In the spices department I have a very difficult husband and when you’re a lady that loves spices then you have a problem.
You’ll notice that with our healthy family recipes there is not one of them that focus around sage and this is because he is allergic to it. But with spices he tends to be okay with them but he hates over spicy food. Therefore I haven’t enjoyed an Indian curry for years and often spicy food is something I enjoy at restaurants without him!
But over the years I have slowly introduced him to new flavours and he does like a few nicely spiced things. I made him Thai chicken curry (though a very mild version) and he likes a lot more Chinese & Oriental things compared to what he used to. He is still not a Mexican food fan but with so many different cuisines available there is always a new one to offer him and to see what I can get him to eat!!!!
Yesterday for lunch we had Moroccan Cauliflower Rice (recipe to come soon I promise!) and it was absolutely delicious and I totally had him sold on it. So today I thought of seeing what I could do with soup. I feel sometimes that when I make soup I don’t make enough soup with carrots as the main focus. I don’t know why not as they are delicious and this recipe below is what was created.

- 12 Large Carrots
- 1 Large Onion
- 1 Red Pepper
- 2Tsp Garlic Puree
- 1Tbsp Honey
- 1 Can Coconut Milk
- 100ml Water
- 1Tsp Cinnamon
- 1Tsp Turmeric
- 1cm Ginger Cube (peeled and grated)
- 2Tbsp Coriander
- Salt & Pepper
- Peel & dice the carrots and onion. Also dice the red pepper.
- Place them in your soup maker.
- Add your ginger, garlic, other seasoning.
- Add the coconut milk and water and place on the cook and blend feature for 25 minutes.
