Welcome to my copycat Mini Milk paleo popsicle lolly.
The summer wouldn’t be the same without lovely lollies to suck on would it? Those days on the beach when you want something cool and refreshing after way too much sun and a lot of fun.
Just like most people we are sun worshippers and love our summer days out by the ocean. We are also really lucky as we live a 30 minute drive from our favourite beach and the local tourist beach is just 20 minutes away from our front door. On top of this we will see temperatures in the early 40’s in July & August with sunshine for most of the year.
We will spend the morning and early afternoon there playing games on the beach, walking by the shore, swimming in the sea and sunbathing.
Then to cool is down (in between lots of cold water) we will enjoy a lolly. In winter we will go for the ones with ice cream in the middle and chocolate on the outside, but in the summer we want something a lot more refreshing hence why the normally have a fruity lolly instead.
It will normally be a mini milk as they are full of liquid and are perfect for the moment. But they are so small and are more meant for kids.
So we started making our own at home instead. And this was our main creation. They are bigger than mini milk and also made with coconut milk instead of regular milk meaning that they are perfect for both paleo and vegan followers.
- 1 Can Coconut Milk
- 1Tbsp Maple Syrup
- 1Tbsp Honey
- 1Tsp Vanilla Extract
- 1 Large Lemons (juice only)
- Place everything in the blender and mix well.
- Pour the mixture into ice lolly/popsicle moulds and freeze until they are solid.
