Find out just how delicious it can be when you add cheese, asparagus and bacon together and then cook them super quick in your Instant Pot.

Dominic and I were talking the other night about both Paleo and the Mediterranean Diet. We were discussing the fact that we do in fact eat healthy but what diet best describes it.

We started off by saying the seafood diet “where we see food and eat it”. And then the conversation went onto traditional diets.

We have always thought of ourselves as Paleo but thanks to our addiction to cheese and chocolate that would apply to us about 80% of the time.

Then there is the Mediterranean diet. It is super healthy but also allows you to eat carbs in moderation (which we also like) and of course we can have cheese.

I love cheese. I mean I really LOVE cheese and could never give it up forever. It is just something that I have always liked and always will.

I have always blamed my mum for that as it’s her biggest vice and when cheese is about you don’t stand a chance of getting any!

So in this recipe we are sharing our local Mediterranean food with a partly Paleo snack with some cheesy asparagus wrapped in bacon.

If you’re on Paleo simply have it dairy free but I would recommend the cheese as it completes everything!

It is also really quick to make and would be perfect for all four seasons and you could also have it at a dinner party if you wanted to.

  • Place 160ml of water into the bottom of your Instant Pot and you can measure it out with the cup provided.
  • Chop the bottom end off the asparagus. Smoother it with soft cheese and then wrap it in bacon. When done place them all on the steamer rack.
  • Place the lid on your Instant Pot and set the valve to sealing and press steam for 3 minutes.
  • Once it has started it will beep and it will beep 6 times when done. Once it has cooled down from keep warm mode you can get it out.
  • Serve.

I prefer this recipe with soft cheese but as an alternative you could make it with butter instead. Or for the perfect Paleo snack use coconut oil instead. So many choices.

Instant Pot Recipes – The Outtakes

Here we are back in the kitchen with another of our new Instant Pot Recipes and the usual man food vs healthy food battle 🙂

Next up I am after some healthy asparagus wrapped in bacon. To which it has been decided that there will be no butter in them and that they taste just as good with soft cheese on as they do with butter.

He brings me my share and points out that these are yours without butter and that he has put butter on his!

I think that is a typical man if ever I found one. So whether you choose the soft cheese on yours or the butter, both taste amazing.

  1. I like to make asparagus with bacon, but never considered adding cheese. What kind of cheese is your favorite to use? Does the bacon come out crispy? I may have to give this a try!

    • Hi Danielle

Yes we love soft cheese with this. Philadelphia soft cheese is our favourite cheese to use in cooking like this. No the bacon does not come out crispy, but if you have an airfryer putting it in there for 5 mins will crisp it up nicely.

    • Hi Dana,

Back bacon is a traditional British cut of typically unsmoked bacon sliced to include both the pork loin from the back and a bit of pork belly in the same cut.

Though the back bacon we buy comes from Scandinavia so I don’t its just unique to the UK.

Though if you can’t get back bacon just go with a similar cut that you get from wherever you are in the world.

I hope that explains it better for you.

      Kind regards

      Sam & Dom
