Zucchini Pizza Bites
These cute zucchini pizzas came about many years ago. Back then we lived in Portugal and the zucchini (or courgette as we call it) was in season and they were huge.
Not like the small British ones that I have to make do with now!
And I was just slicing up some zucchini for dinner and thought how some melted cheese on top would be amazing.
Well, they were like a light bulb moment and throughout 2019 they continued to go viral whenever I shared them and since then so many people on low carb or keto make zucchini pizza slices in the air fryer.
But low carb lifestyles wasn’t popular then, like it is now. I made this pizza with zucchini for the little kids in my life to keep them eating veggies, whilst giving them a pizza treat at the same time!
What Is Zucchini Pizza Bites?
They are just how they sound. You cut thick slices of zucchini (or courgette for me) and then cover them in your favourite pizza toppings. They are air fried twice – to cook the zucchini and to melt the delicious cheese that you have added to the top of them.
You could make these pizza bites into garlic bread bites too by swapping tomato pizza sauce for some garlic butter and cheese instead.
Can You Make Zucchini Slices In The Air Fryer?
Yes, you can make zucchini slices in the air fryer. Because you are slicing a courgette/zucchini you will be amazed by how many of the slices will fit in the average sized air fryer.
This also makes it perfect for small air fryers where you struggle to fit your food, because you can adjust and do as many zucchini slices as you like.
#1 Air Fryer Pizza Tip
We call these our double cheese zucchini pizzas. That is because we add two layers of cheese to stop the cheese from flying off. The first layer is cream cheese (Philadelphia is best) and then the second is any sliced cheese you like that melts well.
Should Courgette Be Peeled Before Cooking?
I love the skin on courgette, and when using it for a courgette pizza base, the skin adds structure and helps keep it all together.
If you are wondering when to and when not to peel courgettes, then if you are baking with courgette peel it (such as fritters and cakes) then keep it whole for everything else.
As Featured In The Complete Air Fryer Cookbook
When we were making our first air fryer cookbook (late 2022) we decided that for something exciting for snacking on and that was perfect for air fryer beginners, we needed to feature these delicious zucchini pizza bites.
The beauty of them is that you can mix and match toppings and are perfect for if you are on a diet, or for when you want to go low carb.
Zucchini Pizza Recipe Ingredients
Zucchini – Whether you call it zucchini or courgette, it’s the perfect pizza base. One medium courgette is perfect for a medium batch, though you can do less or more.
Spread – We are then loading up the little pizzas with cream cheese. This works like an air fryer hack because it prevents the cheese from flying around in the air fryer. If you are on a diet, you can use lightest Philadelphia for this.
Cheese – Then for the main cheese moment, any cheese you can buy sliced, that you would load onto a pizza works well. So, cheddar, mozzarella, gouda are all perfect choices. Then slice the cheese to the size of your zucchini slices, so that you can then add a cheese over each.
Oil – You don’t want to dry out your courgettes and you want a crispy texture, so we recommend having an olive oil spray (like this one) though avoid frylight in the air fryer.
Seasonings – You can mix and match the seasonings for your courgette pizza bites, but we love salt, pepper and some dried oregano or basil (or a bit of both).
Can You Recommend An Air Fryer?
I often get asked which air fryers I recommend and which one I use. In 95% of our air fryer recipes, we use either the Philips Air Fryer XL or the Cosori XL because they are the best ones, we have found out of many air fryers we have tried over the years. You can click on the links above and read up on them. But if you would rather have a dual air fryer we recommend this Ninja Dual (make sure you order the right one as not all are good) or the Philips Dual.
How To Make Zucchini Pizza Bites?

- Cook. Place the zucchini slices into the air fryer basket, spreading them out and then air fry for 8 minutes at 180c/360f.
- Toppings. When the air fryer beeps, spread over cream cheese, add sliced cheese on top and season well.

Sam & Doms Top Tips For Success
It’s all about the cream cheese for this courgette pizza recipe. It works as the glue to your cheese. By adding a layer of the cheese first, you press the cheese down and it sticks like glue.
You can use this same cheese method with many different recipes in the air fryer.
