Soup Maker Gazpacho. How to make a traditional gazpacho using your soup maker. Perfect for hot summer days and loaded with fresh tomatoes, peppers, onion, and garlic.

Cold Tomato Soup
I remember it like it was yesterday.
Sofia was just 19 months old, I was pregnant with Jorge and we were staying in a pretty seaside town in Spain. The European football was on and while Dominic and Kyle went out to have a burger and watch the footie, me and Sofia had decided to do a tapas bar crawl.
The plan was to have a little bit of tapas at several different places over one evening instead of eating dinner.
In the end we did about 9 different places and had a wonderful mother and daughter evening.
This was taken from the last place on our tapas crawl:
It was a platter of different tapas and included the famous gazpacho cold Spanish soup that was served with some fresh shrimp. It was delicious and I remember how much Sofia dipped her bread into the gazpacho.
Then to end the night, I let Sofia watch the sunset and the skies get dark over the beach.
Its just hard to believe that Sofia’s introduction to the wonderful cold tomato soup was in the June of 2016 and you wonder where the time has gone.
Fast forward all these years and I love to make a homemade gazpacho using the soup maker.
Slimming World Summer Speed Soup
Whilst I often share with you our slimming world speed soup, this is my summer version.
You see many of our readers love to use our speed soup to lose weight fast, in a similar way to how people follow the cabbage soup diet.
But in summer, you don’t want a hot tomato soup and that’s when I feel that making a slimming world Gazpacho is perfect.
You then chill the soup and can have it like a smoothie or in a bowl (your choice).
A traditional gazpacho recipe is made with bread and extra virgin olive oil and this version is free of both, making it great for Slimming World.
What Is Gazpacho?
Gazpacho soup is a cold tomato soup recipe that is popular in Spain and Portugal. It is traditionally loaded with on the vine tomatoes, pepper, garlic, cucumber, onion, and basil.
Gazpacho is also referred to as cold tomato soup or cold Spanish soup. So next time you wonder what cold soup is called you now know!
Because it is a chilled tomato soup it is perfect for residents of Spain and Portugal in the super hot summer months to refresh them and give them a vitamin kick.
Spain and Portugal are also known for having soup with lunch and dinner everyday and this cold Spanish soup gives them a plan B during the summer.
Before you learn how to cook gazpacho, let me show you a full list of the gazpacho ingredients:
- Spring Onions
- Garlic Cloves
- Fresh Basil
- Balsamic Vinegar
As you can see, they are all everyday ingredients that you probably already have in.
The only extra ingredients I had to buy in, was fresh basil and everything else was already in the Milner kitchen.
How To Make Gazpacho?
If you are wondering how to make gazpacho soup from scratch in the soup maker, then this is how it is done:
- Load main ingredients into the soup maker.
- Set the smooth soup setting.
- After 10 minutes add the tomatoes, garlic, and basil.
- When it beeps add ice.
- Blend and serve.
Plus, you can keep it in the fridge for 5 days and eat as you want some.
What To Serve With Cold Soup?
I love to have my Spanish cold soup served with tapas. After all, cold soup reminds me of memories in Spain and how I would have it as part of a tapas platter.
I would recommend you start with some air fryer bacon, then you can shred it and serve it over your cold soup. Then I would also recommend some air fryer grilled cheese or some air fryer dinner rolls.
What To Serve With Soup Instead Of Bread?
If you want to have some soup but don’t want bread then I would recommend the following:
Soup Maker Gazpacho Cold Tomato Soup
- Peel your cucumbers. Remove the cores from the tomatoes. Remove the seeds from the peppers. Peel your garlic cloves. Dice your cucumber, peppers, tomatoes, spring onions and fresh basil.
- Load everything into the soup maker apart from garlic, basil, and tomatoes. Making sure that the cucumbers go into the soup maker first. Place the lid on the soup maker and cook for 10 minutes on smooth soup.
- After 10 minutes add in the rest of the ingredients and cook for a further 20 minutes on the same setting.
- When it beeps add ice cubes to speed up the chilled soup process and then serve.
