Welcome to my Super Healthy Clean Eating Coleslaw With The Spiralizer.
I remember after losing lots of weight going out for dinner with my parents and some of their motorhome friends. At the time we had both lost about 4 stone each and it was the first time we had really gone out and socialised since losing it. They were all impressed with our weight loss and now instead of being fatter than them we were thinner. The conversation soon turned to how we did it and we told them it was down to clean eating. That is when we got the strange looks and they all wanted to know if clean eating meant washing the food more.
In reality clean eating is eating healthy without the chemicals so no white flour, white sugar, e numbers etc. And in the end I ended up giving up on explaining it.
But the reason for this recipe is the lack of a decent coleslaw or salad out there. When we visited America back in 2012 we were shocked by what went on the salad. Unlike here in Portugal where you have a healthy olive oil dressing you are presented with salad cream (or similar) and the salad will end up having more calories in it than a Big Mac.
It got me thinking that I could do better and that I could make something that was tasty and still fell under the rules of the clean eating lifestyle. Not to mention, by using my spiralizer it would be simplicity in a bowl. So next time you want to have some coleslaw think about making it like this and then serve it with some pulled pork for the ideal Saturday night supper!
- 1 Small White Cabbage
- ¼ Small Red Cabbage
- 2 Large Carrots (peeled)
- 3Tbsp Natural Greek Yoghurt
- 1Tsp Mustard Powder
- 50g Soft Cheese
- 3Tbsp Whole Milk
- 1Tsp Chives
- Salt & Pepper
- In a bowl mix together the Greek yoghurrt, milk and cheese and add a little bit more milk if needed until it is like a smooth sauce. Add the seasoning and mix well.
- Using your spiralizer finely cut up the white and red cabbage and the carrots and place them in the bowl with the sauce.
- Mix well and serve!
