Melting Moments
Years ago, I was given a bero little cookbook and I made my way through every biscuit recipe in the book. There was some that were only ever done once, and several that I did again and again.
The bero melting moments were a make again and again kind of baking moment.
Years later, I made them when my parents were visiting, and they said it was just like the melting moments that my grandma made.
It was only then, that I realised my grandma that was a great baker, had often got her inspiration from the Bero cookbook.
Over the years on Recipe This we have featured many favourite Bero recipes and adapted them for the air fryer. Such as our air fryer chocolate cake, air fryer chocolate chip cookies, air fryer rock buns, air fryer carrot cake and so many others.
Today, I wanted to show you just how easy it is to make the classic melting moments in the air fryer.
What Are Melting Moments?
The melting moments history goes like this:
Melting moments are a classic British biscuit, or as our Americans would call them “cookies”. Melting moment cookies are unique because they feature half a glace cherry on top and are rolled in desiccated coconut.
The coconut crust gives the melting moment an even better taste and texture and its hard to just have the one.
They are called melting moments as they melt in your mouth as you bite into them.
The melting moments batter is similar to cake mix, but once cooked they are like a soft centred cookie.
Beware though, it is not an authentic recipe if you see it covered in sugar not coconut.
Bero Melting Moments
In the bero melting moments recipe it is totally old school and like how your grandma would bake for you.
The only change in ingredients we are making is going all margarine and leaving out the lard. I appreciate that most people do not have lard in their pantry anymore.
But if you do, you can do half lard and half margarine.
Melting Moments Christmas Cookies
I also associate melting moments cookies with Christmas. That is because at many Christmas parties you will see many melting moments on the buffet or being handed out at Christmas parties.
You can also make them more Christmas themed with a few additions.
Such as using green colouring to make them like grinch cookies. Or using a Father Christmas cookie cutter and then doing smaller cherries around Santa’s buttons.
Melting Moments In The Air Fryer
I often get asked why I cook so many cookies in the air fryer. The answer is simple, because they are the best ever cookies you will ever try.
Forget those times when you have made cookies, forgotten about them and the oven has overcooked them.
Or the time when you cooked them at a temperature that was too high.
With the air fryer you can load up your cookies and it will beep and tell you when they are done.
You just need to find a suitable container to air fry them in that will fit in the air fryer basket.

Air Fryer Melting Moments
Ingredients
Kitchen Gadgets:
Melting Moments Ingredients:
- 100 g Margarine
- 100 g Caster Sugar
- 1 Medium Egg
- 1 Tsp Vanilla Essence
- 175 g Self Raising Flour
- 3 Tbsp Desiccated Coconut
- Glace Cherries
Instructions
- Load into a bowl your margarine and caster sugar and mix with a hand mixer until light and fluffy.
- Add in egg and vanilla essence and mix well. Then add in flour and mix again. Get rid of the hand mixer and use a fork to make sure the sides of the bowl are completely clear of the mixture and that its well mixed.
- Load a bowl with dedicated coconut and add flour to your hands. Using your hands make cookie balls with the batter and then roll well in the coconut. Do this until you have done all your batter.
- Load the melting moment cookie dough onto a baking pan that will fit in the air fryer. Add half a glace cherry on top of each, pressing down so that it wont fall off.
- Place into the air fryer and air fry for 8 minutes at 180c/360f and serve while warm.
Made these the other week and they were lovely. Instead of 🍒 I put chocolate chips in the middle. Going to make again soon but add chocolate chips into the mixture before making into balls.
Glad you liked the recipe Lynn 🙂
