No Yeast Flatbread. Dominic’s amazing soft flatbread recipe converted to the bread machine. This flatbread dough is easy to use, you dump the ingredients into the bread machine, let the bread machine do the hard work and then air fry your flatbreads.

No Yeast Flatbread

When everyone was panic buying yeast in March 2020, I wondered how long it was going to be before we could use our bread machine again.

Then I had an idea.

I suggested to Dominic that our favourite flatbread recipe was in desperate need of converting to the bread machine and if he would give it a go.

He got the bread machine out of the pantry, grabbed the flatbread ingredients, and loaded it into the bread machine.

We then all watched the bread machine hard at work and were amazed how good the dough came out. Then there was utter silence when we tucked into our air fryer flatbread that was loaded with our air fryer koftas.

What Is Flatbread?

A flatbread put simply, is a bread made with flour, water and salt and is rolled out flat. There are many varieties of flatbread such as the soft flatbread we are making today.

You will often find flatbreads in the middle east and in the last few years it has been more and more popular to make homemade flatbreads.  

Flatbread Ingredients

Even though the most famous three ingredients in a flatbread are flour, water, and salt, you can add in other ingredients to make the super soft flatbread dough that you are familiar with.

  • Extra Virgin Olive Oil
  • Butter
  • Whole Milk

The soft flatbread is soft because of those three ingredients above. You will notice that not just in the flatbread ingredients list, but in other Mediterranean baked goods that extra virgin olive oil plays a big part.

Extra virgin olive oil makes baked goods lighter and stops it having that heavy feeling when you tuck into them.

Whole milk is recommended over semi or skimmed as it helps create a creamy flatbread dough that is not overly wet.

And let’s face it, everything tastes better with butter doesn’t it? When Dominic was first experimenting with flatbread dough back in 2016, he very much found that adding in butter made a huge difference to the recipe.

Flatbread Recipe Without Yeast

You are probably wondering, why no yeast? Well because flatbread is more like a flat pizza dough than a bread. It doesn’t need to rise, and it makes your life easier as you don’t need to go and source yeast.

How To Make Flatbread?

Homemade flatbread is so easy and even easier now thanks to the bread machine:

  1. Load ingredients into the bread machine
  2. Set the bread machine to the dough setting
  3. When it beeps roll the dough and enjoy

I know there should be more to it than that, but that is just how simple homemade flatbread in the bread machine is.

Flatbread In Air Fryer

Once you have made your bread machine dough, its time for the air fryer to work its magic. If you have wondered, can you air fry flatbread, well the answer is a big fat YES.

Though when you make air fryer flatbread expect them to puff up more than they would in the frying pan. Or use a fork and stab your flatbread before you air fry and it will stop it puffing up as much.

You also can only air fry one flatbread at a time and as our flatbread dough makes 12 this can be time consuming.

Can You Freeze Flatbread Dough?

Yes you can. We are big fans of freezing our flatbread and you can make it into little dough balls if that is easier for you, or freeze a whole batch of flatbread dough together.

Instructions

  • Load ingredients into the bread machine in any order.
    How To Make Flatbread?
  • Place the lid on the bread machine and set it to dough for 23 minutes.
  • When it beeps place the flatbread dough on a clean, floured worktop and roll out your flatbread.
    How To Make Flatbread?
  • Place a flatbread in the air fryer basket and cook for 5 minutes at 200c/400f. No need to turn.

  • Your air fryer flatbread will now be golden brown and perfectly cooked.

  • Remove the flatbread from the air fryer and load your flatbreads with your favourite fillings such as our air fryer lamb koftas and serve.

Notes

Hands. Use floured hands when removing the dough from the bread machine as it can be a little sticky compared to other bread machine recipes.

    I added slightly more milk to mine as i like the dough to be really wet and now i have to try and cook them in my air fryer instead of a frying pan!

  2. Ey up, as they say in Yorkshire. Does this work with wholemeal or would
    I need to mix the two as in Indian breads (chapati flour type stuff) Would
    prefer just wholemeal. Any news on the air fryer oven bhajis.

      We have not tried it with wholemeal so cannot be sure if they would turn out like the white flour we use in the recipe, doing a half and half would probably be best like the chapati 🙂

    Hi, John,
    Thank you for this recipe. I have a yeast allergy, and many attempts at frying flatbread came out heavy. These were perfect in the air fryer (never thought of that). Light, fluffy and non-greasy.
