Air Fryer Lamb Salad

Make use of your lamb leftovers with this delicious Greek air fryer lamb salad cooked in the air fryer using leftover lamb shoulder.

Ingredients

  • 300 g Leftover Sliced Lamb
  • Salad Garnish
  • Handful Lettuce
  • ½ Red Cabbage
  • 1 Red Onion
  • 4 Salad Tomatoes
  • ½ Cucumber
  • Greek Dip
  • 4 Tbsp Greek Yoghurt
  • 1 Tsp Lemon Juice
  • 1 Tbsp Mayonnaise
  • ½ Tsp Garlic Puree

Instructions

  • Do your prep. Shred the lettuce, shred the red cabbage, peel and slice the red onion. Slice the tomatoes and cucumber and place them onto a serving platter leaving space for the dip and the lamb. Place the lamb into the air fryer. If the pieces are too big, then cut into quarters.

  • Air fry the sliced lamb for 3 minutes at 180c/360f or until the lamb is piping hot. Whilst the air fryer warms up the lamb add the Greek dip ingredients into a bowl and mix.

Optional. If you would like pitta breads with your lamb salad, then you can also warm them up in the air fryer. Just another 3 minutes at the same temperature.
