Instant Pot Stock

Yesterday we showed you how to make an instant pot vegetable stock and today is the turn of our instant pot chicken stock.

We have also previously shared with you instant pot lamb bone broth and instant pot turkey bone broth.

You are probably wondering if we have a favourite or how often we make an instant pot stock.

Well, the truth is we don’t make instant pot stock everyday just when we feel like our freezer supply is running low.

Growing up in England, everything was cooked with either OXO cubes (aka the stock cubes) and thickened with Bisto gravy granules. In my early 30’s I realised how unhealthy these were and pledged never to cook for my family with them again.

Since then, I have learnt how to thicken food naturally and the skill that ever home cook should have, of making your own homemade stock.

Today I wanted to share with you a stupidly simple instant pot chicken stock from carcass.

Its an easy method and then you can freeze your chicken stock cubes and then use them as and when you need them.

Even better, I have this lazy chicken stock in the instant pot too, that is made from making an instant pot whole chicken. Yes, really!

Can You Make Chicken Stock In An Instant Pot?

Yes, you sure can. The instant pot pressure cooker and any other electric pressure cooker, does an impressive job of making homemade chicken stock or chicken broth in less than an hour.

Can I Make Bone Broth From A Rotisserie Chicken?

Yes, you can. In fact, that is exactly what we are doing today. We made our Ninja Foodi Whole Chicken, had a roast chicken dinner and then the carcass of the chicken is thrown into the instant pot to make an amazing nutritious chicken bone broth.

Can You Use Chicken Broth In Instant Pot?

Yes, you can and best of all, is that you can load your frozen chicken broth ice cubes into the instant pot.

For example, here I am making some beans and I have a frozen stock cube over the food.

Then it will defrost as the instant pot goes to pressure and then become a flavour of the instant pot.

In my opinion, it’s the best way to use the chicken stock that you have made with the instant pot. Then you have a freezer supply, have no food waste and then make fresh chicken stock in instant pot when you run out.

Instant Pot Chicken Stock Recipe Ingredients

Carcass – You need your leftover whole chicken or rotisserie chicken. It can be totally stripped bare or could still have a little chicken still attached. It will give a much better flavour if you have a little chicken still on the bone.

Veggies – I recommend adding vegetables to the stock. They help with the flavour and combined with the carcass create the best instant pot chicken stock recipe.

Onion – I also recommend that you start the chicken stock recipe with a sauté of an onion with extra virgin olive oil. You can use red or white and also add some garlic too.

Wine – It adds such a lovely flavour to a stock if you deglaze your instant pot with some white wine.

Water – You need a lot of water for your chicken stock. Avoid adding flavoured water or further stock cubes, as that’s what you are making. Also avoid hot water because it will take the instant to pressure to quick and mess with the cook times.

Seasoning – Then for seasoning, we are keeping it simple because your quick chicken broth will bring plenty of flavour. Salt, pepper, oregano, and tarragon are essential.

Then for the kitchen gadgets that we have used in this chicken stock instant pot recipe, it has just been our instant pot pressure cooker. We have this one and it is amazing for stocks and broths recipes.

How To Make Chicken Stock In Instant Pot?

  • Sauté. Add your onion to the instant pot and sauté with some extra virgin olive oil until the onion starts to soften along with the garlic.
  • Deglaze. Add some white wine and deglaze the instant pot.
  • Dump. Stir in skin on carrots, diced celery and some chopped leeks. Mix in seasonings and stir.
  • Carcass. Add in your whole chicken carcass or any other chicken bones you’re using. Pour in enough water to be almost covering the chicken carcass.
  • Cook. Set the valve to sealing and pressure cook for 30 minutes. When you do your quick pressure release, you will notice the lovely smell in your kitchen from the homemade stock.
  • Strain. Use a mesh strainer to separate the vegetable scraps and carcass from the chicken stock. Leave in a bowl or other containers to cool before getting ready for the freezer.

Important Note: You must use a mesh strainer otherwise tiny bones from the chicken will end up in your stock.

How Long To Cook Bone Broth In Instant Pot?

