Sausage Hotpot

After our Lancashire hotpot and our minced beef hotpot, I was asked for more and more from the readers of Recipe This.

They loved the idea of making the hotpot filling in the slow cooker (many hadn’t thought of doing it) and then topping it with air fryer sliced potatoes for a quick healthier method for the hotpot potato topping.

And wanted more and more hotpot recipe ideas.

Well, I did some recipe research with the chef hubby and we came up with a week of slow cooker hotpot recipes for you to follow at home.

Using the same concept of our first two but mixing up the fillings to make your hotpot different each time.

Today is the first in our week long hotpot week and like the recipe title suggests today is all about sausage hotpot.

I found some red onion butcher’s sausages that I had forgotten about in the freezer (defrosted first for food safety), Heinz baked beans from the pantry and planned sausage hotpot for dinner.

You can of course use any sausage, bacon and beans in this recipe and its really easy to prep and then forget about until dinner time.

What Is A Sausage Hotpot?

For those of you outside of the UK, you are likely to not have heard of a sausage hotpot or even a hotpot and wondering what on earth it is!

Well, a hotpot is similar to a stew that is topped with sliced potatoes.

Usually, a hotpot is cooked in the oven with butter over the potatoes. We do a healthier option with air fryer sliced potatoes on top.

Hotpots can come in a variety of fillings. Today’s hotpot is a sausage hotpot, but other common hotpots include beef, chicken, lamb and even bacon.

What To Put In Sausage Hotpot?

Whilst sausages and the sliced potato topping is the main ingredients, there are many different ingredients that you could add to a sausage hotpot.

I made what Jorge calls the best sausage hotpot with baked beans and bacon. Simply because he is a HUGE baked beans fan. He had never tried them until he started school as I rarely buy them and would eat them from dusk until dawn.

What you could do is make a leftover sausage hotpot from the remains of our slow cooker sausage casserole.

Best Sausages For Hotpot?

I have made sausage hotpot and sausage casserole in the slow cooker many times and have found that really thick sausages work best.

They don’t fall apart on a long cook time and are often more flavoursome than the thin sausages.

Some nice flavoured sausages from the butchers is my personal choice or look in the freezer and see what spare sausages you have that need using up.

Sausages – I used a pack of 9 red onion thick sausages from my local butcher. They are rather lean so don’t make your slow cooker overly fatty and because they are flavoured make your homemade sausage hotpot recipe taste even better.

Beans – I used up two cans of Heinz baked beans to create a sausage and bean hotpot. You can add more if you want more beans than sausage or if you are feeding more people.

Bacon – I also recommend adding in some bacon. It doesn’t have to be a big portion of bacon. Just enough to add more flavour to your sausage and bean hotpot. You can also use back bacon, streaky or even turkey bacon to keep the calories down.

Potatoes – For the sausage hotpot with potato topping you will need about 4 medium sized potatoes. You can then air fry them and then place them on top of the slow cooker hotpot.

Extras – I also recommend adding tomato puree, Worcester sauce, barbecue sauce and some salt, pepper and parsley. All of these add to the flavour of your sausage casserole. Plus, I find the best flavour is the baked beans mixed with the barbecue sauce.

How To Make Sausage Hotpot In Slow Cooker?

  • Sauté. Dice your bacon and sauté in your slow cooker with a little extra virgin olive oil. Then add your sausages and the sausages as they brown will cook in the bacon fat.
  • Dump. Remove the slow cooker from the heat and load everything into the slow cooker including the beans, barbecue sauce, Worcester sauce, tomato puree and seasonings. Mix well and then place the lid on the slow cooker.
  • Cook. Slow cooker and cook on high for 4 hours or low for 7 hours.
  • Potatoes. After 3.5 hours, thinly slice your potatoes (skin on or off its your choice) and follow our air fryer sliced potatoes recipe. Then stir the sausages and beans and place the potatoes over them. Cook for an extra 30 minutes before serving.
  • Serve. Load into dishes and tuck in.

And I am sure you can see why this sausage hotpot in the slow cooker is a true favourite of mine.

Can You Freeze Sausage Hotpot?

Yes, you can freeze leftover sausage hotpot, but do wait until it is cool before you do so. Otherwise, you end up with condensation.

I recommend loading leftover sausage hotpot into your favourite freezer container and then freeze it for later and then you can use the microwave for a quick reheat.

Sausage Hotpot Recipe Tips & Tricks

  • I recommend starting with cooking the bacon. It will then add some yummy bacon fat to your slow cooker and make the flavour of your sausage hotpot even better.
  • Cook the sliced potatoes first in the air fryer. Only a tiny bit of extra virgin olive oil is required and then you don’t need to add butter or place your hotpot in the oven.
  • Tomato puree (also known as tomato paste) as well as Worcester sauce and barbecue sauce, give a wonderful rich flavour to your hotpot.
  • Any barbecue sauce will work well with this recipe. It doesn’t make your hotpot taste just of barbecue sauce and just adds an extra flavour. So don’t worry if barbecue sauce is not a thing of yours.
  • If on SW or WW opt for reduced fat Tesco sausages and it will really reduce the calories.

Slow Cooker Trick – Always buy a slow cooker like this Crockpot one that we own. It can go on the stovetop to brown meat and go in the oven.

Can you make ahead your hotpot recipe? Yes, you can. I often do this to save on time. You can also reheat your hotpot in the slow cooker by cooking it on low for two hours or on high for an hour.

What To Serve With Sausage Hotpot?

When I think of a hotpot, I am thinking about Betty’s Hotpot in Coronation Street and how everyone always ordered her hotpot with chips. Below are our easy air fryer frozen fries as well as bread, carrots and of course mashed potatoes.

  • Dice your bacon and sauté in the slow cooker on the stovetop with a little extra virgin olive oil and then put the bacon to one side. Add in the sausages and use the bacon fat to help brown the sausages on all sides.

Notes

Sausages. I recommend thick sausages rather than thin sausages. Thin sausages will break too easily as the hotpot cooks and thick ones often are better flavoured.
Carbs. If you would like your sausage and sliced potatoes to be lower in carbs I recommend you swap white potatoes for sweet potatoes and follow our air fryer sweet potato slices recipe.

    I made this for the kids mainly but us adults love it also. I then can reheat the leftovers for the following night, to feed the kids for 2 meals for the price of cooking one dish is a god send at the moment thank you.
