Instant Pot Breakfast Potatoes
As I started to write this, I couldn’t decide what to call it. In my mind it is instant pot breakfast potatoes, instant pot breakfast hash, or instant pot chorizo and cheese loaded potatoes.
I asked a few of my readers and they suggested instant pot home fries or instant pot fried potatoes.
I will let you decide what name comes to mind first with you.
But for us Milner’s instant pot breakfast hash carries a wonderful history.
It was a pressure cooker recipe we did within the first six weeks of owning the instant pot. The second potato recipe after instant pot baked potatoes and something we fell in love with.
It made us realise that the instant pot could do a lot more than the basic recipes and you could add a lot more flavour to potato dishes.
18 months later, we went on this amazing adventure. We visited 8 European countries in 8 weeks and did ALL our cooking from our instant pot pressure cooker. It really helped me learn how to use the instant pot better, when there is no backup method, and everything needs to be done in the instant pot.
The biggest problem though was the lack of a fridge or freezer. We had to buy ingredients that had a good shelf life and avoid a lot of meat and fish. Chorizo was eaten a lot because it didn’t need to go in the fridge and the same could be said for potatoes and tinned tomatoes.
While travelling we adapted this instant pot potato hash recipe into the most eaten breakfast recipe. I could prep the ingredients the night before and load it into the instant pot as soon as I woke up. We would then all sit around the tent with plastic plates tucking into this delicious dish.
The main reason I am sharing this with you, is so that you understand just how easy it is and how you don’t need a fancy kitchen, or fancy ingredients to make it happen.
It is simple breakfast or brunch potatoes in the instant pot, that you will want to eat time and time again.

Cooking Breakfast Potatoes In The Instant Pot
When you cook your breakfast potatoes in the instant pot, it is split into two stages of cooking.
Stage 1 – Cooking. This is where you are steaming your potatoes ready to transform them into your breakfast potatoes. You want potatoes that are just cooked and not mushy because you then want to use the instant pot to fry them.
Stage 2 – Crisping. I then use the instant pot inner pot to make crispy potatoes and add in other ingredients. This is when you add in the chorizo or can swap chorizo for bacon. You can also add in salsa or tinned tomatoes to make them more creamy like we have done. It also stops the potatoes from becoming dry.
Then what I do is in between stage 1 and stage 2 is get the prep done for the next stage as it saves you time waiting on your potatoes.
Instant Pot Skillet
Also, think of your instant pot as a skillet. Imagine any breakfast hash or breakfast potatoes you would cook on the skillet, can be done in the instant pot.
I have not used a skillet for years, because all my favourite skillet meals are now done in the instant pot.
Think of how long you are waiting on your skillet to cook the food and the instant pot can make it quicker.
You can pressure cook first, then use the sauté button to finish the meal.
How To Cook Breakfast Potatoes In Instant Pot?
Cooking breakfast hash in the instant pot is so EASY:
- Add water to your pressure cooker.
- Add steamer basket and prepped potatoes.
- Pressure cook.
- Sauté and stir.
- Serve.
Fried Potatoes In Instant Pot
It can be rather daunting the first time you cook fried potatoes in the instant pot. That is because its not like a traditional frying pan or deep fat fryer and is hard to get the temperature right.
I have found that for perfect fried potatoes in the instant pot that I will:
- Make sure they are not dry and have oil or liquid
- Are not left alone to burn underneath
- Are already cooked or blanched otherwise they will crisp and not cook
Instant Pot Smothered Potatoes
Do you like instant pot smothered potatoes or cheesy potatoes? Then you will be pleased to know you can do something similar with this dish too.
What I do is finish frying the potatoes first and then load into a serving dish, or you can load onto foil to save on washing up.
Then what you do is immediately drench the potatoes in grated cheese. I say immediately because while the potatoes are piping hot it will automatically melt the cheese for you, just like this:

Ingredients

- 2 kg White Potatoes
- 2 Tbsp Salsa
- 1 Tbsp Paprika
- 2 Tsp Oregano
- Salt & Pepper
- 20 g Diced Chorizo
- 30 g Grated Cheese, optional
Instructions
- Pour a cup of water (240ml) into your instant pot and add your steamer basket. Peel and dice your potatoes into medium sized chunks and load them into your steamer basket.
- Season with salt, pepper, oregano and paprika. Place the lid on the instant pot, set the valve to sealing and pressure cook for 0 minutes.
- When it beeps do a quick pressure release and then remove the water and the steamer basket. Pour the potatoes from the steamer basket into the instant pot. Place the instant pot on sauté and add in chorizo and salsa. Mix and allow the instant pot to get hot and keep stirring the potatoes until they are crispy. This usually takes about 5 minutes.
- Load the breakfast potatoes into a bowl and immediately sprinkle with grated cheese. Serve and enjoy.

Yes you are reading it right, 0 minutes meaning by the time it has come to pressure some foods have already cooked so only need a few seconds of pressure 🙂
