If there is a food from childhood that still lives on, then it is fruit scones. Whenever I think of afternoon tea and a quick snack in an English café there is always some fruit scones.

This summer on a family road trip, we must have enjoyed at least 6 rounds of afternoon tea and the fruit scones never disappointed.

Jorge (who is six) absolutely loves sultanas and loves scones with some butter and some cheese.

The cheese is always wensleydale for that typical crumbly cheese with fruit scones.

We were at a tearoom in the Yorkshire Dales just before going to the Wensleydale cheese factory and as we sat down with our fruit scones, I said to Jorge, we better update our air fryer fruit scones recipe ASAP and he couldn’t wait to come home from holiday and help his mum make fruit scones.

Why Cook Fruit Scones In An Air Fryer?

Fruit scones in the air fryer are fantastic. Firstly, they are a money saver. There is a big mark up on how much it costs to make fruit scones to what you are charged in bakeries, then of course the air fryer doesn’t need preheating and will cook your fruit scones much quicker compared to the oven.

Then secondly, its simple. You can follow our easy fruit scones recipe and with the perfect time and temp its easy to load them into the air fryer and for them always to be perfect and not under or over.

The air fryer is also amazing for that golden glow on top of the fruit scones that you normally get from professional bakery ovens.

Can You Use Margarine Instead Of Butter For Scones?

Yes, you can use butter or margarine in scones. Scones will taste better if you use a quality unsalted butter (we used M&S) but you can still make delicious scones with margarine instead and it will be much cheaper.

I was at the Beamish Museum in the summer and was in the 1900’s grocery shopping and even back then margarine was half the price of the butter.

What Is The Secret To Making Good Scones?

The secret to great scones is patience and the ingredients used. The better the ingredients, the better the scones. For example, avoid cheap supermarket flour as it doesn’t work as good in baking.

I always invest in Bero flour as it just does an amazing job especially for the best fruit scones recipe.

Then when it comes to patience, making sure your fat is thoroughly rubbed into the flour, otherwise you will have fat lumps and it will create uneven scones.

Should You Put Egg In Scones?

Yes, you should put eggs in scones. The egg in the scones helps bind the scones together and give it that lovely glow that you associate with delicious fruit scones.

I also recommend extra egg for the egg wash for that golden colour as they come out of the air fryer, the same look we have in our other air fryer scones recipe that is made with cheese.

Can You Heat Up Scones In An Air Fryer?

Yes, you can also use the air fryer to heat up scones. I previously talked about a Too Good To Go Bag from Greggs and with a lot of bakeries now offering these bags it’s a great way to take some scones home and reheat them in the air fryer.

Fruit Scone Recipe Ingredients

Flour – I recommend using a strong quality flour like Bero and you will need self raising flour for the best fruit scones.

Butter – We used M&S unsalted butter, but you can swap this for margarine if you prefer as it can make the scones much cheaper to make.

Sugar – Then for sugar we used caster sugar. You don’t need a lot in fruit scones compared to other sweet baking recipes.  

Egg – After the flour, sugar, and butter have been added to your scone mix you will need some egg. One medium will do plus extra for brushing the scones before they air fry.

Currants – Then you can use a mix of dates, raisins etc or whatever you prefer. We used some raisins that were spare in our cupboard.  

Milk – You don’t need a lot of milk just enough to bind together your scone mix and to create a dough that you can roll out.

Then for the kitchen gadgets that we have used in this fruit scone recipe it has just been our Philips air fryer. We have this one and its wonderful for many types of air fryer recipes.

How To Make Fruit Scones?

  • Rub. Start by loading into a bowl your flour and sugar and then mixing the fat into the flour and sugar, until it resembles breadcrumbs.
  • Add. Next add in raisins and egg and mix well, then add enough milk to bind into a dough.  
  • Knead. Use your hands to knead the dough until you have a soft dough ball. Then roll out on a clean, floured worktop.
  • Cut. Use your cookie cutters to make equal scone shapes and then load into the air fryer, as many as will fit.
  • Cook. Air fry your sultana scones for 8 minutes at 180c/360f.
  • Serve. When the air fryer beeps serve your scones with butter, wensleydale or similar crumbly British cheese and enjoy.

How Long To Cook Fruit Scones In Air Fryer?

The air fryer fruit scones cook time is JUST 8 minutes. Though note, we have done thinner fruit scones because we wanted a smaller portion. If you wanted to go thicker then increase the cook time to 10 minutes.

You can tell when your scones are cooked because they are hallow underneath and will have a grilled underneath look because of the air fryer.

  • Load into a bowl the flour and the sugar and then add in the butter chopped into chunks.

  • Roll out your dough on a floured worktop with a floured rolling pin. Go thin like us for smaller fruit scones or double the thickness for traditional scones.

  • Then place into the air fryer as many as will fit, then brush egg wash on the tops and then air fry for 8 minutes at 180c/360f doing it in batches if needed.

Notes

Milk. I recommend having 60ml/4tbsp of milk for helping bind together your scones dough. Then adding a little at a time. You can always add extra but you can’t take it away.
Currants. I used just 50g of currants, you can of course double this if you like a lot of currants in your dough.
Height. Note our fruit scones are half the height of those purchased in shops. This is because we don’t have a huge appetite and find this is enough for us. If you want them more traditional then roll the dough to double the thickness of ours then you will have 6 and you will then have much higher ones.

    I love fruit filled scones, not the jam and cream ones they are too sweet for me. Mine turned out really well for a first time. I am sure you will need to practice to get them how you really are used to them from the oven but i am pleasantly surprised, many thanks.

  2. I have tried air fryer scones turned out ok but I found the top of scones were a little bit too crunchy
    I made Madeira cake only small one but it turned out lovely
