Instant Pot Tuscan Chicken Stew is the latest in our series for 2019 dedicated to Instant Pot Tuscan Chicken.
A few months back we showed you how to make a delicious Instant Pot Tuscan Chicken followed up by Instant Pot Tuscan Chicken Pasta.
Now it’s the turn of an Instant Pot Tuscan Chicken Stew.
A hearty dish that we made with our family (and your family in mind). Don’t you just hate it when you’re late in from work, or time has got away from you and you just want to eat NOW.
As a working mum of 3 I know what that is like.
I will be about to go and make dinner, then I will realise that Jorge chooses the worst time ever for a nappy change.
Or Sofia has made a mess and I need to clean it up before I start dinner. Or a delivery might arrive that I need to sort through.
Then before I know it, I am starting dinner an hour later than planned and need it to be ready ASAP and this is when a dump meal like my Instant Pot Tuscan Chicken Stew saves my day.
You see the prep is so FAST that is BECAUSE:
- You can use frozen vegetables
- You can use diced or whole chicken breasts
- You can throw in your potatoes with the skin still on
In fact, when I made this Instant Pot Tuscan Chicken Stew, the only prep I did was chopping my baby potatoes in half and dicing a single red onion.
That was it!
Then I could get back into family life and forget about it. Well until it beeped and told me it was cooked!

What makes a delicious Tuscan Chicken Stew is the broth or the stock that you use. If you just use water, it is truly awful. Imagine how your grandma used to cook in the 1980’s. And how her food always tasted like boiled meat and veg.
There was no depth of flavour and it always tasted bland.
Well this can happen in the Instant Pot without chicken stock as when it comes to pressure it loses flavour and can taste like overcooked mush.

Cooking Tuscan Chicken Stew In The Instant Pot
This Instant Pot Tuscan Chicken Stew is perfect for cooking in the Instant Pot. That is because you can dump all the ingredients in and then let the Instant Pot do its magic.
I call it magic because it feels like magic.
How you can throw in some fridge and pantry staples and come back less than 20 minutes later, to a creamy Tuscan chicken stew.

How To Cook Tuscan Chicken Stew In The Instant Pot?
I start by sautéing the onion and garlic in the Instant Pot and adding the white wine to deglaze the Instant Pot.
Already from this point it smells Mediterranean and you’re already excited by the amazing Tuscan Chicken Stew that you’re about to make.
After this, the rest of the ingredients are thrown into the Instant Pot and you can relax, put your feet up and return when it beeps.
Then a quick stir, grab some bread and you’re ready to eat.
Though, I should add some small print that it gets so hot when its time to serve that you’re blowing it forever! So maybe dish it up, return to the sofa and all eat together 10 minutes later to save on burnt tongues!

How Long Does It Take To Cook Tuscan Chicken Stew In The Instant Pot?
It is really quick making Instant Pot Tuscan Chicken Stew. In fact, it is just 3 minutes to sauté the red onion and garlic at the start of the recipe and then 6 minutes for the dump and go process.
In total you have just 9 minutes to cook Tuscan Chicken Stew in the Instant Pot.

Ingredients

Recipe Ingredients:
- 1 Small Red Onion
- 1 Tbsp Garlic Puree
- 1 Tbsp Olive Oil
- 100 ml White Wine
- 100 ml Chicken Stock
- 100 g Tinned Tomatoes
- 4 Large Chicken Breasts diced
- 1 Kilo Baby Potatoes halved
- 100 g Frozen Spinach
- 250 g Mixed Frozen Vegetables
- 100 g Frozen Peas
- 1 Handful Fresh Basil thinly shredded
- 300 g Grated Parmesan Cheese
- 2 Tbsp Italian Seasoning
- Salt & Pepper
Instructions
- Peel and dice your red onion and add it to the Instant Pot along with the garlic puree. Using the extra virgin olive oil sauté it for a few minutes or until the red onion is soft.
- Deglaze your Instant Pot with your white wine.
- Add in all ingredients apart from the cheese, stir and place the lid on your Instant Pot.
- Set the valve to sealing and cook for 6 minutes on manual.
- Use quick pressure release (QPR) to release pressure once it has beeped.
- Using a hand blender, blend about ¼ of the stew as this will thicken it up.
- Mix in the cheese and serve.
