Take a trip to Northumberland with this delicious, corned beef hotpot cooked slow in the slow cooker. Loaded with tinned corned beef, baked beans, potatoes, carrots, and onion and then topped with sliced potatoes.

Corned beef hotpot is also known as a corned beef hash casserole, a cowboy hotpot recipe or if you are from the north of England you might refer to it as panackelty, pan haggerty or its other spelling or panaculty.

Corned Beef Hotpot

I often think of corned beef hotpot as the poor man’s version of a Lancashire hotpot. That is because the beautiful lean lamb is replaced with tinned corned beef.

It still makes a delightful hotpot and is one that I often want to binge on. Then I notice our eldest son had the last can of corned beef and I have to wait until I have been grocery shopping.

Both myself, my chef hubby Dominic and our three kids are all avid corned beef from a can fan and get excited as soon as a new tin is opened for dinner.

I always joke with Dominic about the corned beef surprise he made for me when I was 18 and we had just moved in together.

We had no money and he cooked me baked beans, corned beef, potatoes, and melted cheese together. It was amazing and he called it a corned beef surprise.

As I planned out my slow cooker recipe for corned beef hotpot, I realised how similar the ingredients were and it was like a trip down memory lane.

Is This Panackelty?

You look through the ingredients of what makes a classic panackelty, and you will see:

  • Corned beef
  • Root vegetables
  • Potatoes
  • Onions

All the panackelty ingredients will be found in a corned beef hotpot, and they are very similar. They also both feature the sliced potatoes on top and they are both slow cooked.

Whilst our corned beef hotpot is not identical to an old school Northumberland panackelty it can make a fantastic alternative and its up to you if you call it panackelty or corned beef hotpot.

Do You Cook Canned Corned Beef?

No need to. Canned corned beef is already cooked when you buy it. You simply need to warm it up before serving in a corned beef recipe.

What I do is kickstart the cooking of my corned beef hotpot recipe by cooking the potatoes, onions, and carrots with a little butter. Then add in the corned beef later.

Creating A Layered Corned Beef Casserole

Because my inspiration was always the hubby’s amazing, corned beef surprise, when I make a corned beef hotpot I love to create a layered corned beef casserole as I make it.

I call it the surprise cheese layer.

I will make my favourite slow cooker corned beef hash recipe. Then I will flatten it down and then add a big layer of grated cheese. Which is usually a big of 50% reduced fat mature cheddar cheese from Tesco.

Corned Beef Hotpot Ingredients

Beef – I recommend 2 cans of any brand of corned beef to make corned beef hotpot. If you like a lot of corned beef, you could increase it to three. I prefer Princes but any corned beef brand will work well.

Veggies – After the corned beef comes the onion and carrots. You can use any root vegetables, but onions and carrots work best.

Potatoes – You will need potatoes for adding to the corned beef hotpot filling, as well as for the sliced potatoes on top. Any white potatoes will work well for slow cooker corned beef hotpot.

Beans – I also recommend adding in 1.5 cans of baked beans. Its Heinz all the way and they add great texture to your hotpot as well as filling you up.

Cheese – I love adding a layer of melted cheese between the corned beef hash filling and the sliced potato top. Its like getting a surprise layer of cheese as you tuck in.

Extras – I also recommend adding some salt, pepper, and parsley. All of these add to the flavour of your slow cooker corned beef hotpot.

How To Make Corned Beef Hotpot?

  • Sauté. Dice and peel your onion and sauté with butter in the slow cooker. Remove from the heat.
  • Prep. Peel and dice your carrots and potatoes.
  • Dump. Load the potatoes and carrots into the slow cooker and mix with the onion. Add a little extra butter on top.
  • Cook. Slow cook on high for 2 hours or low for 3 hours.
  • Potatoes. After 2 hours, thinly slice your potatoes (skin on or off its your choice) and follow our air fryer sliced potatoes recipe. Then remove the corned beef from the can and dice. Add the corned beef to the slow cooker, the beans, the seasoning and mix well. Push down and add a grated cheese layer and place the potatoes over them. Cook for an extra 30-45 minutes before serving.
  • Serve. Load into dishes and tuck in.

How Long Do You Cook A Hotpot?

The slow cooker corned beef cook time depends on how big you fill the slow cooker, but I find that the average is 3 hours.

That is because (unlike my beef hotpot) is that you are not trying to slow cook some meat to make it tender, you are simply doing the potatoes and carrots and reheating the corned beef.

Corned Beef Hotpot Recipe Tips & Tricks

  • I recommend starting with cooking the onion. It will then add some yummy flavour to your slow cooker and then perfect for adding your potatoes to straight after.
  • Cook the sliced potatoes first in the air fryer. Only a tiny bit of extra virgin olive oil is required and then you don’t need to add butter or place your hotpot in the oven.
  • I love cans of corned beef. To make it easier to slice and to get out of the tin, fridge it for a couple of hours before you start cooking.
  • If you love other canned meats, you can do these in the slow cooker too. I like to swap corned beef for spam.
  • You can also swap your root veggies. We are using carrots but you can also use swede, parsnips, leeks etc.

Slow Cooker Trick – Always buy a slow cooker like this Crockpot one that we own. It can go on the stovetop to brown meat and go in the oven.

Can you make ahead your hotpot recipe? Yes, you can. I often do this to save on time. You can also reheat your hotpot in the slow cooker by cooking it on low for two hours or on high for an hour.

Ingredients

  • 500 g Air Fryer Sliced Potatoes
  • 800 g Corned Beef
  • 1 Medium White Onion
  • 3 Medium Carrots
  • 3 Medium White Potatoes
  • 1.5 Cans Heinz Baked Beans
  • 2 Tsp Butter
  • 250 g Mature Cheddar Cheese
  • 2 Tsp Parsley
  • Salt & Pepper

  • Dice and peel your onion and sauté in the slow cooker on the stovetop with a little butter until the onion has softened. Take the slow cooker off the heat. Peel and dice your potatoes and carrots and add to the slow cooker. Add butter to the top along with salt, pepper, and parsley and cook for 2 hours on high.

  • Add in corned beef and mix and then add half the grated cheese, the baked beans and stir.

  • Then press down with the back of your spatula.

  • Add a big layer of rest of the cheese. Then place the lid back on the slow cooker and leave on high whilst you make the sliced potatoes.

Notes

Beef. I recommend lean beef when making a beef hotpot. Otherwise, your hotpot can have an overly fatty texture to it and will need the fat draining from it.
Leftovers. If you have beef hotpot leftovers, I do recommend you try our air fryer Cornish pasties as they are delicious and so easy to make from the leftovers.

    I love corned beef and this was delicious. I did this for Sunday lunch and everyone loved it. I said it was something i had when growing up.
