold a big stew.

You can also use a smaller one, but I do recommend sticking to the instant pot duo as it produces fantastic results and you can get it in many sizes.

How Do You Make Scottish Stew?

Making Scottish beef stew with dumplings is EASY and it is a case of a quick sauté of ingredients and pouring in other ingredients and letting the instant pot work its magic.

I love it because you are not a slave to the pan, there is not much washing up and you are not waiting all day for your slow cooker.

  1. Clean, peel and dice your potatoes and vegetables.
  2. Load your beef stewing meat into the instant pot, along with onions, salt and pepper and olive oil.
  3. Sauté until your beef has browned.
  4. Deglaze your pot with red wine, add in vegetables, stock, seasoning and stir.
  5. Add in tinned tomatoes and scotch broth.
  6. Cook on manual pressure and make your air fryer dumplings while your instant pot cooks the beef stew.
  7. Serve your Scottish beef stew with your air fryer dumplings.

For the dumplings to go with my instant pot Scottish beef stew, I make them in a bowl and cook them in the air fryer.

If you are in the UK you will likely call them dumplings, compared to biscuits in the US. Either way, they are amazing on top of a beef stew.

Instructions

  • Clean, peel and dice your vegetables.
  • In the instant pot, add your diced beef, salt, pepper, olive oil and onion.
  • Sauté until your beef is browned.
  • Add in the red wine to deglaze your instant pot.
  • Add in the rest of the ingredients and stir.
  • Place the lid on the instant pot, set the valve to sealing and cook for 75 minutes on pressure cook/manual.
  • Manually release pressure, stir and serve with your air fryer dumplings.

Notes

I love the Kettle & Fire Stock. It makes an excellent back up for your beef stew and dumplings if you don’t have any beef broth or beef stock already.
You can mix and match your vegetables and potatoes, depending on the ingredients you have in your pantry. You can also make it potato free, by adding in more rutabaga.
The time for your instant pot beef stew, depends on how full the instant pot is. Ours had a lot in it so we cooked it for 75 minutes rather than 60.

Scottish Beef Stew Leftovers

I am a HUGE fan of leftovers and it is probably the reason why I love my instant pot the most. You can transfer the instant pot leftover stew to the fridge in the inner pot. Then the next day, heat it up and add in some extras.

When we had leftover beef stew the next day we added in:

You need the water because the scotch broth makes it very thick when left overnight. Then sauté it to heat it up and you have enough beef stew to feed four people AGAIN.

Just think this is the perfect clear out from leftover ingredients that will feed you for 2 days!
