Welcome to my Whole 30 Airfryer Avocado Egg Boat recipe. Delicious just soft avocado filled with egg and seasoned with fresh herbs.
A perfect breakfast or supper for your Whole 30 and a favourite for kids too.
When we recipe test they always have to pass the kids test. I have fussy kids that are used to good food and like to eat healthy but don’t like their food to be flavourless either.
So with me not being a huge fried eggs fan (yes really). Dominic made this amazing avocado egg boat for Sofia for her dinner.
In between us having a salad out came these little beauties and they were just so simple and so easy that even Sofia at 2.5 years old could make them herself.
I then shared it with Sofia and it was a great supper. I think she might have turned me into a partial egg eater.
Though I should say that I had most of the avocado while Sofia had the egg. But I wont tell if you won’t!!!
I chose this Airfryer recipe for the last day of my Whole 30 just because it is one of those great quick snacks or meals.
If you are bored of eating the same things and want a bit of variety then this is the perfect way to spice your meals up.
You could also vary this with different fillings. For example egg and bacon also tastes amazing as does warm egg mayonnaise.
Whole 30 Air fryer Avocado Egg Boat
Ingredients
- Whole 30 Book
- Airfryer
- 2 Medium Avocados
- 4 Small Eggs
- Fresh Parsley
- Fresh Chives
- Salt & Pepper
Instructions
- Slice your avocados in half, remove the stones and remove about 20% of the flesh so that the wholes become bigger.
- Season them with salt, pepper, fresh parsley and chives.
- Crack an egg into each of the four halves, place in the Airfryer and then cook for 8 minutes on 175c.
- Sprinkle with extra fresh parsley, a little more salt and pepper and serve.

Whole 30 Day 30
I am back with my day 30 on the Whole 30. The final day is here. I just wonder, does that mean that I can stay up until midnight, get weighed and then have a 1 am cookie binge? Clearly, I am asking for a friend!
All jokes aside the final day is here and its nice to think that just one more sleep stands between me and getting weighed and me and my favourite non-Whole 30 foods. I see some Ben & Jerry’s coming my way!
And if you are also on the final day of your Whole 30 then give yourself a pat on the back and congratulate yourself in getting this far.
What I ATE On Day THIRTY Of The Whole 30
Today was a great day, clearly it was the last day so that makes everything wonderful. I also took delivery of my new slow cooker today so it was great fun giving it a test run.
Breakfast = Avocado Egg Boat
Lunch = Vegetable Hash
Dinner = Veggie Thai Curry
For breakfast it is something different and our avocado egg boats. Quick and simple and really easy to make in the Airfryer.
Then for lunch we had some vegetable hash. I love throwing the vegetables in the slow cooker, adding some seasoning and then a few hours later having a delicious meal.
Then for dinner we test drived our brand new slow cooker and had a delicious Thai Veggie Curry. Full of flavour and so good for a tasty dinner while on the Whole 30.

Whole 30 Grocery Shopping List Days 26-30
During my Whole 30 I decided to share what I ate with you over the whole of the challenge. I then split it into 6 lots of 5 days so that it was easy for grocery shopping and to make sure you had a lot of delicious fresh food on the go.
When USING My Whole 30 Grocery Shopping List Please Note:
- We are Europeans so we eat smaller portion sizes than Americans.
- We have added extra fruit for snacking on.
- You can also use the spare carrots for carrot sticks for snacking.
- All our meals are child friendly and our 3 kids eat the same.
- There is also extra leftover for other meals or for snacks for when you need it.
