Delicious air fryer Pumpkin Muffins. Loaded with leftover cooked pumpkin, oats, bananas, eggs, and yoghurt, it’s the ultimate feel good fall muffin.

This easy pumpkin muffin recipe is ideal for making use of leftover pumpkin, they freeze well and are ideal for a school or work snack.

This pumpkin muffin recipe was originally shared with you back in 2016. We have since updated air fryers, gone pumpkin picking and made this recipe even better!

Pumpkin Muffins

I am a little muffin obsessed and obsessed with combining the ingredients that make up these delicious homemade pumpkin muffins.

Its similar ingredients that we use in our air fryer baked oatmeal, and they come together so well and create a delicious muffin whilst remaining gluten free thanks to using Bobs Red Mill Gluten Free Oats rather than flour.

We have also done similar with our air fryer blueberry muffins and more recently with our Ninja Foodi Strawberry Muffins.

And whilst you may be wondering why such a similar recipe with these pumpkin muffins?

Well, put simply….. because it works. Because it creates the best muffins you have ever tried and how these muffins can be stored in a Ziploc bag, taken to work or school and make one of the best ever uses of leftover pumpkin that you will ever find.

Or even better, you can freeze these pumpkin muffins and then enjoy them for up to six months.

What Else Can You Do With A Pumpkin?

So, my first thought every year when I buy pumpkins is plenty of air fryer pumpkin pie. But of course, we can only eat so much pie so what else can we do with a pumpkin?

You can cube your pumpkin, freeze it, or cook it over the next few days. Then try out our air fryer cubed pumpkin which is like a fall alternative to roasted potatoes.

Then of course there is the soup. Go with whichever kitchen gadget you have and either make our soup maker pumpkin soup, instant pot pumpkin soup, or Thermomix pumpkin soup.

Or for something totally different make our slimming world cheese sauce which is made with hidden veggies, and you guessed it, the hidden veggie is cubed pumpkin.

Is Pumpkin Puree The Same As Canned Pumpkin?

Yes, it, kind of is. When you cook with canned pumpkin you can often find it rather watery, so you tend to need to drain it more than you do with your own homemade pumpkin puree.

Even though canned pumpkin is okay, I much prefer to make my own instant pot pumpkin puree, drain it and then use that. Then when I am bored of pumpkin I can freeze the rest.

But also note, in the comparison between puree and canned, that in the US canned pumpkin is often made of butternut squash.

So those pumpkin pies you are making are often butternut!

Pumpkin Muffins With Fresh Pumpkin

I made these pumpkin muffins during pumpkin season last year with some fresh pumpkin that I had picked with the kids.

I had blanched the pumpkin first in the instant pot and it looked like this:

We put a big portion of it in the freezer for later and what was left was going to become pumpkin muffins.

Pumpkin – You will want a batch of cubed pumpkin that is already cooked. We had made some in the instant pot and it was ready to be loaded into the blender.

Oats – I recommend Bobs Red Mill products as they are fantastic. You can either use his oats or his oat flour, either will work well.

Bananas – The bananas give that creamy texture to pumpkin muffins and thanks to the combo of bananas and gluten free oats you don’t need any butter or flour to make these muffins with.

Eggs – Then to bind together your easy pumpkin muffins, you will want to crack a couple of eggs into your blender.

Yoghurt – If you want creamy light pumpkin muffins that don’t taste dense then you will want to add in some yoghurt. Any yoghurt will do though I like either natural or Greek.

Seasonings – Then for seasoning, its all about a delicious fall flavour. I am using mixed spice, cinnamon, nutmeg, and ginger. If you wanted to use less seasoning, then you can swap for pumpkin spice and some cinnamon.

Then for the kitchen gadgets that we have used in this easy pumpkin muffins recipe it has just been our Philips air fryer. We have this one and its wonderful for many types of air fryer recipes.

Plus, we also used our favourite soup maker, which is our Ninja hot and cold blender because it has a fantastic blender for mixing the ingredients before air frying.

How To Make Pumpkin Muffins?

  • Dice. Start by peeling and dicing your pumpkin and cooking it first. If you like your pumpkin roasted, then do follow our air fryer pumpkin recipe.
  • Blender. Then load everything into the blender and blend until you have a smooth muffin batter.
  • Load. Then load the pumpkin muffins batter into air fryer silicone muffin cups.
  • Seeds. Place a few pumpkin seeds over the muffin mixture. This adds fantastic texture to the pumpkin muffins.
  • Cook. Air fry your homemade pumpkin muffins for 8 minutes at 180c/360f before serving.

And I am sure you can see now how easy it is to cook healthy pumpkin muffins in the air fryer and how you can be doing the same.

How Long To Cook Pumpkin Muffins?

This healthy pumpkin muffin recipe takes JUST 8 minutes.

Then I always give them a couple of minutes to cool down before removing them from the silicone as they can be very hot on touch.

We also made our homemade pumpkin muffins in batches as you cant fit that many in the air fryer at once and this recipe made 14 muffins.

Can You Freeze Pumpkin Muffins?

Yes, you sure can and I recommend doing so. What I do is air fry pumpkin muffins and then once cold load into freezer bags such as Ziploc.

Notes

Freeze. You can also follow this air fryer pumpkin muffin recipe and freeze the muffins once cool. Perfect for enjoying pumpkin out of season.
Seasoning. You can swap the ginger, mixed spice, and nutmeg for 1tbsp of pumpkin spice.
Flour. You can swap the gluten free oats for oat flour, because once blended it will become oat flour.

    What a fabulous idea. I loved these and i am going to be making them all the time. I love pumpkin and especially pumpkin spice, it is gorgeous and i could eat it for ever, roll on the Starbucks pumpkin lattes!!
