Air Fryer Chicken & Vegetables. This is an easy method for cooking chicken and vegetables together in the air fryer. Tossed in a balsamic marinade, the chicken and veggies are flavoursome, moist, and fast for quick weeknight dinners.
If you want to create a quick and healthy air fryer dinner, then it doesn’t get any better than this. Chicken breast chunks are tossed in a balsamic vinaigrette with zucchini, cherry tomatoes and peppers.

Air Fryer Chicken & Vegetables
I have been an instant pot pressure cooker user since late 2016 and the addiction has always been the one pot meals.
The way you can throw into the pot chicken and vegetables together and it will make a delicious one pot meal.
Perfect for those nights when you want to eat healthy but have the energy to phone for a takeaway and not much else.
That is when the magic of these gadgets can help you out and let you return to the sofa while it cooks.
But the air fryer has not had that association with one pot family dinners. It has been a place to do an air fryer rotisserie chicken, air fryer frozen vegetables, but not necessarily the two foods together at the same time.
That is why I want to introduce you to a delicious air fryer one pot meal of chicken and Mediterranean vegetables.
The ingredients are mixed in a bowl first and it comes together in the air fryer, in a similar way as our air fryer stir fry recipes do.
You can also reheat the leftovers in the air fryer basket with some parmesan cheese.

Can I Cook Meat And Vegetables Together In Air Fryer?
Yes you can! Meat and vegetables in the air fryer together is a fantastic way to do an air fryer dinner.
The only consideration is to make sure that you can fit the meat and vegetables in your air fryer.
Sometimes I will go with a smaller chicken just so that I can cook chicken and vegetables together, or do what I have done in this recipe and cut up the chicken.
Another idea is to follow our air fryer Cornish hen recipe because then you have more room for your vegetables.
Can You Put Raw Chicken In An Air Fryer?
Yes, you can. You can even cook frozen raw chicken in the air fryer such as our air fryer frozen chicken breasts. You can also cook a raw whole chicken in the air fryer too.
Why Is My Chicken Dry In Air Fryer?
There are usually a few reasons why your chicken is dry in the air fryer, including:
Cooking your chicken in the air fryer at a temperature that is too high. Note a temperature of 200c/400f should only be used for making air fryer food crispy, not for the entire cooking process.
Not adding extra virgin olive oil to your chicken. You wouldn’t cook chicken in the oven without oil, so don’t forget it for the air fryer. Though of course, you can add a lot less oil in the air fryer.
Or not adding a marinade. Adding something simple such as balsamic vinegar or maple syrup or soy sauce can make a huge difference to your chicken.
That is why we recommend you try balsamic chicken in the air fryer. It cooks at a medium heat (not high), it has both extra virgin olive oil and balsamic vinegar, and you don’t have to worry about your chicken being dry.
How To Cook Air Fryer Chicken & Vegetables?
It is this EASY to cook chicken and vegetables in the air fryer:
- Load balsamic vinaigrette ingredients into a mixing bowl and mix.
- Add in chopped chicken and vegetables.
- Toss the chicken and vegetables in the marinade.
- Air fry + serve.
It really is that simple to cook chicken and vegetables in the air fryer.
Weight Watchers Balsamic Glaze
If you are on Slimming World or Weight Watchers and want a lower point or syn version, then you can skip the extra virgin olive oil.
Simply double your balsamic vinegar and then add a splash of water so that your marinade is of the right texture.
Air Fryer Balsamic Chicken & Vegetables
Air Fryer Chicken & Vegetables Ingredients:
- 1 Large Chicken Breast
- 10 Cherry Tomatoes
- 1 Small Zucchini
- 1 Bell Pepper
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Honey
- 1 Tbsp Extra Virgin Olive Oil
- 1 Tsp Oregano
- 1 Tsp Basil
- 1 Tsp Garlic Puree
- Salt & Pepper
- Half your cherry tomatoes, cut your bell pepper into bite size chunks, cut your zucchini into slices and then into quarters. Slice your chicken breast into chunks.
- Place your balsamic ingredients into a bowl and mix. If too watery add in extra honey and if too thick add extra balsamic vinegar.
- Toss your chicken and vegetables into the mixing bowl and mix well with your hands until well coated.
- Place your chicken and vegetables into the air fryer and air fry for 12 minutes at 180c/360f, stir your chicken and vegetables and cook for a further 5 minutes at 200c/400f before serving.
I love the flavour of balsamic, and this looked gorgeous so just had to try it out. It was lovely and we will be making it again.
Never tried balsamic before and was wondering how it tasted and it was delcious why we have not tried it before i do not know this was a winner.
