Leftover Pork Curry
You will never find a pork curry on my menu said Rashid as we sat down for dinner at the local Indian restaurant when I was about 10 years old.
We were having a conversation, that was mainly led by my dad as he needed some curry making for a charity event and was getting a quote.
Rashid said, anything but pork as I am a Muslim and don’t eat pork. We then went on to make us some of the most delicious ever lamb and beef curry that went down well with everyone that ate it.
He was the first Muslim I ever met and so kind and friendly and I went to this Indian restaurant throughout childhood and remember having my hen party there the weekend before I got married.
It stuck with me though, because I love a pork curry just as much as I like a beef curry, lamb curry, or turkey curry. And whilst I wont find a pork curry on an Indian menu, a leftover pork curry is my favourite way to use up roast pork leftovers.
In today’s pork curry recipe, I am using the ingredients I usually include in some of my other curry recipes such as our slow cooker chickpea curry or our slow cooker curried sausages but swapping it out for pork and making the best leftover curry ever.

What To Make With Leftover Roast Pork?
The best things to make with leftover roast pork is in the slow cooker. That is because the slow cooker will just gently heat up the pork and make it wonderfully tender, rather than cooking it again.
You could use the slow cooker for a leftover pork stroganoff, leftover pork curry (like we are doing today), leftover pork soup, leftover pork cottage pie and so much more.
Which Part Of Pork Is Good For Curry?
The best part of the pork to make a delicious pork curry recipe with is the pork loin. You can cut it up well from the leftovers of your pork roast dinner and it will keep well in the fridge until you come to make your curry.

How Do You Make Leftover Pork More Tender?
To make leftover pork more tender, dump the leftover pork into the slow cooker with some liquid and slow cook.
The slow cooker is fantastic for making pork more tender.
Then if your pork was not very tender, slow cook for 2 hours, turn into pulled pork and instead make a pulled pork curry.

Curry Pork Slow Cooker Ingredients
Pork – We chopped up some leftover pork loin for this curry. Though you can use any leftover boneless pork.
Puree – To keep the ingredients simple we used lemongrass puree, garlic puree, ginger puree, and tomato puree.
Veggies – Just like making a pork casserole we loaded it up with veggies including onion, carrots, sweet potatoes and peppers.
Tinned Tomatoes. I also recommend adding in some tinned tomatoes and these can be the base of your quick pork curry. Plus, you will be amazed how good a curry is in the slow cooker with them.
Chickpeas – What I love about chickpeas in a curry is that they fill you up for longer and soak up some of the sauce.
Seasoning – Then for seasonings we have just kept it simple with salt, pepper, cumin, turmeric, coriander, paprika, garam masala, and mild curry powder.
Yoghurt – I also recommend just before serving, to stir in some Greek yoghurt. It gives it that amazing creamy curry texture. Though if you want to keep the calories low you can use fat free yoghurt for this.

How To Make Pork Curry?
- Peel. First peel and dice your onion, sweet potatoes and carrots and load into the slow cooker.
- Dump. Next dump into the slow cooker your seasonings, purees, and tinned tomatoes. Then mix well.
- Cook. Place the lid on the slow cooker and cook for 3 hours on high or low for 6 hours.
- Stir. When the slow cooker is done stir in chickpeas, pork loin chunks, diced peppers and cook for an extra hour.
- Serving. Then when the slow cooker is done stir in Greek yoghurt and serve with warm naan breads.

Slow Cooker Leftover Pork Curry
Ingredients
- 500 g Leftover Pork Loin, diced
- 1 Medium Brown Onion
- 2 Medium Carrots
- ½ Large Sweet Potato
- 1 Red Pepper, diced
- 2 Cans Tinned Tomatoes
- 1 Can Drained Chickpeas
- 2 Tsp Garlic Puree
- 2 Tsp Ginger Puree
- 2 Tsp Lemongrass Puree
- 1 Tbsp Tomato Puree
- 1 Tbsp Garam Masala
- 1 Tbsp Cumin
- 2 Tsp Smoked Paprika
- 2 Tsp Coriander
- 2 Tsp Turmeric
- 2 Tbsp Medium Curry Powder
- Salt & Pepper
- 240 ml Greek Yoghurt

Instructions
- Peel and dice your veggies and load into the slow cooker along with your seasonings (everything but the curry powder), purees, and tinned tomatoes. Stir.
- Slow cook for 3 hours on high or 6 hours on low.
- Add in the chickpeas, curry powder, diced pepper, diced pork loin, and stir. Slow cook for another hour.
- Stir in Greek yoghurt and serve with warm naan.
So good! I added a bit of curry paste too as it needed a bit more flavour. Served with cous cous for a change from rice.
Great way to use your leftovers. We all loved this recipe but i put more curry init as that is how i like it.
