I have always had a love affair with asparagus, and it is one of my favourite vegetables. But because I have not got around to growing my own asparagus, I always think of it as the expensive vegetable.
It is up there with butternut squash, pumpkin, parsnips and sprouts, that I only buy on special occasions.
You might be shouting at me, that these vegetables don’t cost a lot where you live, but here in Portugal they do.
That is because our winter is short and instead, we have an unlimited cheap supply of fresh tomatoes, courgette (zucchini) and oranges.
But every now and then, Lidl will have a fantastic deal on asparagus, and I will bulk buy it. I get so excited at the thought of delicious asparagus that I will often be thinking up several meals from it.
This time when the deal came in at Lidl, I thought to myself that I have yet to make a soup maker asparagus soup and today is going to be the day.

- Chop your asparagus into thirds and place into your soup maker.
- Peel and slice your onion, celery, carrot and garlic.
- Load them into the soup maker along with 400ml of veggie stock and your seasonings.
- Place the lid on your soup maker and cook for 26 minutes on the chunky setting.
- When it beeps, reserve a couple of asparagus spears for on top and blend the rest.
- Serve warm with your favourite bread.
