Make use of your lamb leftovers with this delicious Greek air fryer lamb salad cooked in the air fryer using leftover lamb shoulder.
This lamb salad recipe is easy to mix and match with ingredients in your fridge and perfect for a fridge clear out, on a Monday the day after a lamb roast.
You’re probably wondering why lamb salads, after all there are so many different ways to use up leftover lamb.
Well, whilst I love a leftover lamb curry in the slow cooker or using it for a leftover soup, lamb salads are the easiest option.
You can grab whatever salad leftovers you have in the fridge, then use the air fryer to reheat your leftover sliced lamb and you have a delicious family dinner for your Monday nights.

YES, YES, YES, you can reheat lamb in the air fryer, and its perfect for when you had a roast dinner the day before and want some warm lamb the next day.
We have reheated sliced lamb shoulder and boneless lamb leg and each time they have had the wow factor.
Is Lamb Good Cold?
I’m not a fan of cold lamb, I would much rather have it reheated in the air fryer. Plus, when you reheat the lamb it will get rid of some of the extra fat that will have created a layer on the lamb if it has been left cold.
Is Lamb Salad Good For You?
Lamb is not the leanest of meats to make into a salad. But balanced out with the remaining salad ingredients it becomes a healthy salad.
Plus, enjoying a lamb salad is much less on the calories compared to using the lamb to make a big curry with loads of cream.

Lamb Salad Recipe Ingredients
Lamb – You can use any roast lamb leftovers. Though we prefer leftover lamb shoulder. Then do a medium slice of the lamb and layer it into the air fryer basket.
Salad – we all have favourite ingredients for our salad to go with lamb. We opted for lettuce, red cabbage, onion, tomatoes and cucumber.
Dip – Then to make our delicious Greek dip we used Greek yoghurt, lemon juice, mayonnaise and garlic.

How To Cook Leftover Lamb In Air Fryer?
- Load. Start by loading sliced lamb leftovers into the air fryer basket.
- Cook. Then set the temperature to 180c/360f and cook for 3 minutes.
- Serve. Then serve your lamb with salad and a Greek dip.

Air Fryer Lamb Salad
- 300 g Leftover Sliced Lamb
- Salad Garnish
- Handful Lettuce
- ½ Red Cabbage
- 1 Red Onion
- 4 Salad Tomatoes
- ½ Cucumber
- Greek Dip
- 4 Tbsp Greek Yoghurt
- 1 Tsp Lemon Juice
- 1 Tbsp Mayonnaise
- ½ Tsp Garlic Puree
- Do your prep. Shred the lettuce, shred the red cabbage, peel and slice the red onion. Slice the tomatoes and cucumber and place them onto a serving platter leaving space for the dip and the lamb. Place the lamb into the air fryer. If the pieces are too big, then cut into quarters.
- Air fry the sliced lamb for 3 minutes at 180c/360f or until the lamb is piping hot. Whilst the air fryer warms up the lamb add the Greek dip ingredients into a bowl and mix.
- Finish the salad by adding the lamb and the dip and serve.
On a diet at the moment and this was perfect to make with some delicious lamb. It was cooked just how i like it and the boys just ate the lamb and did not bother with the salad which is quite typical for us.
