Who doesn’t love bacon and eggs? They’re the breakfast staple and give you a fantastic Whole 30 friendly start to the day.

Plus we all complain that it takes ages to make breakfast and this means more and more of us don’t bother with breakfast even though we should.

Or we complain that it makes too much mess.

But in this recipe in the Airfryer, the beauty of it is that it takes less than a minute to prepare and then you throw it in and then while you are brushing your teeth or combing your hair the bacon and eggs can be cooking away.

The washing up is also minimal. You cook them in whatever ramekins that you have available to you, then because you have oiled them before cooking to stop them sticking and because of the fat in the bacon, they only take a minute to clean.

Then you have as many, or as few as you like.

Then you could also serve them with some sweet breakfast potatoes or some sweet potato hash.

I also found them to be very useful for the Whole 30 for when you want a protein hit and can’t imagine life beyond the usual carbs that you had before.

All of a sudden breakfast is on your mind and you’re wondering what on earth you could have compared to cereal or toast.

Well this is your Plan B and it is a really delicious plan B too!

Instructions

  • Get the ramekins out and add the bacon around the sides and bottom of it. So that it overlaps in the same way as when you’re making a pastry over an apple pie.
  • Crack an egg into the centre of each ramekin.
  • Cook in the Airfryer for 180c for 13 minutes.
  • Season with salt and pepper and fresh chives and then serve.

Notes

It is a ratio of 1 egg and 2 slices of back bacon per ramekin, therefore you can adjust it for how many people you are feeding.
The recipe above make them non-runny. As an alternative you can cook them with the extra flaps of bacon over the egg, if you do this you will need to cook it for 10 minutes at 180c. And this will give you really good soft eggs over crispy bacon.

Whole 30 Day 20

I am back with my day 20 on the Whole 30. Today we went out for lunch. It was something that we like to do during a diet just to prove that you can still enjoy your food and not feel deprived.

So we went to our favourite Portuguese café. I had a prawn and pineapple salad, Dominic had a vegetable frittata and the kids had burgers.

We were all happy even though if felt weird leaving without a portion of chocolate cake. But we did it and proved that you don’t have to quit the Whole 30 just because you are eating out.

But the conversation did end up back on what we would have when we finished the Whole 30.

Of course you want to binge and go back to your old ways but at the same time you’re trying your best not to. But it will be interesting to see how things go post Whole 30.

What I ATE On Day TWENTY Of The Whole 30

Today it was a really good day. It was one of those days when I thought the Whole 30 is really not that bad and that it will be over soon. To be able to say that it is day 20 already is amazing. Just 10 more days of it left after today!

Breakfast = Airfryer Bacon & Eggs

Lunch = Prawn & Pineapple Salad

Dinner = Sausages & Cabbage

For today I started the day on a fruit salad. I love my fruit and we seem to have loads of it in at the moment. So a quick fruit salad and I am happy.

Then out for lunch I had some burger (no bun and a proper quality homemade one), plus some soup and then a prawn and pineapple salad. Foodie heaven just came and got me!

Then for dinner we have some delicious sausages with cabbage tossed in coconut oil (just because coconut oil is the best) and some chips.

Then as an early supper we finish on some melon. Because melon is just perfect for dehydration when it is hot outside.

We do a big supermarket shop once a month. We love to be frugal and it’s a great way to save money buy locking in your monthly discounts.

We will go armed with our monthly 10% discount voucher along with any other discount vouchers that we have.

We will stock up on pantry staples, buy lots of reduced price meat, get our cheese for the month and think about what recipe testing we need to do.

Back in February we were bulk buying eggs for a cheesecake feature and our trolley was so full that we needed two of them.

Our 2 year old was playing with the shopping and poking everything. While our baby son was strapped to me in his baby carrier and we were at the till and it was a busy Friday night.

Next thing I know I felt something sticky dripping down my legs. It turned out it was my beautiful daughter cracking eggs onto my leg and it was spilling down onto the floor.

Clearly she had watched me cracking eggs too many times. Now I keep the eggs away from her for recipes like the bacon and eggs featured above!
