Welcome to my latest recipe in the Airfryer and here is the chance for a touch of India with my Air Fryer Turkey Curry Samosas. Easier than you would think to make and perfect for an Indian curry night in.

As I look down at the turkey wings that have been shredded I am rather shocked by how much meat is on the wing of the great bird. I mean really, there is loads and it is nothing like the tiny chicken wings that I am usually used to.

One of the meals by choice here in Portugal is Piri Piri Chicken you have loads of meaty chicken pieces in spicy Piri Piri seasoning. It will be served with salad and fries and you can guarantee that the tiny chicken wings will be left over with nobody wanting to eat them.

Yet here we are staring down at our turkey wings meat (after shredding it) with deep amazement with how far it goes.

And that is after we have eaten the skin after all the best bit has to be gone straight away!

Today’s use of the leftover turkey is for turkey curry samosas made out of the turkey wings. This is a quick and simple recipe and so easy in the Airfryer.

But first I bet you’re wondering why on earth we have turkey curry in our samosas? Well we love something different and it was sat there watching Bridget Jones’s Diary that got me in the mood for them.

In the movie they are having a turkey curry buffet with the leftovers from Christmas and it got me thinking of what I would do if I had enough meat for a small amount of turkey curry and there of course was turkey samosa’s or more specific “turkey curry samosas”.

They’re really quick to make in the Airfryer and I have fallen in love with them. Now I know what I am going to do with leftover turkey in the future!

Ingredients
Instructions
  1. In a mixing bowl add all your seasonings and turkey and mix well.
  2. Add a little coconut milk to make them soft and creamy so that they don’t dry out.
  3. Place the contents onto the pastry sheets and fold over so that they make the shape of samosas.
  4. Brush with beaten egg so that they will get their lovely golden glow.
  5. Cook in the Airfryer at 160c for 3 minutes.
  6. Serve.
Notes
We get our pastry sheets from the Chinese supermarket. They are very thin and great for making spring rolls and samosas in them. They also sell them in big packs and you will find that they will last a long time.
