Are you one of those people that gets excited about fall food and when harvest dinners are a thing?
Well, welcome to my world.
I love fall food. I get excited over butternut squash, pumpkins, apple, Brussel sprouts and sweet potatoes.
But I also don’t want to be getting a skillet out or a sheet pan, when the air fryer can do a much better and quicker job.
I want to dump in the ingredients into the air fryer and let it work its magic.
I also want to smell the air fryer doing its hot air magic and making my kitchen smell of fall.
I also want to go to the green grocers and with the kids choose our harvest casserole ingredients.
Well, that is exactly what we are doing today with our air fryer version of a harvest casserole. So put away your sheet pan and your skillet and let’s get air frying.

What Is An Air Fryer Brussel Sprouts Dinner?
A Brussel sprouts dinner is basically a one pot dinner, or a sheet pan dinner, where the star ingredient is the Brussel sprouts.
This recipe is like a sheet pan dinner but cooked in the air fryer instead.
Though I wanted to go beyond this with my air fryer Brussel sprouts dinner and include a lot of other in season foods too.
With the amazing ingredients included you could really call this a harvest vegetables and sausages air fryer dinner.
Can You Air Fry On A Sheet Pan?
Technically….. yes, you can. But the problem you have is that unless you have a large air fryer oven, most air fryers are not big enough to hold a sheet pan tray.
Also, cook in the air fryer on a tray and you are increasing the cook time because the air isn’t circulating as well.
But use an air fryer basket and your basket becomes your sheet pan.
You can load your fall harvest casserole ingredients into the air fryer basket and it will cook better than a sheet pan.

I picked the kids up from school and headed to my favourite local green grocers. Rafters which is located in the small town of Driffield in Yorkshire has some amazing in season produce and is like visiting a farmers market.
Jorge chose the apples. Sofia chose the sweet potatoes and I chose the sprouts. We then chose the other ingredients together.
We then headed to the tills, bought everything we needed, plus some extra baby potatoes because they looked so good for another recipe and heading home with our harvest haul.
Then we had a quick trip to the butchers for some sausages and bacon and we were ready to prep the air fryer.

Harvest Casserole Recipe Ingredients
Sausages – I am all about the yummy slices of sausages. What we did for fun and for flavour, was to use a selection of different flavoured sausages that I got from the butchers. Such as spring onion and chive along with regular Cumberland sausages.
Bacon – It is of course, optional but I find that like making a quiche or a frittata that this one pot air fryer dinner really has the wow factor thanks to a small quantity of chopped up bacon.
Veggies – Because we are talking about a harvest casserole, its all about the delicious beautifully coloured vegetables. We added sprouts, sweet potatoes and onion.
Apples – I love harvest time for the beautifully shiny apples. I went with a green apple and a red apple for lots of flavour.
Oil – To get a crisp on your roasted harvest vegetables, I recommend a little extra virgin olive oil. As in the air fryer a little oil goes a long way.
Seasoning – I recommend salt, pepper and thyme for the seasonings, but you can mix and match depending what seasonings you have in your pantry.
Then for the kitchen gadgets that we have used in this air fryer harvest dinner, it has just been our Philips Air Fryer XL. We have this one and it does an amazing job and is also ideal for recreating other sheet pan dinners.
Your Harvest Casserole Recipe
You can mix and match the ingredients to make this YOUR one pan fall dinner. Or go with the ingredients that we are using.
You can also use less ingredients that us, if that is easy for you, such as making:
- Brussel Sprout & Sweet Potato Casserole – Add just Brussel sprouts and sweet potatoes and your favourite seasonings. Also perfect for thanksgiving when you want an easy air fryer side.
- Brussel Sprout & Sausage Casserole – Keep it simple and mix up Brussel sprouts with sausages. I like to slice the sausages into fifths and then air fry them. It means that they will cook with the sprouts and is easy to dump and forget in the air fryer.
- Brussel Sprouts With Bacon And Apples – This gives you the sweetness in with the savoury thanks to the apples and you can use any in season apples. When we went shopping we bought a mix.
- Harvest Vegetable Casserole Recipe – Go vegetarian or vegan and stick with vegetables only. Focus on root vegetables such as butternut squash, sweet potato, and carrots because they are more filling.
- Sweet Potato Apple Bake – You can also just include sweet potatoes and apple and then once done, load up with cheese to turn into a bake. Yummy!
How To Cook A Harvest Dinner In The Air Fryer?
- Prep. On a clean chopping board, prep your fruit and veggies. Dice your peeled apples into chunks, then do the same with the sweet potato and onion. Prep the sprouts like you would for a sheet pan dinner into quarters.
- Load. Add the vegetables to a bowl, toss in the seasoning and extra virgin olive oil and then load into the air fryer basket.
- Cook. Air fry for 8 minutes to kickstart the vegetables. Then shake the veggies and add your sausages and bacon on top. The juices from the sausages and bacon will then go onto the vegetables.
- Continue. Carry on air frying until the sausage and bacon is also cooked. Stir and shake the air fryer for an even cooking before serving.
How Long To Cook A Harvest Dinner In The Air Fryer?
I am sure you want to know, how something that is often associated with sheet pan cooking in the oven, compares on air fryer cook time.
Well, I added up the air fryer cook time, from the vegetables going in first, to a harvest dinner on my plate and the cook time was JUST 20 minutes.
Though, if you wanted it very crispy you could add in an extra 5 minutes at the end.
Either cook time is much quicker and often half the time of a classic sheet pan dinner, which gets my vote every time.

Air Fryer Harvest Casserole
Ingredients
Kitchen Gadgets:
Harvest Casserole Ingredients:
- 100 g Fresh Sprouts
- 1 Medium Sweet Potato
- ½ Medium White Onion
- 2 Red Apples
- 2 Green Apples
- 4 Sausages
- 3 Slices Thick Bacon, chopped into bits
- 1 Tbsp Extra Virgin Olive Oil
- 2 Tbsp Thyme
- Salt & Pepper
Instructions
- Peel and dice the apple into cubes. Peel and slice your onion, peel, and slice into cubes your sweet potato. Clean and chop your sprouts into quarters.
- Load into a bowl with extra virgin olive oil, thyme, salt, and pepper. Mix with your hands until you have a good coating of the seasoning and oil.
- Load into the air fryer and air fry for 8 minutes at 180c/360f.
- Whilst the air fryer is doing its magic, slice your sausages into medium slices and cut your bacon into bacon bits. When the air fryer beeps, shake the basket, and add the sausage and bacon on top. Cook for 10 minutes at the same temperature.
- Shake the air fryer and mix the sausage and bacon into the fruit and veggies. Cook for a further 2 minutes at 200c/400f before serving.
- Or for crispier results add an extra 7 minutes of cook time instead of 2 and spray with extra virgin olive oil.
