I love cabbage soup and with it being so cheap, it is the perfect base for a soup. You can then throw in your other vegetables and you have a delicious creamy soup.
We ended up doing cabbage soup out of error. I sent Dominic grocery shopping and he came back with cabbage because they were out of broccoli and I was moaning that I had to make soup with it.
Not that I hate cabbage soup, but because it is always associated with dieting and extreme weight loss, it was the furthest thing from my mind. But the neighbours always cook their soup with it, so if it is good enough for them then it is good enough for me.
So cabbage is now my broccoli replacement and it makes a brilliant soup!
If you want soup and want something that is frugal but tastes amazing then give the good old cabbage a go!

- ½ Large Cabbage
- ¼ Large Courgette
- 3 Medium Carrots (peeled)
- 1 Tsp Chives
- 1 Tsp Parsley
- 300ml Water
- Salt & Pepper
- Chop up your carrots and courgette into medium sized slices.
- Shred the cabbage and then place all the ingredients in the soup maker
- Place on the cook and blend feature or leave chunky if you prefer it like that.
