Instant Pot White Chicken Chili is a creamy delicious chicken stew loaded with white beans, leftover chicken breast, sweetcorn, spices, cheese and my all time favourite chicken broth.

Instant Pot White Chicken Chili happened by accident on Recipe This and I am sure you will smile and be able to relate when you read on:
I was recipe testing for our Instant Pot Tuscan Chicken Stew and in our first attempt I had added too much liquid and the Instant Pot had failed to come to pressure. We had enjoyed our Instant Pot Tuscan Chicken and our Instant Pot Tuscan Chicken Pasta in the same week and LOVED IT.
But the Instant Pot Tuscan Chicken Stew was lacking.
Dominic who loves my home cooking, commented on how awful my Instant Pot Tuscan Chicken Stew was. He said it was lacking my usual flavour. I tried it and OMG it tasted awful.
It reminded me of when your grandma cooked for you in the 1980’s and how they had over boiled their food and it tasted bland.
The next day I did the Tuscan chicken stew recipe again and it was PERFECT. Less liquid and my favourite creamy stew texture. It was so good that we went back for more and more.
The Instant Pot can ruin a meal sadly and its one of the biggest problems with pressure cooking. If food doesn’t come to pressure properly, you need to have a plan B.
BUT I had a lot of the original Tuscan Chicken Stew left to use up and just like my Grandma’s generation I HATE food waste.
I set to work on creating a new dish from the leftovers and turning this bland watery Tuscan chicken stew into something delicious and worthy of our blog.
That is when our Creamy Instant Pot White Chicken Chili Was Born!

The point of my Instant Pot White Chicken Chili was to use up leftovers. If you have a chicken stew with one portion left and you want to feed four people for dinner, or you simply didn’t manage to eat what you cooked last night.
Then our white chicken chili is the answer.
I always have a good amount of leftovers in my fridge and in the freezer, and combined together can make a delicious family meal.
In our Instant Pot White Chicken Chili we used:
- Leftover Tuscan Chicken Stew
- Coconut Milk
- Garlic Puree
- Chicken Bone Broth
- Cheese
- Avocado
- Sweetcorn
- Seasonings
All the ingredients for making my Instant Pot White Chicken Chili were found in my pantry, fridge and freezer. It’s a great way to use up your leftovers and save money. Or use it as a clear out your pantry, the night before grocery shopping.

Cooking White Chicken Chili In The Instant Pot
I used to cook white chicken chili in the slow cooker, but it can really slow you down. Cook white chicken chili in the Instant Pot instead and it is so FAST.
Dump all your ingredients in and you have a delicious dinner on the table.

How To Cook White Chicken Chili In The Instant Pot?
Because I am making my white chicken chili from leftovers, it is a little different to how I would make white chicken chili from scratch.
Firstly, I am grabbing my Tuscan Chicken Stew from the freezer and giving it a 0-minute head start in the Instant Pot. The Instant Pot is amazing for reheating food and defrosting food that is frozen.
You can then easily remove the leftover chicken stew from the container and place it into the Instant Pot inner pot.
Afterwards, add the main ingredients, mix it well and cook on manual for a couple of minutes.
Then add it the coconut cream as well as your cheese and avocado and you’re ready to eat!

Instant Pot White Chicken Chili
Ingredients

Recipe Ingredients:
- Chicken Stew Freezer Meal for two
- 200 ml Chicken Bone Broth
- 800 g Canned White Beans
- 100 g Frozen Sweetcorn
- 100 ml White Wine
- 1 Tbsp Garlic Puree
- 1 Tsp Paprika
- 2 Tsp Oregano
- 1 Tsp Cumin
- ½ Tsp Cayenne Pepper
- 1 Tsp Chilli Powder
- Salt & Pepper
For Later:
- 200 ml Coconut Milk
- 120 g Mexican Cheese
- 150 g Soft Cheese
- 1 Small Avocado
Instructions
- Place your chicken stew freezer meal in the Instant Pot and rest it in its container onto the steamer shelf. Pour a cup of water into the bottom of the Instant Pot.
- Place the lid on the Instant Pot and set the valve to sealing. Cook for 0 minutes, when it beeps manually release pressure.
- Remove the water from the bottom and the steamer shelf. Pour your freezer meal into the Instant Pot inner pot.
- Place the rest of your main recipe ingredients into the Instant Pot, stir and place the lid back on the Instant Pot. Set the valve to sealing again and cook for 2 minutes on manual pressure.
- Use QPR (quick pressure release) and give it a stir. Add in the soft cheese and coconut milk and stir.
- Blend about ¼ of it so that this works as a thickener to make it like a creamy white chicken chili.
- Serve with grated cheese and sliced avocado.
