We are back today at RecipeThis.com with another of our Christmas seasonal posts. Today we have a treat for you with sweet chilli marinade over skinless boneless chicken thighs cooked in the Instant Pot.
This Instant Pot recipe is great for getting your grocery bill down over Christmas and for another party food idea other than turkey sandwiches.
A while ago on the blog I showed you the benefits of clearing out your pantry and making the most out of items that are close to, or near their use by date.
Unless we are living hand to mouth, then we are very much all guilty of having food in our cupboards that we have forgotten about and not used up.
When I originally did my pantry challenge, I discovered that I still had lots of coconut sugar that I had not used up and it went on to make the following:
- Caramel Slices
- Triple Chocolate Sponge Cake
- Chocolate Brownie Cake
- Cranberry Scone Bread
- Blackberry Shortbread Bars
You can get all five of these coconut sugar recipes here. None of these coconut sugar recipes would have happened if I hadn’t been clearing out my pantry!
I am also conscious about food that can harm us if we eat it when its gone over its date.
Kyle has never believed us about this, so when his great aunt bought him hot chocolate powder that was over 9 months passed its date, he had a hot chocolate and as expected was poorly for a week and now believes in us!
It was also at the same aunts’ house that I discovered that the majority of the pantry items were passed their best and needed to be thrown out.
One morning I got a couple of black bin bags out and filled them all with food that was up to 7 years passed their best.
When I was not looking she was feeding my kids and the thought of Jorge or Sofia making Angel Delight that went off in 2011, is beyond thinkable.
So, with my aunts blessing I had a huge clear out and decided with the boneless chicken thighs that I had just bought from Morrisons that I was going to find something good to cook in the Instant Pot Pressure Cooker.
That is when I found an old Blue Dragon bottle of Sweet Chilli Sauce and before long it was marinating my boneless skinless chicken thighs and heading into the Instant Pot.
I urge everyone to clear out their pantry. Eat food that is close to its use by date, throw away anything with a date of more than a month over and prove that pantry meals can be amazing!
Plus, if you find lots of things that are close to a use by date then you can give this priority for meals and save on your next grocery shopping bill.
Boneless Skinless Chicken Thighs + Sweet Chilli Sauce
The idea here is that you can quickly marinate some chicken thighs in a flavoursome sauce, add it to the Instant Pot and cook it until tender and delicious.
Afterwards your chicken thighs can be your base for dinner.
You can then use your chicken thighs to make into wraps with our homemade tortilla wraps, make a chicken salad, have them in a sandwich for lunch, or just dive in and eat them as they are.
But let’s face it with boneless skinless chicken thighs the possibilities are endless!
Instant Pot Sweet Chilli Boneless Skinless Chicken Thighs
- Place the boneless skinless chicken thighs on a chopping board. Season well with salt, pepper and poultry seasoning.
- Place the garlic, soy sauce, Worcester sauce into the Instant Pot inner pot along with the Blue Dragon Sweet Chilli Sauce.
- Stir well.
- Add in the boneless skinless chicken thighs and mix well making sure the chicken is thoroughly coated.
- Marinate inside the inner pot of the Instant Pot in the fridge for 30 minutes.
- Place the inner pot back in the Instant Pot and place the lid on the Instant Pot. Set the valve to sealing and cook for 6 minutes on manual pressure.
- Use quick pressure release and serve.
