Jiffy Cornbread

I was sat in the American Diner at Butlins last year. It was one of the restaurants at the resort and I was excited for some American food.

As a Brit and also having amazing aunts that emigrated to the US many years ago, I have a real soft spot for American food and the more I can try and sample the better.

I was about to order, and then just like a blow to the head, the waitress said, “no cornbread”. I desperately wanted to try cornbread and there again, there was none.

I was absolutely gutted and that was like the 3rd time we had been to an American diner now and they didn’t have cornbread on the menu.

I complained to an American friend of mine that I wanted to try cornbread before making my own and he had the idea of buying jiffy cornbread, trying it in the air fryer, and then at a later date making my own.

Well, I took him at his word, bought some jiffy cornbread mix and got to work trying it in the air fryer. I’m now totally in love with cornbread and cooking it in the air fryer.

Never as good as home-made cornbread but this comes a close second. This was the perfect recipe for me to try in my air fryer and it was delicious, so nice and fluffy a great idea and one i will be using again and again when my wife cannot be bothered to cook from scratch!

    • Hi Barbara,

Yes you can use a standard 7 inch baking dish, if you have an XL air fryer otherwise you will need to look for 6 inch dishes or larger if you have a bigger air fryer or an air fryer oven 🙂
