Butternut Squash Curry
If there is a creamy, healthy curry that you must try it is a butternut squash curry.
It is a natural creamer to the curry, so you don’t need to worry about adding in extra cream and then you have the red lentils which perfectly thicken your squash curry.
Plus, if you have a favourite curry seasoning, you can mix and match with what you have in and what you love.
I will also make this slow cooker curry and then freeze the leftovers into pyrex dishes ready for reheating later. Which works very well when the rest of the family HATES curry!

Why Red Lentils In A Butternut Curry?
Red lentils in a butternut squash curry recipe are perfect, because they are small it feels like they dissolve into the curry. They don’t have a bite to them, so it doesn’t feel like they are overdone and they are brilliant curry thickener.
Plus, you can blend them if you have kids or fussy eaters that complain that they don’t like lentils.

Yes, this butternut squash curry is perfect for Slimming World. The only ingredient with any syns in is the coconut water, but its very low syn and easy to adapt.

Butternut Squash Recipe Ingredients
Squash – We one medium butternut squash in this recipe, but you can easily use more, or you can mix and match with pumpkin. Though don’t use just pumpkin or it will end up too watery.
Lentils – We love to use red lentils in our butternut curry recipe. You can buy them dried and then use them whenever you want, and are a great pantry staple to have in.
Beer – For the old fashioned slow cooker casserole we recommend adding beer for flavour. We used 2 cans of Guinness, though you can add in some of your own favourites. If you don’t like beer, you can swap the same quantities for red wine.
Tomatoes – Cans of tinned tomatoes are fantastic for making a curry with and give a great balance of flavour. You can use finely chopped or just regular ones.
Stock – I also recommend some veggie stock. We make ours in the instant pot (instant pot veggie stock recipe), then freeze it and its perfect for using with the slow cooker.
Seasonings – Of course, with this being a curried butternut squash recipe we have a good selection of herbs and spices. We use garlic, ginger, curry powder, garam masala, turmeric, and coriander.
Can You Recommend A Slow Cooker?
I often get asked which slow cooker I recommend and which one I use. In 95% of our slow cooker recipes, we use the Ninja Foodi and its slow cooker setting. How To Cook Butternut Squash Curry?
- Dump. Start by dumping the main ingredients into the slow cooker, stirring and then placing the lid on the slow cooker. Cook for 4 hours on high, or 7 hours on low.
- Extras. Next give the slow cooker curry a stir, it will be thick now and you can eat as is, and it will be like a dal. I prefer to add an extra can of tinned tomatoes and then taste it and add some extra seasoning, if I feel it needs it.

Slow Cooker Butternut Squash Curry With Coconut Milk
Whilst most would use full cream coconut milk, I find that because of what a good job that red lentils do of thickening the curry, you can use a light coconut water instead for a delicious flavour.

Slow Cooker Butternut Squash Lentil Curry
Ingredients
- 1 medium butternut squash, peeled and cubed
- 480 ml red lentils
- 1 Medium Onion, peeled and diced
- 1 Tbsp Garlic Puree
- 1 Tbsp Ginger Puree
- 800 g Tinned Tomatoes
- 400 ml Coconut Water
- 2 Tbsp Mild Curry Powder
- 4 Tsp Cumin
- 4 Tsp Garam Masala
- 4 Tsp Dried Coriander/Cilantro Leaf
- 2 Tsp Turmeric
- Salt & Pepper
- Optional – Extra 400g can of tinned tomatoes if too thick

Instructions
- Dump everything into the slow cooker, stir and then place the lid on the slow cooker. Slow cook your butternut and lentil curry for 4 hours on high or 7 hours on low.
- Stir, and if too thick add in extra tinned tomatoes. You can also do a taste test and if you feel it needs it add in extra curry powder.
- Serve your recipe for butternut squash curry with instant pot brown rice.
- If you have leftovers you can portion up and then freeze when completely cool for the fridge or freezer.
