I love going to barbeques and it’s that lovely feeling of enjoying delicious home cooking outside in the sunshine. But quite frankly how often do you go to someone else’s barbeque and you end up with lots of food that is not that healthy?

I remember going to barbeques at my Uncle’s house back in the 90’s, which I may point out was many years before people talked about eat eating and Paleo. And everything was bad for you.

The salad was always full of mayonnaise, the burgers were always from the freezer department at Tesco’s and the sausages were always rather processed. Then there was the white bread buns and hotdog buns, the hot dogs themselves and loads of Heinz tomato ketchup to wash it all down with.

All in all there would not be anything there that was not Paleo and even though I haven’t been to his barbeques in years I doubt they have changed much. Proper man food without any thought at all to eating healthy and watching what you eat.

So if this is YOU at a family or friends barbeque this summer then take loads of these with you. Have them for yourself, to share with family or friends or just to dedicate your family on what you eat.

I am sure you’ll even get some comments from people that they didn’t realise healthy food was so delicious!

Paleo Grilled Greek Lemon Chicken

Ingredients
  • 2 Chicken Breasts
  • 1 Large Lemon (juice and rind)
  • 2Tbsp Coconut Oil
  • 1Tsp Garlic Puree
  • 1Tsp Parsley
  • 1Tsp Basil
  • Salt & Pepper
Instructions
  1. Chop up your chicken into cubes and place in a mixing bowl with the rest of your ingredients. Mix well.
  2. Place onto skewers and place on a barbeque on a medium heat for 20 minutes turning half way through the cooking time.
  3. Serve with your other barbeque food.
Notes
If your chicken pieces are quite large give it an extra 5 minutes so that you can make sure that your chicken is cooked in the centre.
