Healthy Slow Cooker Tomato Sauce
We all have that style of cooking. That style that is unique to us. It might be that we like our potatoes always roasted, or that we are addicted to seasoning everything with rosemary, or we can’t cook a cheese sauce without buttercream.
Well my thing is an obsession with blending stuff in the slow cooker. I love to make a sauce from whatever vegetables I have in and it is often like to make a slow cooker ragu.
The slow cooker ragu will be blended into the most delicious homemade tomato sauce ever.
I will then cook dinner in the healthy tomato sauce and freeze the rest of the tomato sauce for another time.
The photos that you see today in my healthy slow cooker tomato sauce, came about from leftovers from making my slow cooker rabbit ragu. I had made this delicious ragu from leftover vegetables and then as the ragu cooked, my rabbit cooked over it.
The juices from the rabbit cooking added a fantastic depth of flavour to the slow cooker healthy tomato sauce and also left me with lots of fresh tomato sauce for another day. I was truly impressed with how quick it was to cook and most importantly how much I had left over.
I could then make a nice pasta dish whenever I wanted to, knowing that there was some tomato sauce left in the freezer whenever I needed it.
I also did something similar when I made slow cooker hunters chicken. The meat was layered on top while the slow cooker tomato sauce ingredients cooked underneath. You can do this with many of your slow cooker meals.
For example, we also followed this method to make a slow cooker chicken balti.
Once it is cooked you can remove the meat from up top, blend the sauce and then serve up your meat and sauce while reserving the rest of the healthy slow cooker tomato sauce for the freezer.

Slow Cooker Fresh Tomato Pasta Sauce

My love for slow cooker fresh tomato pasta sauce started a long time before I had a slow cooker. I used to love making fresh tomato pasta sauce in a big pan with beautifully smelling on the vine fresh tomatoes.
You see I have always had a thing for fresh tomatoes on the vine. My grandad had an allotment and would grow them and even now 3 decades on, I still love the smell of fresh tomatoes and cooking with them.
The benefit of having a business here in Portugal is that we can shop where the local restaurants shop and buy on the vine fresh tomatoes in bulk. I will get a huge tray of them and cook them in bulk with whatever other seasonal vegetables I have.
Slow Cooker Tomato Sauce Recipe With Fresh Tomatoes

My slow cooker fresh tomato pasta sauce includes a lot of vegetables and is perfect for feeding to your kids. If you want to follow the hidden veggies rule and throw a load of vegetables onto their dinner plate, then it doesn’t get any better than my healthy slow cooker tomato sauce.
Then serve the sauce with some pasta and they don’t know the difference. You can sit there with satisfaction as they eat the lot and ask for leftovers!
In my healthy slow cooker tomato sauce recipe today, it includes a LOT of vegetables:
- Fresh Tomatoes
- Tinned Tomatoes
- Zucchini/Courgette
- Parsnips
- Sweet Potato
- Garlic
You can mix and match depending on what seasonal fruit and vegetables that you have in.
If I have it in, I also like to include:
- Red Peppers
- White Onions
- Mushrooms
What works well for the money saving family, is to use it as a clear out the bottom of your fridge mission.
The most important 2 ingredients are:
- Tomatoes
- Garlic
Then you want to mix it up with a vegetable that doesn’t hold a lot of water such as parsnip or sweet potato, as well as your summer vegetables that you associate with pasta such as zucchini and red peppers.
By featuring parsnips or sweet potato it makes it easier to thicken your tomato sauce and keep it 100% healthy.

Slow Cooker Tomato Sauce For Freezing

My healthy slow cooker tomato sauce works for everything and anything. Place it into freezer containers and freeze it for another day.
Then get it out whenever you’re making a recipe that calls for a delicious homemade tomato sauce.
I love tomato sauce over my pasta of course, when I am making a Bolognese such as my air fryer Bolognese zucchini boats, it is perfect for just getting out as and when I need it.

Healthy Slow Cooker Tomato Sauce
Ingredients

Main Recipe Ingredients:
- 6 Medium Parsnips
- 6 Medium Tomatoes
- 1 Large Zucchini/Courgette
- 1 Large Sweet Potato
- 1 Tbsp Oregano
- 1 Tbsp Thyme
- 1 Tbsp Garlic Puree
- Salt & Pepper
After Cooking:
- 400 g Tinned Tomatoes
- 2 Tsp Paprika
Instructions
- Prep your vegetables for your tomato sauce. Dice and remove the cores from your tomatoes, slice and dice the zucchini and peel and dice your parsnips and sweet potatoes.
- Load the ingredients to the slow cooker, add in the seasoning, the garlic puree and mix well with your hands.
- Cook on slow in the slow cooker. 4 hours on high or 7 hours on low.
- Blend the slow cooker ingredients. Add in the other ingredients and blend some more. You now have perfectly creamy healthy slow cooker tomato sauce.