The instant pot cooking time for chicken stock or bone broth is JUST 30 minutes. Though note, the time to pressure in this instant pot recipe is a little longer, because there is a lot of liquid needed to make the chicken stock.

This cook time doesn’t take into account a small sauté, at the beginning of the recipe for the onion and garlic. So, you need to add an extra 5 minutes for this.

Low Fat Chicken Stock

When you allow your chicken stock to cool, you will notice that a layer of fat will appear at the top of your chicken stock. This is normal and this is the fat collecting on top.

If you want to make your chicken stock lower in fat, you can simply use a spoon and remove this layer.

Low Fat Chicken Stock

This is of course totally optional. But I prefer it this way and then after doing this, I will then load it up ready for the freezer.

LAZY Instant Pot Chicken Stock

Maybe you don’t want to shred a chicken and you want something with a chicken flavour that is healthier than stock cubes and without the effort.

In other words, you’re looking for a super lazy instant pot chicken stock recipe.

Well, I have one of those too and it’s something I make a lot especially with slow cooker recipes.

Its also a frugal thing and not wanting to waste delicious stock in the instant pot.

What I do is make my instant pot whole chicken recipe or my instant pot frozen whole chicken recipe.

Then I grab the liquid from the bottom of the instant pot and pour through a mesh strainer, I now have a chicken stock.

Not a traditional pressure cooker chicken stock, but one that can be used instead of water in instant pot recipes and OMG it tastes good.

It is then labelled up for the freezer and ready for loading into the instant pot whenever I need it.

It is also worth mentioning, that is very similar to the chicken stock you would buy in the cartons from the grocery store.

Instant Pot Chicken Bone Broth Vs Stock

I know many wonder if what they are making is instant pot chicken bone broth or instant pot chicken stock.

I find the best way of describing the two is to say that traditional bone broth will be jelly like texture, is made with the bones, is always cooked for longer than stock and has a much stronger texture and flavour.

For example, this is our traditional instant pot chicken bone broth below:

LAZY Instant Pot Chicken Stock

You make either one of them or cook with either of them in the instant pot. Its all about personal preference. Also, some will make a bone broth and call it stock and vice versa.

The instant pot was manufactured so that if you wanted to make chicken stock from carcass, that you could just press the instant pot soup broth setting and it will automatically be preset to the 30 minutes you need for bone broth.

Of course, you can just press the pressure cook button and then do the plus up to 30 minutes.

  • Peel and slice up your onion and place it into the instant pot with the extra virgin olive oil. Whilst it heats up, peel your whole garlic cloves, and add to the instant pot Sauté your garlic and onion until your onion starts to change colour.

  • Cancel sauté and deglaze the instant pot with white wine.

  • Dice your vegetable leftovers, add into the inner pot and seasoning and mix well.

  • Place your chicken carcass over the vegetables.

  • Pour enough water in, to just over the vegetables (approximately 6 cups/1.5 litres)

  • Place the lid on the instant pot, set the valve to sealing and cook for 30 minutes on soup/broth. Follow this up with a quick pressure release.

  • Strain first with a regular strainer and then with a mesh strainer.

  • Load your chicken stock into a bowl or other similar containers to cool down.

  • Once fully cool, skim the fat off the top with a spoon and then load into containers and freeze for later.

Notes

Scraps. I recommend that you add a few leftover vegetables that need using up. We added 3 carrots with the skin still on, a celery stick, and a diced leek. You can also use vegetable peelings if you prefer.
Containers. You can use any containers for freezing in, that is suitable for the freezer. I love the 1 cup/240ml silicone trays that you can then get one out at a time. You can also use little freezer containers too.

    I made this yesterday in my instant pot (Pressure cooked 30 mins) using my chicken carcass and it’s set like a thick jelly 😋. It looks great. Sam, can you tell me how do I use it – ie how much per pint or oxo cube equivalent. Thank you Julie x

      I freeze it in giant ice cube trays and then each one is 240ml/1 cup of stock, i use this size because it gives you the exact amount you need for the instant pot to go to pressure, i do not add any water to it, and if making a stew i add 2 or more for good flavour 🙂
