As a Brit you must be on Slimming World to become obsessed with chicken and bacon. It is like you can’t have one without the other and making Slimming World Hunters Chicken is an absolute MUST!
Hunters Chicken
Hunters Chicken has so many varieties. We all have a different way of making hunters chicken and there is no wrong or right way about making it.
The Americans tend to have a more French version, compared to the Brits that have a more Italian version.
When it comes to my Slimming World Hunters Chicken, what was most important to me, was that it had to be syn free and that it had to have a delicious combo of chicken and bacon in a spicy tomato sauce.
After all, chicken and bacon makes everything taste amazing right?
You can load it all up with your favourite vegetables and make a delicious creamy sauce. Then serve it with the sides of your choosing.
Slow Cooker Hunters Chicken

My pet peeve about slow cooker recipes is when they seem to do more cooking away from the slow cooker than in it.
If I cook a meal in the slow cooker, I don’t want to grill it in the oven at the end to melt some cheese on top. Just like I don’t want to braise the meat in the pan before adding it to the slow cooker.
Its amazing how often I get excited over a slow cooker recipe, find out it has oven cooking time and scrap cooking the recipe.
This defeats the point of the slow cooker, which is an easy way to cook a one pot dinner. I want something easy and certainly don’t want to be doing extra washing up!
That is why I designed this slow cooker hunters chicken the way I have. So that everything can be cooked together.
Then I plan on using the leftover hunters sauce, the next day for another recipe, all while not washing up the slow cooker!
Remember I am a working mum and I want easy healthy slow cooker recipes.
Slimming World Hunters Chicken

Hunters chicken is often loaded with creamy sauces and lots of other unhealthy, high calorie add ons.
But in this Slimming World Hunters Chicken we are making a wholesome sauce with lots of fresh ingredients and throwing everything in at once into the slow cooker.
We will lift out the chicken and bacon when everything is cooked, we use a hand blender to complete the sauce and then the chicken and bacon can be left in for later, if you’re not ready to eat now. Or you can serve it all up straight away.

Delicious Sides For Hunters Chicken

Hunters Chicken is all about the chicken wrapped in bacon and the spicy sauce. But that always leaves me begging for delicious sides.
I would recommend the following delicious sides for homemade Hunters Chicken:
Carrot & Swede Mash – This must be one of my favourite ever sides and I am always complaining that I don’t get to eat carrot and swedes enough. When I have some spare I put it into balls and freeze it for later.
Air Fryer Roasted Parsnips – As an alternative to roast potatoes how about roasted parsnips in the air fryer? So, so good and I always eat more of them than I planned to!
Instant Pot Cauliflower Mash – If you’re on a speed day and you want yummy sides then look no further than cauliflower mash.

Slimming World Hunters Chicken
Ingredients

Recipe Ingredients:
- 4 Large Chicken Breasts
- 8 Slices Back Bacon
- 10 Medium Tomatoes
- 8 Small Carrots
- 1 Medium Red Pepper
- 1 Tbsp Oregano
- 1 Tbsp Worcester Sauce
- 2 Tsp Chicken Seasoning
- 1 Tsp Cayenne Pepper
- 1 Tbsp Paprika
- 1 Tsp Mixed Spice
- Salt & Pepper
Instructions
- Place the chicken breasts on a clean chopping board and sprinkle with salt and pepper. Wrap a slice of bacon width ways and then another length ways until you have done all 4 chicken breasts and then put them to one side.
- Remove the core from the red pepper, peel the carrots and dice the pepper, carrots and tomatoes. Place the vegetables into the bottom of the slow cooker and season well with salt and pepper and oregano.
- Place the chicken wrapped in bacon over the vegetables and cook for 4 hours on high in your slow cooker.
- Remove the chicken and bacon carefully after 4 hours and put to one side.
- Drain the liquid from the slow cooker, add all the seasonings and using a hand blender, blend until smooth.
- Serve with the chicken wrapped in bacon.
