Instant Pot + Air Fryer Mexican Street Corn

In the summer I often see a lot of recipes for Mexican Street Corn. To be honest, I get sick of them all made the same way, and all made in the Instant Pot.

I find that when you cook Mexican street corn just in the Instant Pot it lacks the crispy grilled corn taste that we all know and love.

But other recipes will show you how to make Air Fryer Mexican Street Corn and the problem here is that it takes too long.

You’re just waiting too long for the air fryer to cook the corn and frequently the corn will end up burnt on the outside and barely cooked in the middle.

Instead let me introduce you to my Instant Pot & Air Fryer Mexican Street Corn. Instead you steam the corn in the Instant Pot Pressure Cooker, then you load up the seasonings on the corn, before finishing them off in the Air Fryer.

It is much quicker, and the taste of the Mexican Street Corn is truly AMAZING.

Once you make Mexican Street Corn via my Instant Pot + Air Fryer method then there will be no looking back.

How To Make Mexican Street Corn In The Instant Pot & Air Fryer

Because the Instant Pot is used for getting the corn cooked and the air fryer for giving it the grill look as well as the amazing Mexican flavouring, the corn on the cob enters the Instant Pot plain.

It could be any corn on the cob at this point.

It is only when your corn on the cob is cooking in the Instant Pot and you’re making your marinade to turn it into Mexican Street Corn, that you get to sample the great flavour you’re about to experience.

Once the corn on the cob has finished cooking in the Instant Pot and you’ve made your Mexican marinade, you can load them into the air fryer and look forward to the wonderful scent of Mexican food blasting out of the air fryer.

Once it has crisped up in the air fryer, serve it up and OMG you will want to follow this Instant Pot & Air Fryer combo next time you want some Mexican Street Corn.

Mexican Street Corn Variations

It doesn’t have to be Mexican Street Corn that you make. You can use any flavour of corn on the cob that you like.

It could be flavoured with Chinese, Indian, Thai, French or even Spanish flavourings. You can just use our recipe as a base for your love for corn on the cob. Then do what you like with it.

You need an air fryer grill pan to make delicious Mexican Street Corn in the air fryer. This is because the corn on the cob sits nicely on the grill pan and gives it that amazing grill affect that you would have if you were making Mexican Street Corn on a barbecue.

Instructions 

  • Place your trivet into your Instant Pot inner pot and add 1 cup of water to it. Rest the corn on the cob on top of the trivet and add the butter on top of the corn. Cook for 3 minutes on manual and when it beeps manually release pressure.
  • While the corn is under pressure mix together your marinade ingredients until it is like flavoured soft cheese.
  • Place the steamed corn on the cob into the air fryer and sit it on the grill pan. Load a quarter of the marinade on top of the corn and cook for 7 minutes at 200c/400f in the air fryer.
  • Serve with the rest of the marinade.

Notes

You can use whatever yoghurt you prefer. I used full fat Greek yoghurt and it was delicious.
